The article analyzes the role of essential polyunsaturated fatty acids (PUFA), especially omega-3 series in humans and animals. The biosynthesis of essential PUFA in humans and animals is very limited, so they must be consumed with food (feed). Тhe ratio of omega-3 and omega-6 PUFA is very important. Biomembranes of animal cells contain about 30% PUFA with a ratio of ω-6/ ω-3 1-2. As this ratio increases, the physicochemical properties of biomembranes and the functional activity of their receptors change. The regulatory function of essential PUFA is that in the body under the action of oxygenase enzymes (cyclooxygenase, lipoxygenase) are formed extremely active hormone-like substances (eicosanoids and docosanoids), which affect a number of physiological processes: inflammation, immunity, metabolism. Moreover, ω-6 PUFA form eicosanoids, which have pro-inflammatory, immunosuppressive properties, and ω-3 PUFAs form eicosanoids and docosanoids, which have anti-inflammatory and immunostimulatory properties. Deficiency of essential PUFA, and especially ω-3 PUFA, leads to impaired development of the body and its state of health, which are manifestations of avitaminosis F. Prevention and treatment of avitaminosis F is carried out with drugs that contain PUFA. To create new, more effective vitamin F preparations, it is necessary to reproduce the model of vitamin F deficiency. An experimental model of vitamin F deficiency in white rats kept on a fat –free diet with the addition of coconut oil, which is almost completely free of unsaturated fatty acids, and saturated fatty acids make up almost 99 % of all fatty acids was developed. The total content of ω-6 PUFA (sum of linoleic and arachidonic acids), the content of ω-3 PUFA (α-linolenic, eicosapentaenoic and docosahexaenoic acids) in neutral lipids (triglycerides and cholesterol esters) defined. Тhe content of ω-6 PUFA under the influence of coconut oil decreased by 3.3 times, and the content of ω-3 PUFA - by 7.5 times. Тhe influence of coconut oil, the content of ω-6 PUFA decreased by 2.1 times, and the content of ω-3 PUFA - by 2.8 times. The most strongly reduces the content of ω-3 PUFA, namely eicosapentaenoic, coconut oil, starting from 5 %. Consumption of FFD with a content of 15 % coconut oil reduces the content of eicosapentaenoic acid to zero, ie we have an absolute deficiency of one of the most important essential PUFAs, which determined the presence of vitamin F deficiency.

The objective was to get beef that contain unsaturated fatty acids (especially omega 3 and 6), so as to improve intelligence, physical health for those who consume. The study design using CRD with 3 treatments, each treatment used 4 Bali cattle aged approximately 1.5 years. Observations were made 8 weeks. Pasta mixed with ginger provided konsentrat. P1 (control); P2 (6% saponification lemuru fish oil, olive oil 1%; rice bran: 37.30%; corn: 62.70%; KLK: 7%, ginger paste: 100 g); P3 (lemuru fish oil saponification 8%, 2% olive oil; rice bran; 37.30; corn: 62.70%; KLK: 7%, ginger paste: 200 g). Konsentrat given in the morning as much as 1% of the weight of the cattle based on dry matter, while the grass given a minimum of 10% of the weight of livestock observation variables include: fatty acid composition of meat. Data the analyzies qualitative. The results of the study showed that the composition of saturated fatty acids in meat decreased and an increase in unsaturated fatty acids, namely linoleic acid (omega 6) and linolenic acid (omega 3), and deikosapenta deikosaheksa acid.Keywords :

It was evaluated in this study the effect of the type of the diet on duodenal flow of long-chain fatty acids in steers. The tested diets were the following: conventional (feedlot diet composed of 60% corn silage and 40% of concentrate); winter forage silage - rye grass (Lolium multiflorum, Lam); or tropical forage silage - association of millet (Pennisetum americanum, Leeke + alexander grass, Brachiaria plantaginea). Six Charolais × Nellore crossbred steers with cannulas in duodenum were used in a 3 × 3 double Latin square. Dry material intake was similar among the groups (mean of 4,037 g/day), but the intake of total fatty acids and saturated fatty acids were higher in the group fed tropical pasture silage. On the other hand, the animals which received the conventional diet consumed higher quantity of unsaturated fatty acids. Tropical pasture silage provided higher consumption of vacenic acid (C18:1 t-11) and the winter forage silage offered higher consumption of conjugated linoleic acid. The intake of omega-6 fatty acids was higher in the group fed conventional diet and for omega-3, intake was higher in the group fed tropical pasture diet. The total fatty acid flow in the duodenum was not affected by the diets, but in all treatments it was higher than the consumed one. The animals fed diet with concentrate show the greatest changes on the profile of fatty acids during the ruminal fermentation. Conventional diets provide the highest intake of unsaturated fatty acids and the highest availability of vacenic acid in the small intestine, but they do not increase the supply of intestinal conjugated linoleic acid.

