The needed for tomatoes was not comparable with the abundant of production, so tomato prices at the farm level were low. Tomato processing was needed to maintained and increased the selling value of tomatoes, it can be processed into tomato pulp powder. Tomato powder can be made by foam-mat drying method and to shortened the drying time can be done by using microwave oven. The purpose of this study was to determine the effect of the drying power used on physicochemical properties of tomato pulp powder and drying rate of foam-mat drying with microwave oven. This study conducted with laboratory experimental method with descriptive analysis. Three repetitions consisted of three treatments based on drying power used (30%, 50% and 70%). The observed parameters were total yield value, color, drying rate, drying efficiency and physicochemical properties such as color, foam density, bulk density, moisture content, ash content, water absorption index, and vitamin C content. The results showed that the average moisture content of tomato pulp was 91.73% (w.b.) and foamed tomato pulp was 90.86% (w.b.). The value of water content of tomato pulp powder ranges from 9.18% (w.b.) to 12.50% (w.b.). In this study, the best results were found in tomato pulp powder with 70% drying power without addition foaming treatment with total yield of 0.58%; 4.26 g/min drying rate; 5.86%; foam density 1 g/cm3; bulk density 0.65 g/cm3; moisture content; 9.18%; ash content 6.43%; water absorption index 19.68%; vitamin C content 154.87 mg/100g and drying efficiency was 48.27%. All of drying power used with and without foaming treatment were resulting yellow-red chromatic colour characteristic.

Tomat termasuk komoditas tanaman yang banyak dijumpai di Indonesia, namun memiliki nilai ekonomiyang rendah dan mudah rusak. Salah satu usaha yang dapat dilakukan untuk mengatasi hal tersebut adalah denganmengolah tomat menjadi berbagai produk olahan salah satunya adalah pembuatan bubuk tomat. Pembuatan bubuksuatu bahan dapat dilakukan dengan metode pengeringan pembusaan. Penelitian bertujuan untuk mengetahuipengaruh penambahan maltodekstrin sebagai bahan pengisi terhadap karakteristik fisikokimia bubuk tomat yangdihasilkan. Metode yang digunakan dalam penelitian ini adalah eksperimental laboratorium dengan analisisdeskriptif. Perlakuan yang dicoba adalah penambahan maltodekstrin (10%, 15% dan 20% b/b), dengan tiga kaliulangan. Parameter yang diamati meliputi: rendemen, warna, laju pengeringan, dan karakteristik fisikokimia bubuktomat yang meliputi warna, kadar air, kadar abu, kelarutan, indeks penyerapan air, bulk density, foam density,kadar vitamin C, dan higroskopisitas. Hasil penelitian menunjukkan rata-rata kadar air awal campuran jus dan pulptomat hasil proses mixing adalah 82,68% (bb) hingga 94,9% (bb). Nilai kadar air bubuk tomat berkisar antara5,86% (bb) hingga 15,28% (bb). Pada penelitian ini hasil terbaik terdapat pada bubuk tomat dengan perlakuanpenambahan maltodekstrin 20% dengan hasil rendemen 15,29%; kadar air 5,86%; kadar abu 6,24%; foam density0,57 g/cm3; bulk density 0,77 g/cm3; kelarutan 95,23%; indeks penyerapan air 12,96%; tingkat higroskopisitas11,36%; kadar vitamin C 75,49 mg/100g. Karakteristik warna bubuk tomat pada perlakuan penambahanmaltodekstrin maupun kontrol menghasilkan warna kromatis merah.Kata kunci: bubuk tomat, maltodekstrin, pengeringan pembusaan, tomatABSTRACTTomato is one of plant commodities that easy to find in Indonesia, but it is easily damaged and has a loweconomic price. In this study, the best results were found in tomato powder with 20% maltodextrin additiontreatment with total yield of 15.29%; 5.86% moisture content; 6.24% ash content; foam density 0.57 g/cm3; bulkdensity 0.77 g/cm3; 95.23% solubility; water absorption index 12.62%; hygroscopicity 11.36%; vitamin C content75.49 mg/100g. Abstract. Chutney is a native Indian processed product, made from cuts of fruits or vegetables and nuts cooked in a sweet, sour and spice mixture. The quality requirements of chutney are influenced by the use of raw materials herbs and spices. The purpose of this study was to determine the response of three varieties of mango and its interaction with concentration of apple vinegar towards physicochemical characteristics of mango chutney. The experimental design of this study used a nested design with two factors. The first factor was three varieties of mango consisting of podang mango, gadung, and kweni and the second factor was the concentration of apple vinegar (5%: 10%: 15%).Parameters analyzed were moisture content, ash content, vitamin C, total soluble solids, total titrated acids, pH, crude fiber, antioxidant activity, color intensity, topicality and hedonic test (flavor, aroma, and appearance). The study showed that differences in mango varieties and apple vinegar concentration did not interact with moisture content, ash content, total soluble solids, total titrated acids, vitamin C, crude fiber, antioxidant activity, pH, color intensity, topicality and hedonic test. The differences in mango varieties significantly affected on water content, color intensity (L and a+), topicality, and hedonic test, whereas the difference of apple vinegar concentration had no significant effect on ash content, pH, total soluble solids, total titrated acids, vitamin C, crude fiber, and antioxidant activity. The optimum composition based on De Garmo test chutney made from gadung mango and 5% apple vinegar (G2C1) with moisture content 23,50 %, ash content 3,15 % vitamin C 0,10 %, total titrated acid 0,75 %, crude fiber 7,05 %, total soluble solids 4,60 ºbrix, ph 4,31 %, antioxidant activity 93,67 %, colour intensity: lightness (L) 36,13, redness (a+ ) 4,67 and yellowness ( b+) 10,00, Topicality 10,67 cm, and hedonic test : appearance 2,13 %, aroma 3,30 % and flavor 2,97 %.

