Resistant maltodextrin (RMD) is a water-soluble and fermentable functional fiber. RMD is a satiating prebiotic, reducer of glucose and triglycerides in the blood, and promoter of good gut health, and its addition to food is increasingly frequent. Therefore, it is necessary to study its potential effects on intrinsic bioactive compounds of food and their bioaccessibility. The aim of this study was to evaluate the effect of adding RMD on the bioactive compounds of pasteurized orange juice with and without pulp, and the bioaccessibility of such compounds. RMD was added at different concentrations: 0 (control sample), 2.5%, 5%, and 7.5%. Ascorbic acid (AA) and vitamin C were analyzed using HPLC, whereas total phenols, total carotenoids (TC), and antioxidant capacity were measured using spectrophotometry. After that, sample in vitro digestibility was assessed using the standardized static in vitro digestion method. The control orange juice with pulp presented significantly higher values of bioactive compounds and antioxidant capacity than the control orange juice without pulp (p < 0.05). RMD addition before the juice pasteurization process significantly protected all bioactive compounds, namely total phenols, TC, AA, and vitamin C, as well as the antioxidant capacity (AC) (p < 0.05). Moreover, this bioactive compound protective effect was higher when higher RMD concentrations were added. However, RMD addition improved phenols and vitamin C bioaccessibility but decreased TC and AA bioaccessibility. Therefore, the AC value of samples after gastrointestinal digestion was slightly decreased by RMD addition. Moreover, orange pulp presence decreased total phenols and TC bioaccessibility but increased AA and vitamin C bioaccessibility.

The blackberry (Rubus glaucus Benth) and the bilberry (Vaccinium meridionale Swartz) are natural sources of antioxidants; they are known for their preventive role against degenerative diseases. In this study, the aromatic profile was evaluated using an electronic nose, including the antioxidant properties and the vitamin C, phenolic and anthocyanin contents during three stages of blackberry and bilberry ripening. A completely random statistical design was followed and the results presented differences in the aromatic profile: a higher anthocyanin content (1.59 mg of cyn-3-glu g-1 in the bilberry and 0.26 mg of cyn-3-glu g-1 in the blackberry) and total phenols (5.57 mg of caffeic acid g-1 bilberry and 2.68 mg caffeic acid g-1 blackberry). The behavior of the evaluated properties was independent in each of the fruits.

Abstract This article presents the results of research on the biochemical composition of green and yellowing leaves of 64-year-old bipedal ginkgo (Ginkgo biloba L.) seed and pollen trees growing in the Botanical Garden of the Academy of Sciences of Uzbekistan, introduced to Uzbekistan in the last century. Biochemical analyzes recorded the presence of 6 types of vitamins and 44 macro- and micronutrients in the leaves of the ginkgo tree. Vitamin C levels were found to be lower in the seed tree than in the pollen tree. The amount was 35.8 mg/% in the green leaves of the seed tree and 34.4 mg/% in the yellowed leaves. Ginkgo leaves contain important macro-and micronutrients such as Ca, Mg, K, Al, Fe, Cu, Mn, Zn, Mo, Co, I, Se, which are necessary for the vital activity of the human body and normal metabolism. The green leaves of the two-leafed ginkgo pollen tree contained 27577.288 mg/l of calcium, 11562.299 mg/l of potassium, the leaves of the seed tree 13912.903 mg/l of calcium and 7491.462 mg/l of potassium. At the same time, the green leaves of ginkgo contain 3073.807 mg/l – 7977.459 mg/l magnesium, 4353.72-5003.88 mg/l phosphorus, 501.073-515.343 mg/l sodium, 779.750 mg/l– the presence of silicon in the amount of 844.039 mg/l and iron in the amount of 373.023 mg/l – 655.148 mg/l was determined.

