Introduction into the daily milking procedure of the hygienic product “ItalmasVP - I 2500”, based on an iodine-polymer complex, which has a disinfecting and regenerating-healing effect for the treatment of the udder teats after milking,allows to reduce the level of bacterial contamination of the udder and improve the quality of milk by reducing bacterial contamination of milk and decreasing the number of somatic cells. “ItalmasVP - I 2500” has a high prophylactic efficacy for the incidence of mastitis in cows and ensures a longer hygienic protection of the cow’s udder teats.

The main factor of determining the level of sanitary and hygienic indicators of the quality of milk produced is the hygiene of milking cows. The study of the role of hygiene of milking is of great importance for a correct understanding of the ways of solving the problem of obtaining high quality milk. Special attention of scientists and practitioners in recent years are focused on the development and implementation of highly effective detergents and disinfectants in the production of milk of cows. Many researchers and practitioners have directed their work to developing measures to prevent the entry of pathogenic microflora into milk during and after milking cows. In spite of many researches carried out, aimed at controlling the number of somatic cells in milk with the use of different products based on lactic acid, chlorhexidine and iodine, the problem of high quality milk production remains unresolved. In our work results of researches on the use of probiotic means for treatment of udders of cows are given. Processing the udder of cows with probiotic means before milking by Skin Cleaner, after milking by PIP Cow Teat Cleaner reduced the amount of somatic cells in cow milk 12,8-84,0%. The use of probiotic means Biomastim lowed somatic cell count of 18,4-51,9%. Microbiological contamination of milk using probiotic means for processing the udder before milking Skin Cleaner, after milking PIP Cow Teat Cleaner decreased 4,9- 70,4 times. The application of probiotic means Biomastim after milking on the teats led to the decrease in milk of cows QMAFAnM 5,0-6,6 times.

The public of our country makes ever-increasing demands on milk in terms of safety and nutritional values. In accordance with the requirements of the Interstate Standard GOST 31449-2013 “Raw milk of cow. Specifications” the number of mesophilic aerobic and facultative anaerobic microorganisms should not exceed 1.0×105 CFU/cm3, the number of somatic cells - 4.0×105 in 1 cm3 in milk. The dairy industry places high demands on milk quality, namely, on bacterial contamination. Dairy products of high quality can only be obtained from good raw materials. High bacterial contamination worsens the quality of raw milk and its processed products and creates a certain risk factor for human health. In the Chuvash Republic, studies were carried out on the use of modern domestic iodine-containing preparations and lactic acid-based preparations for the treatment of the udder of cows. At the same time, the sanitary-hygienic condition of the udder’s nipples was improved, the microbiological seeding and the number of somatic cells decreased, and the grade of milk of cows was increased. When treatment the udder of cows before milking by Violet and after milking by Lactovit, the number of mesophilic aerobic and facultative anaerobic microorganisms in milk decreased by 22.9 times, the number of somatic cells - by 2.0 times. When using Monklavit-1, the number of mesophilic aerobic and facultative anaerobic microorganisms decreased by 25.0 and the number of somatic cells decreased 2.5 times. It was found that the efficiency of Monclavit-1 using is higher 1.1 times according to the number of mesophilic aerobic and facultative anaerobic microorganisms and 1.5 times according to the number of somatic cells, than treatment of the udder of cows by Violet and Lactovite. The use of modern udder treatment means allowed to improve milk quality from the second to the highest grade.

AbstractThe aim of the research was to assess the quality of milk from mountain sheep used for the production of traditional cheeses, taking into account the influence of the breed, the month of milking, and the content of somatic cells. Milk for the study was obtained from sheep of three mountain breeds: Podhale Zackel (PZ), Polish Mountain Sheep (PMS), and Coloured Mountain Sheep (CMS). The sheep were grazed in mountain pastures after lamb weaning, in the period from May to October in the traditional system. No influence of the breed on the examined parameters was found, except for urea content. Mountain sheep milk was characterized by a content of 19.68% solids, 8.48% fat, 6.63% protein, in which almost 76% was formed by casein (4.99%), and the average lactose content was 4.15%. Other milk parameters also did not differ between breeds: density was 1034.04 g/L, acidity 11.34°SH, and mean somatic cell content was 982.13∙103∙ml−1 (log10SCC = 5.68). The highest urea content was recorded in the milk of Coloured Mountain Sheep (280.69 mg/L) and the lowest urea content was recorded in the milk of Zackel sheep (200.97 mg/L). The month of milking influenced the content of most milk components, but no changes in SCC content during lactation were found. Significant correlations between fat content and other milk parameters were recorded. In the case of urea content, negative, statistically significant correlations with the majority of examined parameters were found.