Laboratory experiments were conducted to determine the effect of foaming agent (egg white (EW)), foam stabilizer (carboxyl methyl cellulose (CMC)) and whipping time on drying rate and quality of tomato (Lycopersicon esculentus) paste dried under air oven, microwave oven and mechanical dryer. A 43 factorial experiment in Randomized Complete Block Design (RCBD) was used to study the effect of four levels each of foaming agent (5%, 10%, 15% and 20%EW), foam stabilizer (0.15%, 0.30%, 0.45% and 0.60%CMC) and whipping time (3, 5, 7 and 9[Formula: see text]min) on the drying rate and the quality of foam-mat dried tomato powder in the three drying equipment. Each trial was performed in triplicates making a total number of 576 samples that were individually tested and measured. 25[Formula: see text]g sample of the paste was dried to a moisture content of 7.60% (wb) for 8[Formula: see text]h in mechanical dryer and oven dryer at temperatures of 55[Formula: see text]C and 50[Formula: see text]C, respectively, and 10[Formula: see text]min in microwave oven at 540[Formula: see text]W. Data obtained from the experiments were statistically analyzed using the analysis of variance (ANOVA) while the Duncan’s Multiple Range Test was used to compare the means. Results showed that the drying rate increased with increase in foaming agent, foam stabilizer and whipping with minimum values of 9.21[Formula: see text]g/h obtained in mechanical dryer, 9.31[Formula: see text]g/h in air oven and 8.05[Formula: see text]g/h in microwave oven. Increase in foaming agent, foam stabilizer and whipping time did not cause any adverse effect on vitamin C, ash, protein, fat, carbohydrate, crude fiber contents of the samples. Samples reached a stable moisture content of 7.60% (wb) in less than 8[Formula: see text]h in mechanical dryer and air and less than 10[Formula: see text]min in microwave oven. The results of the study showed that EW, CMC and whipping time influenced the drying rate and quality of foam-mat dried tomato powder.

In this paper, the deep-bed drying rate was analyzed under different bed depths and air temperatures. It was found that the bed depth had a greater impact on the drying efficiency, and if the initial moisture content of maize and the ventilation temperature are higher, the effect would be much more notable. The results will provide a basis for optimal design of the deep-bed drying devices.