The article presents data on the study of the effect of foliar water-soluble mineral fertilizer NOVATEK Solub K-Max 10-5-30 on the biochemical composition and commercial quality of apple fruits. A rise in vitamin C from the introduction of NOVATEK at a rate of 2.5 kg/ha indicates the effectiveness of this drug for optimizing the content of ascorbic acid in fruits. An increase in the content of monosaccharides and a decrease in disaccharides were found for all the studied rates of consumption of agrochemicals. The use of mineral fertilizer “Novatek Solub K-Max” contributed to increase the dry weight of fruits. The application of this mineral fertilizer is recommended for inclusion in the industry regulations for Apple cultivation as one of the elements of the technology.

Tomatoes are one of the most consumed vegetables in the world. Unfortunately, obtaining a high quality tomato yield in our latitudes is inconceivable without additional lighting. Changes in biochemical composition are mainly dependent on the light received by the plant. During the winter months, natural daylight at 55 ° latitude is insufficient to provide the necessary vegetation for fruit-bearing vegetables. The aim of this study is to investigate the changes in the biochemical composition of tomato fruits by using less conventional lighting methods, which could offer potential energy savings by providing higher levels of biologically active substances in tomatoes. The study was conducted in a greenhouse of Latvia University of Life Sciences and Technologies during the winter season 2018-2019, using a 16-hour photoperiod. LED, Induction, and High Pressure Sodium Lamps (as control) were used in the study. These lighting devices, with some differences, simulate daylight. Three tomato cultivars: ‘Diamont F1’, Encor F1’and ‘Balzano F1’were studied. The study specified the tomato yield and the following biochemical parameters: soluble sugars (BRIX), vitamin C, organic acids, lycopene, carotenoids, phenols and flavonoids. As expected, the yield and species-specific pigment content of tomato fruit is largely dependent on the genetics of the variety. On the other hand, biologically active compounds such as organic acids, soluble sugars, ascorbic acid and flavonoids undergo more changes due to the composition of the light. The obtained biochemical parameters give an opportunity to consider different illumination methods and the need to carry out further studies in order to confirm the conclusions. Significantly higher yields were observed in the variant with conventionally used high pressure sodium lamps. In mean time, it should be noted that in the variant with LED lamps, higher content of lycopene as well as phenols and vitamin C were observed.

Maclura tinctoria(L.) D. Don ex Steud. has one of the highest qualities among the coefficients for Brazilian woods (up to 9.6) and resistance rates equivalent to Indian teak (Tectona grandis). In this study, the macromolecular constituents and total phenols compounds as well as the antioxidant and antibacterial activities of this wood were evaluated. Total phenols and proanthocyanidin levels were higher in wood when compared with bark levels. The antioxidant activity of wood extracts (IC50= 18.7 μg/mL) was more effective than that of bark extracts (IC50= 20.9 μg/mL). Wood and bark extracts revealed a high potential for inhibition of aerobic and anaerobic bacteria. The bark extracts were the most active (MIC from 20 to 60 μg/mL). Both antioxidant activity and high potential for bacteria inhibition turn these extracts promising for drug formulations, especially as antibacterial agent.

Abstract Tomatoes are the main vegetable crops in open and protected ground. Currently, a huge number of varieties and hybrids have been created for industrial and amateur vegetable growing, which differ in the type of bush, yield, early maturity, marketability, disease resistance, color, shape, size, mechanical strength, and biochemical composition of fruits (content of dry substances, sugars, vitamins, mineral salts, organic acids and other vital ingredients). Therefore, not all varieties are equally suitable for processing into functional food products. The article considers the assortment of tomatoes for open ground by yield, marketable qualities and the main indicators of the biochemical composition of the fruit: acidity, dry matter content, sugars, vitamin C, the accumulation of nitrates in the fruit, as well as by taste. As a result of a comprehensive assessment of 9 varieties of tomatoes, the varieties Nepryadva, Belkhavsky and Pulsar were identified, which have high yield, marketability, taste qualities of fruits, vitamin value and suitability for processing into functional products. In breeding for use as sources, the main economically valuable traits are of interest: yield and marketability of fruits – Belkowski, Nepryadva, Pulsar, the size of the fruit – Belkowski, Pulsar; the content of dry substances Belkovsky, Bui-Tur, Nepryadva, Pulsar; vitamin C – Belkowski, Bui-Tur, Pulsar; on the accumulation of nitrate – Nepryadva, Shuttle, Beljavsky, Kulon; taste – Belkowski, Nepryadva, Bui-Tur, Pulsar, Yakhont.

