Gilthead seabream is bred mainly in fish farms in the Mediterranean Sea. One important factor responsible for the deterioration of fish quality is lipid oxidation. Moringa oleifera leaves have been described as having high antioxidant content. This work investigates the effect of dietary supplementation with Moringa leaves on the antioxidant activity of seabream. Gilthead seabream specimens were divided into four groups, the control group (fed a commercial diet) and three other groups fed diets enriched with Moringa (5%, 10% and 15%). The antioxidant capacity was measured by assays of free radical scavenging (OH·, H2O2, lipoperoxyl and ABTS), Rancimat test and linoleic acid system in muscle and skin of gilthead seabream, commercial diet, enriched diet and Moringa. Finally, the polyphenol content of Moringa and the fatty acid composition of seabream fed diets with and without Moringa were determined. Results showed an increase in antioxidant activity in gilthead seabream fed with diets enriched with a higher percentage of Moringa; therefore, Moringa could be considered a functional ingredient in diets for fish bred in fish farms and. The antioxidant potential of Moringa leaves could be mainly attributed to the presence of polyphenolic compounds.

The objective of this study was to investigate the properties of clove essential oil extracted by different microwave-assisted methods and to evaluate its effects on the stability of common Kilka oil. Each of these methods was hypothesized to yield a clove essential oil that would have a distinguishable composition and effect when added to common Kilka oil by maintaining its oxidative stability. The oxidation of common Kilka oil was examined by accelerated oxidation using the active oxygen method and Rancimat test. The clove essential oil extracted by microwave-assisted hydrodistillation showed the highest induction period according to the active oxygen method (16.56 h) and the Rancimat induction period (3.64 h) in common Kilka oil and its antioxidant activity was comparable to that of BHT (16.59 h and 4.34 h, respectively) and tocopheryl acetate (16.30 h and 4.02 h, respectively). Furthermore, the microwaveassisted hydrodistillation method resulted in the amount of eugenol that exhibited the highest antioxidant capacity for preserving PUFA in common Kilka oil. Ultimately, clove essential oil can become an efficient natural antioxidant for the oxidative stability of common Kilka oil.

The aim of the study was to analyze the effect of the type of gelling substance on the selected physicochemical properties of oleogels. Rapeseed oil (RO) and 5% w/w of one of the following structuring compounds (SC) were used for their production waxes: sunflower (SUN), candelilla (CAN), bees white (BW), bees yellow (BY), or monoacylglycerols (MAG). The ability of SC to form a network in RO was assessed on the basis of an analysis of the texture of oleogels (hardness and spreadability test, stability determined by the centrifugal method). Oxidative stability was determined using the Rancimat test. In addition, the microstructure of an oleogel samples was observed at a magnification of 600 times in polarized light and in a bright field. Differences in the brightness and color of the samples were also assessed using the CIELab reflection method. The highest hardness (5.52 N) and physical stability (99.67%) were found in oleogel with candelilla wax. A higher value of the force causing deformation of the sample indicates a denser network of oil gel, which was confirmed by the microscopic images analyzed in the work. The organogel with CAN had the shortest (on average 8.49 nm) and the most regularly distributed crystals compared to other samples. The lowest values of organogel strength and spreadability test parameters (e.g., firmness, work of shear, stickness, work of adhesion), which were respectively 0.73 N, 4.39 N, and 9.74 N mm, while −4.87 N and −2.68 N mm were obtained with the variant, which was yellow beeswax. Considering the texture results obtained and the centrifugal stability, it was found that organogels with yellow beeswax were characterized by the worst structuring of rapeseed oil. Sunflower wax was considered the best among the analyzed gelling agents (under the conditions of the experiment). The organogel with its 5% w/w share was distinguished by the closest to the white color and texture most reminiscent of cream. In addition, it had the highest work of shear value and the longest induction time (6.8 h) in the Rancimat test.

Biodiesel is a renewable plant-based fuel as an alternative for fossil diesel fuel which has many advantages. However, its high content of unsaturated fatty acid causes an oxidation instability during storage. Numerous additives have been used and developed to overcome this problem such as the application of phenolic compound-based antioxidants. Pyrogallol is reported to be one of the best phenolic antioxidants for biodiesel. Unfortunately, pyrogallol has a low solubility in oil solution. In this research, pyrogallol solubility is increased by preparing a pyrogallol derivative through a reaction between pyrogallol and methyl linoleate in the presence of radical 2,2-diphenyl-1-picrylhydrazyl (DPPH). The spectrophotometric method was used for solubility test. Antioxidant potential was examined using acid value determination during a four-week storage period as well as the Rancimat test to see its performance under accelerated oxidation conditions. The reaction produced a molecule which has a molecular weight of 418 g/mol, representing pyrogallol derivative which has a new C–O covalent bond with methyl linoleate. The result was confirmed by using nuclear magnetic resonance (1H-NMR, 13C-NMR, and 2D-HMQC) resulting in a molecular structure of methyl (10E,12E)-9-(2,6-dihydroxyphenoxy)octadeca-10,12-dienoate and its isomer methyl (9E,11E)-13-(2,6-dihydroxyphenoxy)octadeca-9,11-dienoate with a yield of 12.86% and selectivity of 21.05% on the basis of pyrogallol. Compared to pyrogallol, tert-butylhydroquinone (TBHQ), and gallic acid, the pyrogallol derivative has the highest solubility and acid value stability in palm oil biodiesel. The Rancimat induction time (IP) result of the pyrogallol derivative is higher than the biodiesel and is above the accelerated oxidation test American Society for Testing and Materials (ASTM) D 6751 standard.

