Low-molecular peptides of collagen origin are of crucial importance for the body metabolism. This work aims to substantiate the use of the hydrolysates of collagen-containing fish raw materials (scale) for protein sports nutrition. Sublimated low-molecular weight peptide water-soluble and dried water-insoluble protein-mineral supplements from the sardine scale were obtained by enzymatic thermal hydrolysis. The biopotential of scale and auxiliary food additives (apple pomace, flaxseed cake, pine nuts) was investigated using standard methods. The protein content and amino acid composition of the peptide supplement and the mineral composition of the protein-mineral supplement were analysed; their high biopotential according to the above criteria was shown. The peptide supplement contains all essential amino acids having a biological value of 59.9%. The protein-mineral supplement contains no tryptophan but a high amount of calcium (22.2 g/100 g) and phosphorus (12.0 g/100 g). The high content of functional food ingredients (protein, pectin, cellulose, polyphenols, minerals, vitamin C) in auxiliary vegetable raw materials was shown. The shape of a sports nutrition product (chocolate glazed protein bar) was substantiated. The basic recipe of a 60 g protein bar having the required protein content, a given structure and high consumer properties was established. Having a protein content of 23.5%, the bar provides a 24.1% calorific value, which corresponds to the "protein-rich food" for sports nutrition according to GOST 34006-2016. The biological protein value in the bar increased relative to the peptide supplement by 12% and amounted to 71.38%. The developed protein sports nutrition bar is dietary balanced by the content of amino acids (isoleucine, leucine, valine, methionine and cystine, phenylalanine and tyrosine, tryptophan, lysine, threonine, alanine, arginine, histidine, glycine, carnosine, taurine, ornithine, citrulline), fibre, polyphenols, calcium and phosphorus and is recommended for athletes and people having an active lifestyle.

The aim is to form a balanced position regarding the ergogenic characteristics of new sports food products in the modern practice of training highly qualified athletes on the basis of clinical-experimental evaluation of the effectiveness of special purpose real food additives. Materials and methods. Studies were carried out on laboratory animals (36 Wistar rats at the age of 3 months weighing 150–200 g and 16 Svetlogorsk mini-pigs) as well as on 102 high-qualified representatives of cyclic sports (all men aged 19–26) − members of national teams such as swimming (25), cross-country athletics (53), and skiing (24). As a control group, we studied 25 athletes of the same gender (all men), age and qualifications who received a placebo (starch capsules) for a long time during exercise. Placebo-controlled studies have been conducted on laboratory animals and athletes in compliance with the principles of bioethics. Results. It has been established that in the experiment the application of a new specialized food product MioActiv has a positive effect on the physical performance of animals and delays the onset of fatigue, which significantly exceeds the corresponding characteristics in the placebo group. Athletes also showed an increase in speed when passing competitive distances by 18.7–21.4% (p < 0,05), as well as a significant increase in mental endurance indicators (p < 0,05). The approbation of the innovative pre-workout pharmacological nutrient complex Pre-Fuse also showed the high efficacy and safety of this product with a positive effect of increasing the performance and endurance of animals, as well as the parameters of mental performance of athletes in the main groups, in contrast to the data in the placebo control groups. Conclusions. An analysis of the prescription components of new types of ergogenic sports nutrition and the presented results of preclinical and clinical studies conducted on the basis of the evidence-based medicine paradigm regarding the effectiveness of specialized products indicate the complex action of these funds on various aspects of both physical and mental performance. From the materials presented in the article, it can be seen that specialized sports nutrition products of an ergogenic orientation can provide significant assistance in increasing sports results.