Aims: To investigate the presence of selected antioxidant and anti-nutrient and pollen profile of four honey samples from the southern guinea savanna vegetation of Nigeria. Study Design: Purposive sampling method was used in selecting the study areas for the honey samples Place and Duration of Study: The study was done in the Department of Plant Science and Biotechnology, University of Nigeria, Nsukka, between June to October, 2019. Methodology: The analyzed antioxidants (flavonoids, total phenols, vitamin C and alkaloids) and anti-nutrient (phytate and oxalate) were subjected to standard chemical treatment in four replicates.  The stock samples of the honeys were thoroughly shaken and 10g collected from each sample for pollen analysis. Each sample was dissolved in acidified warm (40°C) water, centrifuged at 2000 rpm and the residues collected. Subsequently, they passed through standard acetolysis treatment. The polliniferous deposits were put in specimen bottles containing glycerol-alcohol. Routine pollen counts and identification were done at x400 magnifications. The pollen counts were presented as percentage values, while results obtained from the chemical analyses were subjected to analysis of variance and mean separation test using Duncan’s New Multiple Range Test at P=.05. Results: All the selected antioxidants (flavonoids, total phenols, vitamin C and alkaloids) and anti-nutrients (phytate and oxalate) analyzed were detected in variable quantities in the samples. The honeys were acidic having pH range within acceptable internationally standard. Eighty-two pollen types (39 families) were recorded and composed of nectariferous (90.2%) and non-nectariferous (9.8%) plants. All the honey samples were polyfloral and the most common pollen types occurring across the samples were Elaeis guineensis, Asteraceae and Phyllanthus muellerianus. Conclusion: The honey samples were acidic and contained the selected antioxidants and anti-nutrients parameters in variable quantities. The honey samples were polyfloral with a high number of nectariferous and few non-nectariferous honey plants.

The effects of long-term freezer storage and different defrosting methods on the retention of glucosinolates, vitamin C, and total phenols in frozen broccoli florets were investigated in the present study. Frozen broccoli florets were stored in a freezer at −20 °C for 165 days or subjected to defrosting by three different house-hold thawing methods (water, air, and refrigerator defrosting). Results showed that all glucosinolates were well preserved, while vitamin C and total phenols were reduced by less than 12% and 19% of the control, respectively, during the storage. Besides, refrigerator and air defrosting were better than water defrosting in glucosinolates retention, and refrigerator defrosting was the best in vitamin C preservation. No difference was observed in reserving phenolic compounds among the three methods. In conclusion, long-term freezer storage is an excellent way to preserve broccoli florets, and refrigerator defrosting is the best way to maintain the nutritional compounds in frozen broccoli florets.


This work includes the determination of moisture, ash and some antioxidants (namely, total phenols flavonoids and ascorbic acid (vitamin C)) in onion (plumps, leaves), radish (roots, leaves), and snake cucumber (fruits) located in Harran Dian, Thalab and Eber Lasloom sites in Delta Tuban, Lahij Governorate/Yemen. Antioxidants were analyzed by Uv-Vis spectrophotometer. The results showed significant differences in the studied vegetables. The content of total phenols ranged between 42.79 to 79.69 ppm in the dried samples while the values of flavonoids in the dried samples were found to be within the range (46.33-100.35 ppm). The analysis of ascorbic acid gave values between 10.51-32.56 ppm for the fresh samples.