ABSTRACT   Jelly candy from combination of pineapple (Ananas comosus L.) and calamansi (Citrus microcarpa) is an alternative food product. The aim this study is to provide the best quality of jelly candy from the combination of pineapple and calamansi juices. This study used Randomized Block Design with one factor was combination of pineapple : calamansi consisting of 6 levels are 100:0%, 90:10%, 80:20%, 70:30%, 60:40%, 50:50%. Each treatment replicated 4 times therefore obtained  24 samples combination. The combination of 80% pineapple and 20% calamansi is the best treatment with a mean of moisture content 19,34%, ash content 0,30%, vitamin C 15,97mg/100G, total dissolved solids 24,500brix, pH 3,29, hardness level 0,05 kG force, the average score of the panelists preference the taste, appearance, and aroma has like (5,04), like (5,28), like (5,12), respectively. Moisture and ash content are in the levels of jelly candy qualify according to National Standard of Indonesia (SNI: 02-3547-2008), i.e., maximum moisture content of 20,0% and a maximum ash content of 3,0%.   Keywords: pineapple, calamansi, combination, jelly candy, fruit juice.   ABSTRAK   Permen jelly dari penambahan kombinasi nanas (Ananas comosus L.) dan jeruk sambal (Citrus microcarpa) merupakan salah satu alternatif produk pangan. Penelitian ini bertujuan untuk mendapatkan karakteristik terbaik permen jelly dari kombinasi sari buah nanas dan jeruk sambal. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan 1 faktor perlakuan terdiri dari 6 taraf yaitu kombinasi sari buah nanas dan jeruk sambal terdiri dari 100:0%, 90:10%, 80:20%, 70:30%, 60:40%, 50:50%. Setiap perlakuan diulang sebanyak 4 kali sehingga diperoleh 24 sampel kombinasi. Kombinasi 80% nanas dan 20% jeruk sambal merupakan perlakuan terbaik berdasakan kadar air sebesar 19,34%, kadar abu sebesar 0,30%, vitamin C sebesar 15,97 mG/100G, total padatan terlarut sebesar 24,500brix, pH sebesar 3,29, tingkat kekerasan sebesar 0,05 kG force. Rerata skor kesukaan panelis terhadap rasa, warna, dan aroma berturut-turut adalah menyukai (5,04), menyukai (5,28), menyukai (5,12). Kadar air dan kadar abu permen jelly yang dihasilkan memenuhi syarat mutu SNI 02-3547-2008, yaitu kadar air maksimal 20,0% dan kadar abu maksimal 3,0%.   Kata Kunci : nanas, jeruk sambal, kombinasi, permen jelly, sari buah.