The development of specialized sports nutrition with components of collagen-containing fish raw materials is due to the shortage of domestic products of this group, the problem of fish waste processing, scientific data on bioactive peptides of marine origin. Low-molecular active peptides and protein-mineral compositions in the form of powder and liquid dietary supplements were obtained from the scales of sardine and sardinella by methods of deep hydrolysis. During the hydrolysis of raw materials, fermentolysis was carried out with the Alcalase 2.5L enzyme, thermohydrolysis - at temperatures of 130-140 °C. The chemical composition of the scales of two fish species, the products of its hydrolysis, and the amino acid composition of its proteins have been studied. The amount of low-molecular-weight peptides in hydrolysates of sardine scales was investigated by various methods of hydrolysis. Rational methods of hydrolysis of scales - enzymatic and enzymatic-thermal - have been substantiated. They make it possible to obtain protein supplements with protein content of 83.9-85.2 % with a proportion of active peptides with a molecular weight of less than 10 kDa 91.7-98.1 %. A technology for obtaining protein supplements from fish scales has been developed, and their amino acid composition has been studied. The presence of irreplaceable and ergogenic amino acids, accompanying nitrogenous compounds, valuable in sports nutrition, was shown in the peptide supplement. An increased content of calcium, phosphorus and magnesium in the protein-mineral dietary supplement being important for the musculoskeletal tissues of an athlete has been established. On the basis of protein supplements in dry and liquid forms with the addition of beekeeping products, the technology of chewing marmalade for sports nutrition has been developed. Bioproduct "Apikolltonus" belongs to the class of gainers with a protein content of 20.5 %, a carbohydrate of 41.6 % with an amino acid value of BCAA (isoleucine : leucine : valine) 2 : 1 : 1.5. A multicomponent bar for sports nutrition has been developed using protein hydrolysates of scales, flaxseed and apple cakes, and pine nuts. The bar is functional in terms of the content of calcium and phosphorus, dietary fiber, flavonoids, and vitamin E. Recommendations for the use of new sports nutrition products are substantiated.

The aim of the study is to determine the athlete nutrition knowledge level of the students educated at Hatay Mustafa Kemal University School of Physical Education and Sports. A total of 286 students, 156 male, and 130 female, between the ages of 18-25 participated in the study voluntarily. The Sports Nutrition Knowledge Questionnaire (NSKQ) was used to determine the athletes' nutrition knowledge levels of the students. The Independent T-test was used to compare the groups, and the One-Way ANOVA test was used to determine the difference between the departments. As a result of the analysis, both men and women were in the weak knowledge group in the classification of nutritional knowledge. No difference was found in the comparison of the nutritional knowledge scores according to the gender variable. In the comparison of the nutritional knowledge scores according to the status of taking a nutrition course, a significant difference was determined for both the total score and the sub-variables (weight control, macronutrients, micronutrients, sports nutrition, supplement, alcohol), and it was determined that the difference was in favor of the students who took the nutrition course. It was determined that this difference was in favor of the students who took nutrition lessons. It was also determined that there was a significant difference in the sub-dimension of macronutrients in the comparison of sports nutrition knowledge scores according to the departments, and the difference was in favor of the department of recreation. When comparing the nutritional knowledge scores of male and female students according to the department variable, it was determined that there was a difference in the sub-dimension of macronutrients and this difference was in favor of the department of recreation in men and in favor of teaching department students in women. As a result, it was revealed that the nutritional knowledge level of the students in the School of Physical Education and Sports was weak. In their professional lives, it is thought that increasing the hours of compulsory nutrition lessons will be beneficial for education to be at the desired level in nutrition. ​Extended English summary is in the end of Full Text PDF (TURKISH) file.   Özet Çalışmanın amacı Hatay Mustafa Kemal Üniversitesi Beden Eğitimi ve Spor Yüksekokulunda (BESYO) eğitime-öğrenim gören öğrencilerin sporcu beslenme bilgi düzeylerinin belirlenmesidir.   Çalışmaya 18-25 yaş arası 156 erkek, 130 kadın olmak üzere toplam 286 öğrenci, gönüllü olarak katılmıştır. Öğrencilerin sporcu beslenme bilgi düzeylerinin belirlenmesi için Sporcu Beslenme Bilgisi Ölçeği (SBBÖ) kullanılmıştır. Grupların karşılaştırılmasında Independent T testi, bölümler arasında farkın belirlemesinde ise One Way ANOVA testi kullanılmıştır. Analiz sonucunda hem erkekler hem de kadınlar beslenme bilgi sınıflandırılmasında zayıf bilgi grubunda yer almışlardır. Cinsiyet değişkenine göre beslenme bilgi puanlarının karşılaştırılmasında fark saptanmamıştır. Beslenme bilgi puanlarının beslenme dersi alma durumuna göre karşılaştırılmasında, hem toplam puan hem de alt değişkenler (ağırlık kontrolü, makro besin öğeleri, mikro besin öğeleri, sporcu beslenmesi, supleman, alkol) için anlamlı fark belirlenmiş, farkın beslenme dersi alan öğrenciler lehine olduğu tespit edilmiştir. Bölümlere göre sporcu beslenme bilgi puan karşılaştırılmasında makro besin öğeleri alt boyutunda anlamlı fark olduğu farkın rekreasyon bölümü lehine olduğu tespit edilmiştir. Erkek ve kadın öğrencilerin bölüm değişkenine göre beslenme bilgi puan karşılaştırılmasında makro besin öğeleri alt boyutunda fark olduğu farkın erkeklerde rekreasyon kadınlarda ise öğretmenlik bölümü öğrencileri lehine olduğu tespit edilmiştir. Sonuç olarak, BESYO’da öğrencilerin beslenme bilgi düzeylerinin zayıf olduğu, mesleki hayatlarında beslenme konusunda istenilen seviyelerde olmaları için zorunlu beslenme dersi saatlerinin arttırılmasının eğitime faydalı olacağı düşünülmektedir.