Abstract. The aim of this study is to study the effectiveness of the use of various means for treating the udder of cows in order to prevent the incidence of mastitis and improve the quality of milk. Since in order to prevent the development of mastitis for a long time, it is necessary not only to destroy the disease itself and fight its symptoms, but also to take all kinds of measures to prevent the disease. Methods. To conduct a scientific and economic experiment, 4 groups were formed, of which 3 are experimental and 1 control, according to the method of pairs-analogs using a tethered method of keeping in stalls in all four groups. To treat the udder, agents based on iodine, chlorhexidine, chlorhexidine digluconate and probiotic bacteria were used. Results. The summer use of Priolit Vortex and Algavit Vortex in 1 experimental group showed a decrease in the number of mesophilic aerobic facultative anaerobic microorganisms in cow's milk from 200,000 to 97,000 CFU/cm3, which is 48.5 % less than at the beginning of the experiment. Treatment with disinfectants Priolit Vortex and Elovit Vortex in the 2 nd experimental group made it possible to reduce the number of mesophilic aerobic facultative anaerobic microorganisms by 68.4 %. The use of probiotic agents Skin Cleaner and PIP Cow Teat Cleaner for treating the udder of cows allowed to reduce the number of mesophilic aerobic facultative anaerobic microorganisms in the milk of cows in experimental group 3 from 180,000 to 110,000 CFU / in 1 cm3, which is 61.1 % less than the initial indicators. Somatic cells in the milk of cows of the 1st experimental group decreased from 750,000 to 120,000 in 1 cm3, in the 2nd experimental group the number of somatic cells decreased from 250,000 to 180,000 in 1 cm3, in the 3rd experimental group from 390,000 to 340,000 in 1 cm3. In the control group, an increase in the number of somatic cells was found by 84 %.

For animals the sense of physical comfort is necessary (physical comfort). When animals feel physically comfortable, it means that every part of their bodies is in harmony with the surrounding area. Therefore, the farms are usually build in accordance with the number of cattle that will be hold in designed facilities, which provide a higher degree of cows cleanliness. Cleanliness of cows is important in order to produce hygienically clean milk and to achieve the cattle welfare of dairy cows too. Cleanliness of animals mostly depends on what kind of object they are placed in. Hygienically proper milk includes the number of microorganisms up to 100,000 / ml and the number of somatic cells to 400,000 / ml, which are regulated by the "Regulations on quality of fresh raw milk." For this research farms are divided into three groups according to the number of cows. The first group included the number of cows from 1 to 9, the second group included 10 to 19, and a third group 20 or more cows. The aim of this paper is to examine whether there is an influence of the size of farms (number of cows) on the subjective cow cleanliness and hygienic quality of milk.

In 82% of cows, contamination of the genitals with conditionally pathogenic microflora of E. coli was established in 17% of cases, S. aureus - 15%, P. mirabilis - 14%, S. pyogenes - 14%, S. pyogenes, R. vulgaris, C. albicans - 14.0%; S. aureus, E. coli, C. albicans - 14.0%; S. aureus, P. mirabilis, E. coli, C. albicans, A. fumigatus, M. racemosus in 12% of cases of latent endometritis. In salpingitis, microorgans were isolated in the association of S. aureus, P. mirabilis, C. albicans in 28.5% of cases; E. coli, P. mirabilis in 27.7% of cases; E. coli, P. vulgaris, C. albicans, A. fumigatus - 25.2%; S. aureus, E. coli, C. albicans, A. fumigatus - 13.1%, the rest in 5.5% of cases. In patients with latent endometritis and salpingitis, fungi were isolated in 29.6% of cases of A. fumigatus and in 70.4% of cases - C. albicans and C. crusei. Milk obtained from sick cows with latent endometritis and salpingitis showed 2 times higher total bacterial contamination than milk obtained from healthy animals.

