Herlang Subdistrict is the largest producer of coconut juice (along with Selayar Regency and JenepontoRegency) which is the raw material for coconut sugar production in South Sulawesi. Tugondeng Village is one ofthe villages in Herlang District. About 80% of Tugondeng villagers work in the coconut sugar manufacturingindustry. However, this potential has not well developed due to the low economic value of brown sugar. To increasethe selling price of coconut sugar produced by Tugondeng Village, efforts need to be made to process coconut sapand coconut sugar into products which have higher selling price, namely palm sugar. The steps taken to achieve theobjectives of this activity were : (a) presentation of material on how to process coconut sap and coconut sugar intopalm sugar; and (b) demonstration of preparing palm sugar from coconut sap and coconut sugar. The resultsobtained show that the process of making palm sugar from coconut sap and coconut sugar is quite simple and thepalm sugar produced has longer shelf-life than coconut sugar

The demand for palm sugar is increasing since people prefer natural ingredients. Natural and organic food ingredients have the reputation of being healthier and safer than synthetic ingredients. This study will discuss one particular ingredient namely palm sugar which is known as a natural sweetener. Developed countries have started to import palm sugar as a natural sweetener from developing countries. The production of palm sugar in developing countries has an important benefit in the craftsman household economy. However, current production of palm sugar does not meet the increasing demand, which is caused mainly by the lack of farmers, palm sugar craftsmen’s inadequate knowledge of palm sugar production, and poor incorporation of technology both in the cultivation of palm tree and the production process of palm sugar. This literature review study aims to understand the continuity of palm sugar production within the following framework which consists of four steps: (1) identifying current situation, (2) identifying the problems, (3) presenting the resolution, (4) proposing programs and strategies. Based on this framework a few programs and strategies are generated to maintain the continuity of palm sugar production, they are: (1) Palm trees domestication, (2) research and development center for Indonesian palm sugar, and (3) ensuring a good collaboration among the stake holders involved.

This chapter examines community empowerment, economic and business development, and equity of service as the issue of success and decline in regional and rural communities is explored with a particular focus on community informatics initiatives (CI). In Australia, there has been a vision for online services to be used to open up regional communities to the rest of the world. Government support has been seen as enhancing the competence levels of local communities so they become strong enough to deal equitably in an increasingly open marketplace. But how effective have regional portals and other online initiatives been? This chapter explores whether economic and social benefits are generated via establishing and sustaining regional CI initiatives. Theory relevant to online communities is introduced to provide a context for the presentation of two case studies. The dissemination of the critical learning from these cases can inform others about the diverse factors which impact on the effectiveness and long-term sustainability of regional CI initiatives.

The sampels are the producers and sellers. 58 tempeh’s producers are selected by the simple random sampling method. The sellers, on the other hand, are chosen using the snowball sampling, a technique that tracks down the marketing process. The variable studied in the  research are as follows: 1) producer’s tempeh’s selling cost, 2) tempeh’s selling price on commercial institution, 3) marketing cost, 4) total amount of sold products, 5) numbers of  marketing  institution  where the  product  passes,  6)  the  marketing margin, 7) the farmer’s share, and 8) marketing efficiency. ABSTRACT Palm plants (Arrenga pinnata Merr) until now are not widely cultivated, but they are still forest plants. This plant can be used very much, both as a household appliance and as a home industry. The main results that are widely used in home industries are sap which is processed into palm sugar, which is then used as a sweetener in various kinds of cakes, drinks and others. This research was conducted to determine the factors that influence the production of palm sugar and to find out the risks in the small industry of palm sugar. From this study, it is expected to be used as a material consideration in advancing the palm sugar industry in rural areas, especially in the research area. This research was conducted in the Belimbing Village of Tabanan Regency, Bali. The results of this study indicate that only the factor of craftsman experience and the volume of roomie can affect palm sugar production, from five other factors that are suspected. Making palm sugar from sap material has a large risk of production of 115,587 kg, but it is still easily avoidable by craftsmen. With a risk threshold of producing 35.74 kg of printed palm sugar.
