Abstract. The purpose of the research is to study the influence of the main technological methods of cultivation on the formation of the crop and grain quality of new varieties of soft winter wheat breeding North-Cavcasus FARC. Methods. Statement of field experiment and generalization of research results are made in accordance with the methodical instructions of B. A. Dospekhov. Accounting harvest was performed with the combine method. Technological assessment of winter wheat grain quality was determined according to GOST R 54478-2011. Results. The conducted researches showed that on the predecessor pure steam the studied new grades of a winter wheat form not only a big crop, but also the best quality of grain, in comparison with the predecessor a winter wheat. So, on average in grades for 2015-2018 productivity and amount of crude gluten of a winter wheat in our experiences on the steam predecessor on control made, respectively, 5,0 t/ha and 17,5 %, and on the winter wheat predecessor ‒ 3,4 t/ha and 16,4 %. Improvement of conditions of mineral food provided increase in productivity and amount of crude gluten on the predecessor pure steam, respectively, on 2,2 t/ha and on 5,9 items, and on the predecessor a winter wheat – on 1,7 t/ha and on 2,2 items. Our researches showed that on the sum of the indicators defining stability of a grain yield and its quality, the most perspective grades are the Stavka and Stat'. The scientific novelty consists in that, for the first in the conditions of unstable moistening of Stavropol Krai influence of various elements of technology on productivity and quality of grain of a winter wheat of new grades of selection of the North-Cavcasus FARC is studied.

Winter soft wheat is one of the most important crops. New varieties of wheat should be characterized by a set of valuable economic characteristics, but the most relevant is the creation of varieties with high yields and grain quality, resistant to a complex of diseases and other negative factors. The aim of the study was to evaluate new promising varieties of winter soft wheat breeding of the NSC "Institute of Agriculture NAAS" for grain yield, winter hardiness, disease resistance and grain quality. Experimental studies were conducted at the NSC "Institute of Agriculture NAAS" in 2016-2020, research fields are located in the Fastiv district of Kyiv region. Different weather conditions over the years of research have contributed to a better and more comprehensive assessment of varieties on a set of valuable economic characteristics. During field experiments, the generally accepted technology of growing winter wheat was used. The area of the competitive variety testing site was 20.0 m2, repeated four times. Field, measuring and weighing, laboratory and mathematical and statistical methods were used during the research. In 2018, new varieties of soft winter wheat Krasunia Poliska, Mokosha, Pyriatynka, Fortetsia Poliska, Efektna and in 2020 the variety Zemlerob were transferred to the Ukrainian Institute of Plant Variety Examination for qualification examination. Varieties created in NSC "Institute of Agriculture NAAS" by the method of hybridization using as parent components varieties and lines of local and foreign breeding. The variety Krasunia Poliska, belongs to the Lutescens type, is characterized by high drought resistance, resistance to lodging, germination on stumps, grain shedding. The Mokosha variety, belongs to the Lutescens type, has high drought resistance, is resistant to lodging, germination on stumps and grain shedding. Variety Pyriatynka, belongs to the Lutescens type, has high drought resistance, resistance to lodging, germination on the stump, shedding. Fortetsia Poliska, belongs to the Alborbrum type, is characterized by high drought resistance, resistance to lodging, germination on the stump and shedding of grain. Variety Efektna, belongs to the Erythrospermum type, is short (plant height 64-80 cm), characterized by high drought resistance, resistance to lodging, germination on the stump, shedding. The variety of winter soft wheat Zemlerob, belongs to the Lutescens type, has high drought resistance, resistant to lodging, germination on the stump, shedding of grain. The highest grain yield on average over the years of testing was obtained in the variety Fortetsia Poliska - 7.31 t / ha, varieties Pyriyatynka and Zemlerob with indicators of 7.10 and 7.06 t / ha, respectively, were distinguished by high yields. The yields of Mokosha, Effektna and Krasunia Poliska ranged from 6.27 to 6.95 t / ha. According to the increased winter hardiness, the best varieties are Pyriatynka, Krasunia Poliska, Mokosha and Efektna with a score of 8.0-8.2 points. In the varieties Fortetsia Poliska and Zemlerob the score for winter hardiness was 7.8-7.9 points. Estimation of powdery mildew showed that the maximum percentage of lesions on average over the years of research was found in the variety Mokosha (25.5%). As the most stable selected varieties Efektna, Lisova pisnia, Pyriatynka and Fortetsia Poliska (1.7-11.6%). In terms of resistance to brown rust, all varieties showed high resistance, the damage did not exceed 8.0%. The most stable variety was Efektna (0.3%). The greatest damage to winter wheat varieties was found in leaf septoria, which ranged from 19.0 to 39.3%. The greatest resistance to this disease is determined in the cultivar Zemlerob. New wheat varieties should also be characterized by high levels of protein, gluten and other valuable traits that ensure grain quality. The highest protein content was determined in the grains of the varieties Efektna (11.67%), Mokosha (11.62%) and Krasuni Poliska (11.54%). According to the increased content of gluten, the varieties Krasunia Poliska, Lisova pisnia, Mokosha (19.22-19.66%) were distinguished. According to the highest indicators of sedimentation, the varieties Krasunia Poliska, Pyriatynka and Mokosha (34.50-34.84 %) should be noted, these varieties are also the best in terms of a comprehensive assessment of grain quality. New varieties of soft winter wheat Krasunia Poliska, Mokosha, Pyryatynka, Fortetsia Poliska, Efektna and Zemlerob breedibg of NSC "Institute of Agriculture NAAS" are characterized by high grain yield (up to 7.31 t / ha), increased winter hardiness and disease resistance, as well as good indicators of grain quality: protein content - up to 11.67%; gluten - up to 19.66%. The introduction of these varieties into production will allow to obtain high yields of quality grain.