AbstractThe main aim of the present study was to find differences in the content of fatty acids and variations in elemental composition in beef samples of longissimus dorsi muscle related to cattle age and gender. A further goal was to describe interrelations among the selected variables (descriptors) characterising the samples. For this purpose, an extensive data table was compiled, which contains chemical descriptors specifying forty-six beef samples originating from four well-known Austrian grassland-based beef labels. The following descriptors were investigated: (a) concentrations of 33 fatty acids, (b) concentrations of 19 elements, (c) contents of dry-mass, protein, intramuscular fat, and ash, (d) total content of saturated fatty acids (SFA), mono-unsaturated fatty acids (MUFA), and poly-unsaturated fatty acids (PUFA), (e) total contents of omega-3 (n-3) and omega-6 (n-6) PUFA and their ratio. The correlation analysis provided a number of statistically significant correlations among the descriptors, which were concordant with the results of the principal component analysis and cluster analysis. Furthermore, the effect of age and gender of cattle (both acting as target factors) on the fatty acid content and elemental composition of beef was examined by analysis of variance (ANOVA) and appropriate non-parametric tests. Several important interrelations among the beef characteristics investigated were also discovered. Finally, the most relevant beef descriptors were utilised in linear discrimination analysis (LDA) for predicting the slaughter age of the cattle for beef authentication.

Rayeb milk (bio-stirred yogurt) samples were prepared from cow milk sesame milk or cow and sesame milk mixture (1:1) with or without adding sucrose (5%), honey (5%), fructose (2.5%) and sorbitol (1.5%) and using ABT-5 culture. Results showed levels of saturated fatty acids (SFA), short chain fatty acids (SCFA) and medium chain fatty acids (MCFA were lower whereas values of unsaturated fatty acids (USFA), monounsaturated fatty acids (MUSFA), polyunsaturated fatty acids (PUSFA) and long chain fatty acids (LCFA) were higher in sesame milk Rayeb than that of Rayeb manufactured from cow milk. Rayeb made from cow and sesame mixture had higher levels of antioxidant activity than Rayeb prepared from cow milk or sesame milk. The acidity, total solids and total volatile fatty acids values of Rayeb milk treatments contained sweeteners were higher than that of control. The addition of sweeteners decreased SFA, SCFA and MCFA and increased USFA, MUSFA, PUSFA, LCFA and antioxidant activity values of Rayeb milk. Essential fatty acids, linoleic acid (omega-6), α-linolenic acid (omega-3) and oleic acid (omega-9) greatly increased in Rayeb made from cow and sesame milk mixture. Adding sweeteners had the same effect. Fortification of Rayeb milk with sweeteners highly improved the smell, taste, mouth feel, texture and body evaluation scores.

The fatty acids composition and antioxidant activity have been determinate for cold press walnut oil. It has been found that the total saturated fatty acids have been 8.8 % while poly unsaturated fatty acids have been 72.84 %. The ratio between omega-6 and omega-3 has been determined as 5.06 which could help in human healthy diet. On the same side, the antioxidant activity of the oil is very high at a level of 3.65 mmol L-1 and a ratio between lipophilic and hydrophilic fractions of 9.45.

Breastmilk (ASI) is the best food produced by the breast glands, containing all the nutritional elements needed by infants aged 0-6 months. The article states that the development of insulin resistance is influenced by many parameters, however, one of the first is the increased weight. The main parameter that characterizes the degree of obesity is the body mass index. There is a direct correlation between body mass index and the probability of diabetes developing. Diabetes is a part of symptoms, metabolic syndrome. The comparative analysis of makronutrient composition of diabetic patient’s diets and healthy individuals were made. Thus, for patients with diabetes it is necessary to reduce overall caloric intake by fat and carbohydrates. It is recommended to reduce total fats by reducing saturated fatty acids at the same time to increase the content of omega-3 fatty acids. It is shown that the consumption of foods with dietary fiber (30 grams per day), reduces the need for insulin by 25 ... 50 %, and has a positive effect on blood glucose and lipids in the blood.