We have performed diagnostics of sub clinical mastitis in three different cow breeds with comparison of California mastitis test results, somatic cells count at quarter level and with bacteriological findings confirmation in order to justify their appliance in mastitis diagnostics. In total, 90 cows or 360 quarters of mammary gland have been examined. In 63.3 % of the examined cows, with different racial origin, positive reaction to California mastitis test have been established. Usually, positive reaction have been found in milk of one and two quarters, with reaction intensity of one and two plus. SSC higher than 200.000 in 1 ml is established in 60 % of cases and the most often causes of mastitis were staphylococcae, streptococcae and mixed infections. With continuous use of this methods it is possible to timely detect presence of sub clinical mastitis and so to obtain satisfactory results in prevention and therapy of mastitis, as well as improvement in amount and quality of milk.

The purpose of the paper was to examine weight loss and correlation between total bacteria count and the somatic cells count and weight loss of semihard naturally dried cheese, product of dairy plant ZZ?Cijevna? in Podgorica. Weigt loss was calculated on the base of difference in mass of cheese at the beginning of ripening and after specified period of ripening, exposed in percents. Examination of weight loss was done on total six product series of cheese during 60 days of ripening on temperature 14,20C and RH of 89%. Obtained average values for weight loss of cheese were: after 10 days 4.723%, 20 days 8.789% and after 30 days of ripening 11.020%. Weight loss of cheese in period of ripening 10-20 days was 4.266%, in period 20-30 days 2,445% and in period of ripening 30-60 days 5.507%. The total bacteria count in milk was determined on apparatus BactoScan FC 100 and the somatic cells count on apparatus Fossomatic 5000. The middle positive correlation between somatic cells count in milk and weight loss of cheese in period 1-10 days of ripening (0.69156), as well as middle positive correlation (0.767336) between total bacteria count and weight loss of cheese 1-10 days of ripening were determined. The obtained results show that weight loss of cheese was highest in period 1-10 days of ripening and that there is significant influence of hygienic quality of milk on weight loss of cheese and economy of production.

One of the indicators of the hygienic quality of milk is the number of somatic cells, which is an internationally recognized parameter for the health condition of the udder. The increased number of somatic cells over 400.000/ml causes changes in the secretion and the chemical composition of the milk. In this research, based on the number of somatic cells, the milk is categorized in three categories. In milk from the first category the average number of somatic cells equals 444.780/ml, 825.560/ml in the second and 1,242.220/ml in the third category. In milk from the first category the average contents of milk fat, proteins, lactose, dry matter, casein and whey proteins are 4.206%, 3.268%, 4.723%, 12.127%, 2.910%, 0.8610% respectively. In the second category 4.106%, 3.192%, 4.349%, 11.647%, 2.665%, 0.9680%, and 3.989%, 3.139%, 3.964%, 11.092%, 2.386%, 1.1820% in milk from the third category. The pH value of milk in the first, second and third category is 6.627, 6.799 and 6.897 respectively. Between the three categories of milk, significant differences, at the level of (p<0.01), are determined in the number of somatic cells and average contents of milk components. A positive correlation in all three milk categories exists between somatic cells and the whey proteins, and a negative correlating dependency exists between the other chemical parameters and somatic cells.

SummaryThe development of devices to sample milk at the clawpiece and at the end of the pipeline during milking are described. The results of tests to compare the bacteriological and compositional quality of milk collected from the sampling devices or from the recorder jar or milk cans were similar, demonstrating that the samples provided accurate and representative values. The use of the in-line sampling technique, whereby samples of the milk are taken at three points during its passage through the milking plant, to assess accurately the sources of bacterial contamination of bulk tank milk on farms is discussed.
