One of the most important conditions of a healthy and balanced diet is the daily amount of vitamins, minerals, water, carbohydrates, fat, and protein that the body needs to be met from vegetable and animal origin products. Among the products of animal origin, chicken meat is both cheap and; it is a quality product. High-efficiency lines have been obtained with various breeding and selection studies carried out on poultry animals for many years throughout the world. Especially in recent years, chicken meat has attracted attention with its rich amount of nutrients. One of the biggest reasons for this is the rapid increase in production and consumption over the years. Worldwide USA, Brazil, China, European Union, India, Russia, Mexico, Argentina, Turkey, Thailand, countries like Indonesia is located in the first take place of chicken meat production. Turkey, especially in the last 30 years, poultry has increased rapidly over the years the production capacity of the work done on. Especially in recent years, a rapid increase has been achieved in exports and imports worldwide. In the World and Turkey with the increase in the production amount over the years, per capita consumption of chicken meat has also increased. In modern conditions of meat production, one of the priorities of the meat processing industry is the production of products with improved consumer properties. To perform this task, it is necessary to include in the industrial circulation of physiologically functional ingredients of plant origin, which will provide the body with nutrients and expand the range of functional foods. The paper covers the issues of partial replacement of raw materials of animal origin with germinated sea-buckthorn seeds (GSBS) flour as a functional ingredient in the production of sausages. The chemical and vitamin composition of the physiologically functional ingredient has been studied. Three experimental recipes for sausages from GSBS flour has been developed. The positive influence of GSBS flour on functional-technological and physical-chemical properties of the received forcemeat is proved. Organoleptic parameters of sausages from GSBS flour are determined. The use of GSBS flour as a functional ingredient in the technology of sausages affects the appearance, taste, smell. It is established that the increase in the amount of GSBS flour introduction leads to an increase in pH by 0.4–0.8 % and finished products by 6.8 %. The improvement of functional and technological properties of experimental minced meat of sausages based on the use of GSBS flour is proved. The optimal amount of replacement of the main raw material with a physiologically functional ingredient, which is characteristic of the experimental sample № 2. The changes in the qualitative characteristics of the developed sample of sausages, which where within the regulatory requirements. The addition of 10 % GSBS flour to the minced meat of sausages leads to a slight increase in protein with a significant reduction in lipid content by 4.4 % in the finished product. As a result, the caloric content of Altaiska functional sausage is reduced by 13.2 % compared to traditional products. Production of such products will allow to expand the domestic range of functional products. Consumption of such sausages allows to consider them as foodstuff with essentially new functional properties which would correspond to modern requirements concerning food.

Ensuring biosafety in the territory of the country is one of the key functions (tasks) of the state. The pandemic of a new coronavirus infection has affected absolutely all areas of human activity in all countries of the world. Approaches to prevention have not changed, but the whole country has faced a number of challenges at various levels. With a sharply increased demand for non-specific prophylaxis (including skin antiseptics and disinfectants), not all manufacturers were ready to meet the demand with a quality product. The scarcity of resources (raw materials, components, cash shortages, personnel, etc.) constrained the rapid increase in production capacity to ensure a sharply increased demand. Keywords: pandemic COVID-19, disinfectants, skin antiseptics.

The basis of all life processes of the human body is a constant metabolism between the body and the environment. From the environment, people consume oxygen, water and food. The role of food is to replenish energy and tissue elements necessary for growth, development and functioning of the body, ensuring metabolic processes, normal health and efficiency. Rational nutrition (ratio – reasonable) is a physiologically complete nutrition of healthy people taking into account their age, sex, nature of work and other factors. Nutritional nutrition contributes to maintaining good health, resistance to harmful environmental factors, high physical and mental capacity, as well as active longevity. The article is devoted to the issues of accessibility to a balanced diet at the level of scientifically substantiated norms of the population of Ukraine. The main problems of mankind are covered, such as: poverty, hunger, malnutrition and food security, etc. Based on statistics for the last few years, the article has calculated and reflected such indicators as: the level of poverty in Ukraine according to national accounts and the upper poverty level of $ 5.50. US per day according to the World Bank, %, the dynamics of indicators of meat consumption in Ukraine, the compliance of indicators of meat consumption in Ukraine with rational standards, etc. The importance of solving problematic issues of food security, which affects the level of socio-economic development of society and countries in general, the ratio of production, consumption and demand for sugar and oil in Ukraine, the prevalence of malnutrition in children and adults in Ukraine, the ratio of nutrition standards in secondary schools for one-time nutrition of students and the physiological needs of the population of Ukraine in basic nutrients and energy. The concept of rational nutrition is revealed. The state of food security determines, in particular, the level of food security, is the key to socio-economic development of society. For the world agricultural system there is a growing trend in declining inventories, rising prices, increasing differences in the level of agricultural development in countries with economic crises and globalization. The availability of a balanced diet at the level of scientifically sound standards for all segments of the population is also considered, which today is one of the main challenges of our time, which gives our study importance and significance.

Human being all over the world is suffering due to the recent outbreaks of COVID-19 and prevention of viral infections emerges as a critical issue in safeguarding public health. According to Ayurveda, COVID-19 is considered as an Agantuja Jwar in which Agantu (outside) agent attacking the body. It is Sansargajanya (Aupasargika Roga) causing epidemic or pandemic infection. As no treatment is found effective, diet plays an important role to improve immunity towards viral diseases. Relevant references were searched related to  diet described in Ayurveda treaties. Scientific research papers related to clinical studies on dietetic drugs were also searched. The concept of balanced diet for healthy living has been explained by various Acharyas of Ayurveda, Acharya Kashyapa mentioned that the stability of an individual health is dependent on Ahara and there is nothing best except diet for sustaining the life of human beings. He has also equated Ahara as Bheshaja (medicine) and nothing else is considered as Mahabheshaja (Superior Medicine). Here treatment is suggested as per symptoms available through patients and as per Ayurveda, dietary habits followed during COVID-19 and boosting immunity to fights against pandemic diseases through yoga and Rasayana Chikitsa.

The lymphatic system is very important in the immunological activities of the body. Clinicians confirm the diagnosis of infectious diseases by palpating the involved cutaneous lymph node for changes in size, heat, and consistency. Clinical pathologists diagnose systemic diseases through biopsies of superficial lymph nodes. In many parts of the world the goat is considered as an important source of milk and meat products. The lymphatic system has been studied extensively. These studies lack precise information on the natural morphology of the lymph nodes and their vascular and cellular constituent. This is due to using improper technique for such studies. A few studies used the SEM, conducted by cutting the lymph node with a blade. The morphological data collected by this method are artificial and do not reflect the normal three dimensional surface of the examined area of the lymph node. SEM has been used to study the lymph vessels and lymph nodes of different animals. No information on the cutaneous lymph nodes of the goat has ever been collected using the scanning electron microscope.