Recently, there is an increase of shallot production in Indonesia. One alternative of flesh shallot processing is shallot powder making which can be used during the off season. The aim of the study was to observe the effect of immersion in ascorbic acid and sodium bisulphite on two varieties of shallot on physical and organoleptic characters of shallot powder. Drying was done using tray dryer. Experimental design used was factorial completely randomised design. The first factor was the type of immersion agent and duration time and the second factor was shallot varieties (Bima and Sembrani). Statistical mean test was using Tukey Honestly Significant (HSD). The result showed that the treatments significantly affected parameters such as moisture content, ascorbic acid, total phenol, anthocyanin, and antioxidant activity, free radical inhibition and color (chroma). From ranking test the best treatment was Bima variety with 0.2% ascorbic acid treatment for 30 min. Characteristic of the best treatment was with moisture content 4.03±0.79 % (w/w), ash content 4.45±0.13 % (w/w), fat content 1.24±0.64 % (w/w), protein content 15.56±0.28 % (w/w), 61.94±4.11 mg/100g, total phenolics 256.39±16.26 ppm, anthocyanins 50.70±2.31 ppm, quercetin 2612.40±408.94 ppm, antioxidant activity ekuivalent, 225.72±4.0 µg/mL, inhibition free radical 83.05±1.69 %, 85.02 hue value (yellowish red) and aroma score 3.2 (strong), brightness score 4.2 (bright) and color 1.25 (pale red). ABSTRAKKenaikan cukup signifikan pada produksi bawang merah terjadi di Indonesia. Salah satu alternatif pengolahan bawang merah segar adalah melalui pengolahan menjadi tepung sehingga tetap tersedia saat langka dan harganya tinggi. Penelitian ini bertujuan untuk melihat pengaruh perendaman asam askorbat dan natrium bisulfit pada dua varietas bawang merah terhadap sifat fisikokimia dan organoleptik tepung yang dihasilkan. Pengeringan dilakukan dengan tray dryer. Percobaan menggunakan rancangan acak lengkap faktorial, faktor pertama jenis bahan  dan lama perendaman dan faktor kedua adalah varietas bawang merah (Bima dan Sembrani). Analisis statistik menggunakan metode Tukey Honestly Significant Data (HSD). Hasil penelitian menunjukkan bahwa perlakuan berpengaruh nyata terhadap parameter kadar air, vitamin C, total fenolik, antosianin, aktivitas antioksidan, inhibisi radikal bebas dan warna (chroma). Berdasarkan uji peringkat diperoleh perlakuan terbaik adalah tepung bawang merah dari varietas Bima dengan perlakuan perendaman asam askorbat 0,2 % selama 30 menit. Karakteristik dari tepung bawang ini memiliki  kadar air 4,03 ± 0,79 % (bb), kadar abu 4,45 ± 0,13 % (bb), lemak 1,24 ± 0,64 % (bb) protein 15,56 ± 0,28 % (bb), vitamin C 61,94 ± 4,11 mg/100 g, total fenol 256,39 ± 16,26 ppm, antosianin 50,70 ± 2,31 ppm, kuersetin 2612,40 ± 408,94 ppm, aktivitas antioksidan ekuivalen 225,72 ± 4,07 µg/mL, inhibisi radikal bebas 83,05 ± 1,69 %, nilai oHue 85,02 (kuning kemerahan) dan skor aroma 3,2 (kuat), skor kecerahan 4,2 (terang) dan skor warna 1,25 (merah pucat).   Kata kunci: Asam askorbat; tepung bawang merah; perendaman; natrium bisulfit

Abstrak. Penelitian ini bertujuan untuk menguji unjuk kerja pengering tenaga surya tipe efek rumah kaca pada pengeringan cabai dengan perlakuan low temperature long time (LTLT) blanching. Selain itu, pada penelitian ini juga dilakukan kajian mengenai karakteristik pengeringan cabai yang dipengaruhi oleh perlakuan LTLT blanching, terutama pada kadar air, laju pengeringan, kecepatan pengeringan, dan kualitas warna. Pengujian dilakukan dengan cara mengeringkan cabai merah dengan pretreatment LTLT blanching yang dikombinasikan dengan perlakuan merotasikan rak pengering (R) dan tanpa merotasikan rak pengering (TR). Sebagai kontrol adalah cabai yang dikeringkan tanpa blanching dan tanpa merotasikan rak pengering (K). Hasil penelitian menunjukkan bahwa perlakuan LTLT blanching yang dikombinasikan dengan merotasikan rak pengering (R) merupakan perlakuan yang terbaik, dengan kadar air akhir cabai kering sebesar 9,82% dan sesuai dengan standar SNI. Waktu pengeringan yang dibutuhkan adalah selama 5 hari. Warna cabai kering yang dihasilkan adalah yang terbaik dari dua perlakuan lainnya, dengan nilai L*, a*, dan b* untuk setelah proses LTLT blanching (sebelum proses pengeringan) dan setelah pengeringan berakhir (cabai kering) berturut-turut adalah 36,02, 38,22, 13,62, dan 32,44, 33,89, dan 10,19. Energi yang terpakai untuk pengeringan cabai adalah sebesar 596181 kJ. Perlakuan R ini juga menghasilkan efisiensi pengeringan terbaik, yaitu sebesar 34,01%.Performance of Green House Effect Type Solar Dryer in the Chillies Drying with Low Temperature Long Time Blanching TreatmentAbstract. This study aims to examine the performance of the greenhouse effect type solar dryer on drying chillies with low temperature long time (LTLT) blanching treatment. In addition, a study was also conducted on the characteristics of drying chillies and the final product affected by LTLT blanching treatment, especially in terms of moisture content, drying rate, drying speed, and color. Testing was performed by drying red chilli with LTLT blanching treatment, which was combined with the treatment of rotating dryer rack (R) and without rotating dryer rack (TR). As a control, chillies were dried without blanching treatment and without rotating dryer rack (K). The results show that the LTLT blanching treatment combined with rotating the drying rack (R) is the best treatment, with a final moisture content of 9.82% which is in accordance with SNI standards. The drying time needed is 5 days. The dried chilli color produced is the best of the other treatments, with values of L*, a*, and b* for after the LTLT blanching process and after drying ended, respectively 36.02, 38.22, 13.62, and 32.44, 33.89, 10.19. The energy used for drying chillies is 596181 kJ. This R treatment also produces the best drying efficiency, which is 34.01%.

