A biologically active extract from the darkling beetle Ulomoides dermestoides was obtained using the electro-pulse plasma dynamic extraction method. The beetle water extract contained a complex of antioxidant substances such as antioxidant enzymes and nonprotein antioxidants, as well as a complex of heat shock antistress proteins. This determines the rather high antioxidant activity of the aqueous extract of the beetle, i.e., 1 mg of dry matter/mL of the extract has an equivalent antioxidant activity to 0.2 mM Trolox (a water-soluble analog of vitamin E). It was shown that the beetle extract can lead to a 25–30% increase in the average lifespan of nematode Caenorhabditiselegans, under normal conditions, and a 12–17% increase under conditions of oxidative stress (with paraquat), and significantly inhibits the fructosylation reaction of serum albumin. Therefore, the beetle aqueous extract shows promise as a biologically active complex exhibiting antioxidant activity.

Bulgaria became the leading producer of lavender oil in the last years. Due to the lower quantity of essential oil large amounts of waste were generated which distilleries usually discard, although the residues are rich source of biologically active substances. The objective of this study was to obtain polyphenol-rich extracts from lavender waste and to investigate their chemical composition and antioxidant capacity. Two wastes (Mirkovo, Bulgaria, 2016) were investigated – steam distilled (SD-L) and CO2-extracted lavender (CO2-L). The major aroma constituents found were linalool and linalyl acetate – 30.68% and 25.82%, respectively, and the highest concentrations were found in the SD-L. The total flavonoids in CO2-L and SD-L were 2.91±0.11 and 3.72±0.20 mg/g dry matter residue, respectively. The higher amount of phenolic acids was observed in the SD-L waste – 2.62±0.19 mg/g, compared to 1.39±0.14 mg/g dry matter residue for CO2 extracted lavender. The antioxidant activity of the extracts was investigated by DPPH (SD-L – 355.48±23.12 µmol TE/g DW waste; CO2-L – 283.21±17.04 µmol TE/g DW waste) and FRAP (SD-L – 427.36±26.54 µmol TE/g DW waste; CO2-L – 311.29±18.17 µmol TE/g DW waste). Both methods suggested that SD-L residue had higher antioxidant capacity and polyphenol content.The lavender wastes (SD-L and CO2-L) showed strong antioxidant capacity with potential beneficial effect on addition in foodstuffs. For the first time lavender residues from CO2-extraction was investigated for its antioxidant activity, polyphenol composition and aroma metabolites, and comparison with SD-L was performed. In general, the results suggested that the lavender waste were promising source of antioxidants.

Goji (Lycium barbarum L.) leaves and fruits have been described as a valuable source of bioactive compounds with a great potential for the development of health-promoting formulations. The present study aimed to evaluate the potential of a sustainable process for the recovery of phenolic compounds from Goji leaves through a combination of aqueous extraction and membrane-based operations. Water was used as a safe, cheap, and non-hazardous extraction solvent, and parameters of extraction of dried Goji leaves were optimized in order to maximize the yield of polyphenols, total soluble solids (TSS), and total antioxidants simultaneously. The aqueous extract was clarified by ultrafiltration and then processed with three flat-sheet polyethersulphone (PES) membranes with molecular weight cut-off (MWCO) values in the range of 0.3–4.0 kDa, in order to remove sugar compounds from polyphenols and improve the antioxidant activity of the produced fractions. Among the selected membranes, a 1 kDa membrane exhibited the best performance in terms of purification of polyphenols from the clarified aqueous extract. The rejection by this membrane of TSS and total carbohydrates was in the range of 15.8–25.3%, and was decreased by increasing the volume reduction factor (VRF). On the other hand, the retention values for total polyphenols and total antioxidant activity (TAA) were in the range of 73–80%, and were increased by increasing the VRF.

Siberian pine is a source of a wide range of biologically active substances for use as biopesticides and growth stimulators in organic farming. Ten components, among which the share of abietic acid reached 54.8%, have been determined with the help of the gas chromatography/mass spectrometry method. Water-soluble potassium salts of terpene acids were obtained from Siberian pine resin during the work. Potassium salts of terpene acids from Siberian pine resin has bacteriostatic, fungistatic, bactericidal, and fungicidal properties against phytopathogens. Relatively high indicators of antioxidant activity of aqueous solutions of potassium salts from resin at 1 mg/mL were revealed. Pre-planting treatment of tubers with an aqueous solution of terpene acids salts of Siberian pine resin in a concentration of 10 g/L contributed to an increase in the yield of potato. Also, an increase in the mass fraction of dry matter and starch was also observed.