Avocado is a highly potential functional fruit with significant health benefits which has high demand for consumption with a preferable taste. The fruit is one of the oil sources that still needs further examination on its probable kinetic behavior and oxidative stability as well as some characteristic behavior to commercialize and increase the market demand as functional oil. Hence, this study was motivated primarily for obtaining the Arrhenius kinetic information about avocado oil to evaluate the oxidative stability and provide predictive information about the shelf life by using the Rancimat method which is an accelerated shelf life test. Specifically, this research paper presents the study of the physical, physicochemical, chemical, and oxidative stability tests with the shelf life expectancy and kinetic property of avocado oil. According to the analyses, avocado oil has 210 days of predicted shelf life at 25 °C. This gives it a greater chance to be considered a good alternative to other oils as well as its antioxidant and phenolic content. According to the findings presented in this study, avocado oil has a very similar profile to olive oil and can be used as an alternative functional oil source.

The aim of this study was to investigate the effect of different herb extracts on the oxidative stability of hemp, flax, sesame and sunflower seed oils by means of Rancimat test. The dominant phenolic acids in herb extracts were detected by HPLC, while fatty acid profiles of oils, before and after oxidation, were determined by GC-FID. As expected, autoxidation increased the content of saturated fatty acids. The sesame oil showed the longest oxidative stability (3.43 h), while the shortest induction period was obtained for the flax oil. Lemon balm and oregano extracts accelerated the oxidation of hemp and flax oil, while in all other cases the addition of extracts had a positive effect on oil oxidative stability. The best results were obtained for lemon balm extract added to sesame and sunflower oil which resulted with OSI values of 1.33 and 1.48, respectively, while extremely prooxidative activity was obtained for lemon balm extract added to the hemp oil.

Due to the inconsistency of monoacylglycerols’ (MAGs) impacts and the lack of research concerning the weight of saturated monoacylglycerols on the oxidative stability of oils, the current study was designed. For this purpose, saturated MAGs at 0.5, 3.0 and 5.0% were added to canola oil and subsequently exposed to a Schaall oven test at 60 °C for 31 days (to assimilate moderate thermal conditions and a prolonged treatment time) and a Rancimat test at 110 °C (to assimilate extreme thermal conditions and shorter treatment time). To evaluate the quality and oxidative stability parameters of MAG-containing canola oil, free fatty acids (FFA), peroxide value (PV), and the oxidative stability index (OSI) were determined. The findings indicated that with the increase in MAG levels, the FFA increased from 0.05 up to 0.2%. The PV increased from 2 to 100 meq/L with the increase in MAG concentration. Also, it was shown that OSI increased from 12.20 to 13.10 h, which was proportional to MAG concentration.

The aim of the study was to examine and compare oxidative stability of refined (peanut, corn, rice bran, grapeseed, and rapeseed) oils. The oils were subject a Schaal Oven Test (temperature 63 ± 1 °C) and a Rancimat test (temperature 120 °C) and their stability was compared at the 1st and 12th month of storage. Changes in the peroxide (PV) and anisidine (AnV) values in the thermostat test were the fastest in rapeseed oil and grapeseed oil. The best quality was preserved by peanut and corn oils both in the first and the twelfth month of storage. The induction times for the rice bran, corn, peanut, and rapeseed oils were similar from 4.77 h to 5.02 h in the first month and from 3.22 h to 3.77 h in the twelfth month. The shortest induction times were determined for grapeseed oil: 2.4 h and 1.6 h, respectively. A decrease of oxidative stability of about 30% was found in all the oils after 12 months of storage. The PV of 10, determined in the thermostat and Rancimat tests, were achieved at the latest in corn oil and the fastest in rice bran oil.

The antioxidant properties and polyphenol content of some selected aromatic plants grown in Greece were studied. Plants were refluxed with 60% methanol after acid hydrolysis. The phenolic substances were quantified by HPLC-DAD. The antioxidant capacity of the extracts was determined with the Rancimat test using sunflower oil as substrate. Free radical scavenging activity was measured using the stable free radical 1, 1-diphenyl-2-picrylhydrazyl (DPPH). Results were compared with standard BHT and ascorbic acid. Total phenol concentration of the extracts was estimated with Folin-Ciocalteu reagent using gallic acid as standard.