The article shows the research on grain quality which was conducted at North- Caucasus Scientific Agricultural Center 2015-2017. The research explored the grain quality of new soft winter wheat varieties. The grain belongs to own selections of soft winter wheat, particularly to Sekletiya, Zernetko 1, Tsaritsa and Liniya 1517. The authors focus on indicating the impact of certain factors on high-quality grain. Batko variety was applied as a standard. The soil of the experimental plot was black soil; the climate was moderate continental. The forecrop was pure steam. Before sowing, the authors applied complex mineral fertilizers dosed N40P60K40; in spring the researchers fertilized them with ammonium nitrate dosed26 kgof ammonium nitrate per hectare. The authors observed positive correlation between nature and flour strength qualities of grain (0,7-0,8); inverse relationship between the value of natural mass and IIR values (-0,79); dough elasticity to dough extensibility (-0,88); and baking absorption parameter (-0,85). Flour strength depends on protein quantity and quality (r = 0.79). The wheat varieties have shown different values of flour strength: Liniya 1517 and Zernetko 1 correspond to good filler (282-294 a.), Sekletiya, Tsaritsa and Batko (standard) correspond to satisfactory improver (312, 332,345 a.). Tsaritsa variety formed gluten of the first group during three years under different temperatures. This indicates the prevalence of protein glutenin fraction and capacity of strong wheat improver. The authors found out high correlation coefficient of sedimentation with the amount of gluten (r = 0.81) was found. The quality of winter wheat grain was affected by the arid conditions of grain loading in 2015 and overwetting in 2017. This prevented the varieties from showing up their capacities.

Wheat is undoubtedly one of the most important crops worldwide and it is essential to study how the distinct varieties answer to heat waves associated with climatic changes, in order to design adequate wheat breeding strategies. To assess high temperature (HT) impact in wheat grain characteristics, seven commercial varieties, which have been recommended for production in Portugal, were submitted for one-week HT treatment ten days after anthesis. Firstly, predicted grain technological quality was determined by giving high scores for all varieties studied, based on the allelic compositions of genes encoding high molecular weight glutenins, granule-bound starch synthase and puroindolines. The effects of HT on transcription levels of those genes were, for the first time, evaluated in distinct wheat genotypes, in comparison with control plants. Finally, protein fraction content in mature grains were also estimated in untreated and treated plants. Immature grains from plants, maintained in control conditions, showed significant intervarietal differences in transcription levels of genes associated with grain quality traits, a variability that was significantly reduced in grains from HT treated plants. On the other hand, the influence of HT in mature grain protein-fractions and in gliadin/glutenin ratios revealed intervarietal diversity, even with opposite effects in some varieties. The present study, therefore, discloses marked variability in parameters associated with flour quality between the wheat varieties analyzed, which are differentially affected by HT treatments, similar to heat waves frequently observed in climate change scenarios.