Basketball is a team sport, with many fans and practitioners worldwide from all ages and levels. In all cases, players accumulate high levels of fatigue, and there is also limited time to recover between games or practices. In particular, nutrition plays a key role in optimizing performance and recovery. However, it is typical to observe erroneous nutritional behaviors among basketball players. It has been theorized that these behaviors are influenced by habits acquired based on the individual’s knowledge. Therefore, the main aim of this study was to conduct a descriptive research of the sports nutrition knowledge and practices in a sample of Spanish basketball players, from athletes under 18 years old (n = 69) to nonprofessional (n = 14) and professional adult players (n = 21). The sample was comprised of 49 men and 55 women. This was a transversal, cross-sectional, observational and descriptive study. All participants (n = 104) completed an anonymous online survey in order to analyze their sports nutrition knowledge and practices. In view of the obtained results, we can conclude that the knowledge of sport-specific nutrition in players under 18 years old, as well as non-professional and professional adult basketball players, is insufficient through all the categories and levels. The lack of professional support and time management difficulties were identified as some of the main barriers.

Most sports nutrition guidelines are based on group average responses and professional opinion. Precision nutrition for athletes aims to improve the individualization of nutrition practices to optimize long-term performance and health. This is a 2-step process that first involves the acquisition of individual-specific, science-based information using a variety of sources including lifestyle and medical histories, dietary assessment, physiological assessments from the performance lab and wearable sensors, and multiomics data from blood, urine, saliva, and stool samples. The second step consists of the delivery of science-based nutrition advice, behavior change support, and the monitoring of health and performance efficacy and benefits relative to cost. Individuals vary widely in the way they respond to exercise and nutritional interventions, and understanding why this metabolic heterogeneity exists is critical for further advances in precision nutrition. Another major challenge is the development of evidence-based individualized nutrition recommendations that are embraced and efficacious for athletes seeking the most effective enhancement of performance, metabolic recovery, and health. At this time precision sports nutrition is an emerging discipline that will require continued technological and scientific advances before this approach becomes accurate and practical for athletes and fitness enthusiasts at the small group or individual level. The costs and scientific challenges appear formidable, but what is already being achieved today in precision nutrition through multiomics and sensor technology seemed impossible just two decades ago.

Bioactive peptides are physiologically active peptides mostly derived from proteins following gastrointestinal digestion, fermentation or hydrolysis by proteolytic enzymes. It has been shown that bioactive peptides can be resorbed in their intact form and have repeatedly been shown to have a positive effect on health-related parameters such as hypertension, dyslipoproteinemia, inflammation and oxidative stress. In recent years, there has been increasing evidence that biologically active peptides could also play an important role in sports nutrition. Current studies have shown that bioactive peptides could have a positive impact on changes in body composition and muscular performance, reduce muscle damage following exercise and induce beneficial adaptions within the connective tissue. In the following overview, potential mechanisms as well as possible limitations regarding the sports-related effect of bioactive peptides and their potential mechanisms are presented and discussed. In addition, practical applications will be discussed on how bioactive peptides can be integrated into a nutritional approach in sports to enhance athletic performance as well as prevent injuries and improve the rehabilitation process.