Development of appropriate technologies for conversion of solar radiation to thermal energy is essential for fruit and vegetable preservation. A natural convective step type solar dryer with 10 trays was used. The drying parameters such as drying temperature, drying rate and dryer efficiency were studied on bright sunny days from top to bottom of the dryer using unblanched and blanched beans. The maximum and minimum temperatures observed were 84ºC and 50ºC at no load, 59ºC and 75ºC using unblanched beans and 51 and 75ºC using blanched beans. While drying on a sunny day, the moisture content removed was from 72 to 14% for unblanched beans and 76 to 7.32% for blanched beans. On quality evaluation, the high rehydration coefficient was found in blanched beans (0.76) than in unblanched beans (0.52). The collection efficiency was found to be 40.92% and drying efficiency was found to be 15.85% using unblanched beans and 18.75% using blanched beans.

Corn as a staple farm produce are usually harvested at a point or time when the moisture content is more than 25% (wet.basis).,and therefore, it is easily attacked by fungi and other diseases causing organism and even physical damage, thereby reducing the market value of the crop.  Drying must be carried out on those products to prevent deterioration. The objectives of this research are to develop a device that can reduce the moisture content of corn using electronic components and equally carryout evaluation on the device.  Shelled corns with initial moisture content of between 25-30% (w.b.) is the major material used in this research work. A Heating element incorporated in the device supplied the needed heat which was delivered to the drying chamber by the help of a centrifugal blower. The drying experiment was carried out at three different temperature thus; 45 oC, 55 oC and 65oC. The moisture content at this varying temperature was used to determine the drying rate and the drying efficiency. The results showed clearly that the dryer air temperature affect the drying rate, the efficiency of drying, and the quality of the material. It is equally clear that the best drying rate and temperature is  65oC average 4,95% / hour, high efficient at drying temperature 55oC and 65oC equal to 86,27% and 83,51%, and best material quality with dryer temperature 55oC.

Papaya is very potential to be developed as an industrial raw material candy because it contains a number of phytochemical compounds that are beneficial for the body. This study aims to investigate the characteristics of jelly candy of papaya with addition of cow gelatin by 6%, 8% , 11% and 13%. In jelly candy made observations on pH, moisture content, ash content, reducing sugar content, sucrose content, vitamin C content, total acid, antioxidant activity by DPPH, total plate count, organoleptic and the best jelly candy analysis of beta-carotene The results showed that the addition of 11% cow gelatin to produce the best characteristics of jelly candy. The parameters are pH 4.83, 17.63% moisture content, ash content of 0.98% , 19.75% reduction sugar , sucrose content of 35.48%, levels of vitamin C 59.81 mg/100gr material, total acid 2.09%, 35.33% antioxidant activity, total plate count 3.9 x 103 colonies/g, 7.9934 mg/100 g levels of beta-carotene, and organoleptic tests with a level, 95% color, scent 85%, 85% flavor, and texture of 95%.