The article presents the best in yield genotypes of soft winter wheat, created in recent years in the North Caucasus FNATS. In terms of grain yield, on average, for two years of study (2018-2019), the best genotypes exceeded the standard variety Thunder from 0,50 to 1,97 t / ha. A particularly high excess over the standard was noted for the main elements of the yield structure: a mass of 1000 grains, the number of grains per spike, and a mass of spike grain. It is indicated that such varieties as Shield, Armada, Lyuda, Batya, Moretz, Source, 1217/14, 1008/15, 1332/15, 1731/15 can be effectively used as genetic sources when creating new winter wheat varieties for the conditions of the Russian Federation.

Improving the quality of wheat grain is an important task of agricultural production. In recent years, the production of strong and valuable wheat, necessary for the production of high-quality baking flour, has decreased. In this regard, the study of the quality of grain varieties of winter wheat in specific soil and climatic conditions of the Rostov region is becoming topical. Therefore, the purpose of our research was to study the main indicators of grain quality of varieties of soft winter wheat (protein and gluten content, flour strength, bread size from 100 g of flour) in ecological variety trials to select the best under conditions of the Rostov region. The studies were carried out on the trial fields of the Laboratory of selection and seed production of winter soft wheat of intensive type of the State Scientific Establishment “Agricultural research center «Donskoy»” (Rostov region) in 2014–2016. Seventy-five varieties were studied in the course of the research. Planting dates – optimal for implementation of agricultural and agro-technical measures. Planter – «Wintersteiger Plotseed S.» Seed placement depth – 4–6 cm. Preceding crop – black fallow. Accounting square of fields – 10 m2, double replication. Seeding rate – 4.5 million seeds per hectare. Grain quality was assessed according to the methods of the national standards of the Russian Federation. Such grain quality indicators as gluten content (according to GOST R 54478-2011), protein mass fraction (as required by GOST 108460-91), baking properties of flour (in a laboratory using the remix method) were determined. The article discusses the main indicators of the quality of grain and flour of winter soft wheat varieties in ecological variety testing and compares them. Analysis of the main indicators of the quality of varieties in trials showed that in the south of the Rostov region in 2014–2016 flour strength and gluten content were the most variable indicators. In terms of protein content (> 14.5 %), 8.0 % of the studied varieties were in full compliance with strong wheat standards; by the gluten content (> 28 %) – 7.0 %; by the flour strength (>280 e.a.) – 9.0 %. Five varieties of winter soft wheat: ‘Aksinya’, ‘Tanais’, ‘Asket’, ‘Nakhodka’, ‘Yumpa’ (Russia) with a complex of economically valuable traits are of greater interest for practical breeding in terms of improving grain quality.

Розглянуто вплив попередників на якість зернарізних за біологічними властивостями сортів пше-ниці м,якої озимої. Найвищі показники вмісту білкав зерні були в сортів Землячка й Володарка. Вста-новлено, що найкращими попередниками для пше-ниці озимої є горох та однорічні бобові трави.Кращі показники якості зерна отримані в сортівЗемлячка й Володарка. Вміст клейковини в зернінаведених вище сортів відповідає рівневі сильнихпшениць. Якість клейковини в зерні відповідаєдругій і третій групам. The predecessors’ influence upon the grain quality of differentsoft winter wheat varieties according to biological properties isexamined. The varieties Zemlyachka and Volodarka had highindices of protein content. It is established that pea and annuallegume glass were the best predecessors. The varietiesZemlyachka and Volodarka had the best indices of grainquality.