The aim of the present study was to characterize the fatty acids profile and the related health lipid indices of goat`s milk from different Bulgarian breeds in order to add information on its nutritional quality. The study was performed with goat milk from a private farm in the Stara Planina Mountain. Milk samples were collected from three breeds – Bulgarian White Dairy Goat, Toggenburg and local goats. The content of saturated fatty acids was the highest in the milk of the local breed – 83.6% compared to for Bulgarian White Dairy Goat - 75.4% and Toggenburg - 75.2%. The atherogenic index was calculated on the obtained values for lauric (C12:0), myristic (C14:0) and palmitic (C16:0) acids and the unsaturated fatty acids. The data for the Bulgarian White Dairy Goat was – 3.12; Toggenburg – 3.14 and for local breed – 5.54. The values of the atherogenic index showed that it is the lowest for the Toggenburg, following Bulgarian White Dairy Goat and local breed. Omega 6/Omega 3 ratio varies from 1.58 for local breed to 2.44 for Toggenburg which is within the range of the optimal values for healthy nutrition.

Aim: To ascertain the effects of boiling and fermentation on the physicochemical properties, fatty acid, mineral and vitamin composition of Hibiscus sabdariffa (HS) seeds. Study Design: Completely randomized design Place and Duration of Study: Rivers and Anambra states, Nigeria, between February and September, 2018. Methodology: Two portions of 200 grams of HS seeds each were subjected to boiling and fermentation. The three samples were designated HSR, HSB and HSF for raw, boiled and fermented HS seeds respectively. Standard methods were used in determining the physicochemical properties and micronutrient composition, while fatty acid constituents were identified using a gas chromatography. Results: The acid, free fatty acid, peroxidase values and specific gravity were significantly increased (p<0.05), while iodine value was significantly reduced (p<0.05) after boiling and fermentation. Saponification value showed a mixed trend, while refractive index was not significantly (p>0.05) altered. Lauric (5.51–33.79%), palmitic (27.23–30.87%) and myristic (12.69–35.00%) acids were the predominant saturated fatty acids in HSR, HSB and HSF samples respectively. Oleic, linoleic, alpha-linolenic and arachidonic acids were the unsaturated fatty acids present in the samples. Boiling increased oleic acid level, while fermentation caused a drastic reduction (>90%) in its amount. Linoleic acid level improved up to 43% after fermentation. Magnesium, iron and sodium amounts significantly (p<0.05) reduced after boiling and fermentation, while zinc, calcium and molybdenum levels were significantly (p<0.05) improved after boiling. Na/K ratios for all the samples were greater than 0.60, while Ca/Mg values ranged between 0.82 and 3.46, below the recommended value (1.0). Vitamins B1, B3, B12 and D were significantly reduced (p<0.05) after boiling and fermentation, while fermentation significantly increased (p<0.05) vitamins B2, A, E and K levels. Conclusion: HS seeds were shown to possess good physicochemical properties that can enhance its utility in the industry. Boiling and fermentation maximized the usefulness of HS seeds as quality nutritional plant.

The purpose of this study was to investigate the influence of oleic acid as an additive in palm and coconut oils on tribological properties. Palm and coconut oils are vegetable oils that are consisted of free fatty acid, which one of the materials used as a source of environmental lubricant. Fatty acids in vegetable oil consist of saturated fatty acids and unsaturated fatty acids. Palm and coconut oils are rich in palmitic acid, which is categorized as saturated fatty acids. Whereas oleic acid is unsaturated fatty acids, and it has good lubricity as a lubricant. The effect of variation of oleic acid (10wt%, 20wt%, and 30wt%) in palm and coconut oils was investigated on tribological properties. The tribological properties were investigated by using a pin on disc apparatus and a ball bearing test rig. The results show that the effect of 10%wt oleic acids in coconut oil significantly increased its tribological properties with Δ scar width around 96 μm and 154 μm for the inner race and outer race, respectively.
