Kefir is one of the oldest traditional fermented milk products, while it is very popular in Russia. Kefir contains mineral components, vitamins, essential amino acids, as well as several varieties of probiotic bacteria, which is so useful for health and important for nutrition. The purpose of the research was to evaluate the quality of kefir produced by the Center for the Protection of Rights (the village of Nizhnaya Sanarka, Troitsky district, Chelyabinsk region). Kefir 2.5 and 3.2 % fat content were used as an object of research. It was found that the samples of the drink under study were packed in clean, sealed bags of polymer film and in white bottles made of polyethylene terephthalate. The marking of the investigated kefir samples was incomplete (there was no sign «degree», the sign «To protect from sunlight», etc.) or incorrect (distorted terminology, numerical value of regulated quality indicators, etc.), and often - difficult to read, which violates the requirements of the state standard 51074-2003, the Technical Regulations of the Customs Union 022/2011 and 005/2011. In kefir 2.5 % fat, an excessively liquid consistency, an empty, unexpressed taste, a low acidity is detected, which indicates its immaturity and the inconsistency of quality with the current standards. The quality of kefir 3.2 % fat content complied with the requirements of the normative documents the state standard 31454-2012, the Technical Regulations of the Customs Union 033/2013. Such toxic elements as cadmium and lead in the samples of kefir were absent. According to Article 3 of the Federal Law No. 29 of 02.01.2000 «On the quality and safety of food products’ yogurt produced by the «Center for the Protection of Rights’ was recognized as improper implementation in retail trade.

Compound feed are subject to requirements for their composition, since they use several types of grains that contain anti-nutritive substances that reduce the digestibility and use of nutrients. One of the tasks of domestic poultry farming is to reduce losses by increasing the digestibility and accessibility of feed. Among the most effective ways to solve this problem is to add enzymes to the feed of poultry. The inclusion of enzyme drugs in the composition of compound feed contributes to the inactivation of anti-nutritive substances, which contributes to an increase in the coeffi cient of digestibility of nutrients. The purpose of the work was to establish the feasibility and eff ectiveness of the enrichment of compound feed used in the production technology of chicken eggs with mixtures of enzyme drugs of domestic production of Amylosubtilin G3x, Cellolux-F and Protosubtilin G3x. Three groups of laying hens with 57 heads in each have been formed: a control group and two experimental groups. The duration of the experiment was 420 days. Laying hens of the control group have been received farm compound feed depending on their age. Laying hens of the 1st experimental group have been received compound feed of the control group enriched with the enzymes Amylosubtilin G3x and Cellolux-F depending on the age. In the compound feed of laying hens of the 2nd experimental group enzyme drugs were additionally introduced depending on the age Amilosubtilin G3x and Protosubtilin G3x. Higher egg production rates have been observed in the 1st experimental group – 357,81 eggs, which was 6,48 % higher than in the control group and 1,84 % higher than in the 2nd experimental group. The weight of eggs of laying hens of the 1st experimental group was 1,85 g or 2,97 % more, and the 2nd experimental group was 0,7 g or 1,12 % more than in the control group. The diff erence between the egg weight in laying hens of the 1st and 2nd experimental groups was 1,85 % or 1,15 g. The lowest feed consumption of 1,37 kg for the production of 10 eggs was in the laying hens of the 1st experimental group, which was less than the indicator of the control group by 10,94 and by 4,2 % than in the 2nd experimental group.

This paper examines the issue of quality assessment of tourism products, as one of the key elements of counntries’ touristicoffer in a rapidly changing digital and globalized world. Tourism product is a presentation of a broad cross-section of history, nature, archeology, living culture, ensuring that visitors taking part in the discovery will leave with a lasting impression of the diversity, complexity and beauty of the visited country and its culture. As such, it is a product of quite a particular nature, which derives from the coexistence of a series of different elements interlinked among each other. It is the combinations of interlinkages that enable destinations to offer an individualized “total tourism product” that meets the changing needs of various categories of tourists. Total tourism products are complex and are shaped in different offered through numerous and diverse specific products and services, which may be shaped in many different ways and for which demand exists on a combination of motives, often in conflicting mutual interlinkages. The assessment of the quality of tourism offers is a complex process, which focusses around the tourists. The concept of valorization of tourist sites and attractions is a useful tool in the quality assessment. The harsh completion in the field for tourism calls for application of the total quality management system, which improves the ability of the tourism sector to meet the needs and requirements of the tourists, at minimum costs. Creation and introducing quality standards would be an urgent task, which is the responsibility of both businesses and institutions alike.