Наведено результати дослідження з визначенняелементів структури урожайності (кількість продукти-вних стебел на 1 м2, кількість зерен у колосі, масазерна із колоса, маса 1000 зерен) та якості зернанових сортів пшениці озимої по чорному пару. Вста-новлено вплив погодних умов на урожайність таякість зерна. Виявлено, що більшу урожайність усіхсортів було отримано в сприятливому за зволожен-ням 2013 році, меншу – в посушливому 2012 році.Найбільш урожайними були сорти Заможність іАнтонівка. У різні за погодними умовами роки найлі-пші показники якості зерна формував сорт Сонечко,а нижчі – сорт Розкішна. The results of research concerning the definition of structure units of yielding  capacity (quantity of productive stems on 1 m2, quantity of grains in an ear, mass of grain in an ear, mass of 1000 grains) and quality of grain of new varieties of winter wheat, grown on bare fallow are cited. Influence of weather conditions on yielding capacity and quality of grain is established. It is revealed that the greatest yielding capacity of all varieties has been received in 2013 year with sufficient moistening, the least - in droughty 2012 year. The varieties Zamozhnist  and Antonivka were the most productive. In years different in weather conditions the best indexes of grain quality were formed by variety of Sonechko, and low – by variety Rozkishna.

Research on improving winter common wheat varieties in the context of combining high yield and grain quality is relevant. The research aimed to evaluate and select variety samples of winter common wheat with high technological indicators of grain quality for breeding purposes. In this study, we analyzed grain from 10 variety samples of the world collection; winter wheat grain of variety ‘Aivina’ served as a standard. Soil – ordinary medium-loamy medium-thick low-humus chernozem. Wheat was grown on the experimental fields of the North Caucasus FARC in the zone with unstable moistening on bare fallow. Grain vitreousness percentage in 2019 ranged between 44.0 and 53.0 %, in 2020 – 30.5–50.0 %. In the same years, this indicator for variety-standard ‘Aivina’ was 56.0 and 48.0 %, respectively. The gluten content in the grain depended on the weather conditions and genotype. Grain of all varieties harvested in 2019, including standard ‘Aivina’, had a high gluten content (28.2–35.6 %) and corresponded to strong wheat. In 2020, the situation was absolutely different. The amount of gluten in the grain of variety samples harvested in 2020 ranged between 22.9 and 34.6 %; for ‘Aivina’, this indicator reached 26.9 %. The gluten quality in all variety samples during the years of research was typical for class 2. The variety samples were characterized by a high protein content in the grain – 16.7–20.8 % and 13.5–20.4 %; the same indicator for ‘Aivina’ was 16.7 and 15.8 %. Sedimentation rate in the variety samples was 50–81 ml and 34–64 ml; in ‘Aivina’ – 50 and 43 ml. Maximum sedimentation values were noted for the variety ‘Prestizh’. It indicates the ability to form grain, the strength of which is typical for wheat-improver. The correlation between sedimentation and gluten content (r = 0.63), as well as between sedimentation and the falling number (r = 0.73), was positive and significant during the years of research. All studied genotypes are promising for breeding new wheat varieties as sources for obtaining high-quality grain.

The study was conducted to evaluate the effect of GEI and its magnitude on the grain quality of bread wheat genotypes in Ethiopia. 15 bread wheat genotypes were evaluated using RCBD with four replications at six different locations in Ethiopia during 2017/18 cropping season. Combine Analysis of variance showed highly significant (P<0.001) differences among genotype, environment and GEI for investigated quality traits except GEI shows non-significant difference in dry gluten and gluten index. The environment contributed more than 50% only in PC (83.6%) and HLW (56.1%). The three components, G, E and GxE made almost similar contribution to most of the quality traits (WG, DG and GI), although the contribution of the environment was a little higher. Hardness index was determined mainly by the genotype (69.3%). The contribution of GxE was higher than that of genotype in all quality traits except in HDI and GI, again indicating the important role of GxE in the determination of wheat quality traits. Genotype ETBW9045 and ETBW8065 gave the best value of protein in the favorable means (15.05% and 14.75%) respectively. The Hidase had the highest value of wet gluten (58.2%) and dry gluten (24.38%) in average for all investigated locations (58.2%). GGE biplot declared ETBW9045 (#10) and ETBW8065 (#6) genotypes as stable in all quality. These two genotypes ETBW9045 (#10) and ETBW8065 (#6) are recommended for wide adaptation and for crossing. This study demonstrates success in wheat breeding for improved quality in bread wheat. The study also provides information on the combined stability of improved quality of the nationally important bread wheat genotypes. Therefore, the results of this study could be valuable for national bread wheat breeding programs to develop new varieties with high stable grain quality.