The antioxidant properties of fruits, flowers, leaves, bark (or stem) of elderberry (Sambucus nigra L.), red elderberry (Sambucus racemosa L.) and dwarf elder (Sambucus ebulus L.) were investigated. The total content of anthocyanins and total phenolic compounds content by using of Folin-Ciocalteu assay were determined spectrophotometrically. The total content of water-soluble antioxidants was investigated by amperometric method. The antioxidant activity (AOA) of plant extracts was measured using DPPH (1,1-diphenyl-2-picrylhydrazyl) radical, ABTS (2,2’azinobis(3)ethylbenzthiazoline-6- sulfonic acid) radical and FRAP (ferric reducing antioxidant power) assays. It was established that the fruits of plants of the genus Sambucus L. were characterized by the maximum level of all studied antioxidants. High content of anthocyanins and phenolic compounds was determined in the leaves of elderberry and dwarf elder. The flowers of these elderberry species were distinguished by a high total content of water-soluble antioxidants. The highest antioxidant activity was observed in fruits extracts in comparison with other parts of the plant. Higher antioxidant activity was identified in the extract of the fruits of elderberry and dwarf elder than of the red elderberry fruits. The most optimal method for evaluating the antioxidant activity of elder extracts was the FRAP assay, which showed the highest correlation between AOA and individual antioxidant components, compared to DPPH and ABTS assays. Comparative analysis of antioxidant content and antioxidant activity of various plant parts of three elderberry species showed that the most promising sources of biologically active substances with antioxidant properties are fruits and flowers of elderberry and dwarf elder.

In this study, antioxidant-rich eggplant peel extract was used to obtain a value-added pastry cream. In order to reduce the susceptibility to degradation, microencapsulation of the biologically active compounds from the eggplant peel was first performed. The microencapsulated bioactive compounds powder (MBC) obtained through freeze-drying retained about 94.31% of the anthocyanins present in the extract, was rich in phenolic compounds, and displayed a high antioxidant activity. The purple colored powder was added to the pastry cream in different concentrations (5% and 10%), allowing significant increase of total phenolic content and antioxidant activity, which were rather stable over 72 h of storage under refrigeration conditions. Sensory evaluation indicated that addition of MBC resulted in improved color and overall acceptability of the pastry cream formulation. All pastry cream samples exhibited rheological behavior specific to the weak gel-like structures, with increasing values of storage modulus with MBC addition. The instrumental texture analysis showed that MBC addition to the pastry cream slightly decreased the firmness and improved the chewiness of the samples.

Anthocyanins are biologically active water-soluble plant pigments that are responsible for blue, purple, and red colors in various plant parts—especially in fruits and blooms. Anthocyanins have attracted attention as natural food colorants to be used in yogurts, juices, marmalades, and bakery products. Numerous studies have also indicated the beneficial health effects of anthocyanins and their metabolites on human or animal organisms, including free-radical scavenging and antioxidant activity. Thus, our aim was to review the current knowledge about anthocyanin occurrence in plants, their stability during processing, and also the bioavailability and protective effects related to the antioxidant activity of anthocyanins in human and animal brains, hearts, livers, and kidneys.

Tomatoes are reported to be the most consumed and processed food in the world. The correlation has been specified between the tomato food consumption expansion and reduction in the risk of certain diseases, including cancer. Researchers from across the globe concentrate on tomato and processing technologies to ensure preservation of its physical, chemical and biological properties. A range of researches have been held to analyze capacities to use tomato components known for high antioxidant activity as potential biologically active compounds. Commonly, such studies concentrate on ripen red tomatoes, though works may be defined that studied green, yellow and orange fruits. There is evidence on correlation between qualitative and quantitative fruit properties and agricultural technologies and tomato varieties used. Bio-fertilizers consisting of microorganisms, defining the plant microbiome, favorably work on quality improvement of agrocultural plants, including tomatoes. Limited irrigation, illumination and other conditions that cause internal plant stress and provoke numerous protective reactions result in mixed findings, where the yield depends on other factors (grade, climate, fertilizers, etc.). Tomato derived products are rich in antioxidant substances the same as waste products. A variety of works focused to study processing techniques and their impact on the tomato quality characteristics. Traditionally, thermal effect decreases the activity of various antioxidant compounds, but makes them more digestible when consumed. The UV exposure used for long to inhibit pathogens on surface of fruits and berries, that cause the spoilage during the storage period, showed its potential to increase the antioxidant activity of fruit and vegetable products as they ripen

The antioxidant activity and polysaccharide composition of seaweed is influenced by species (red, green and brown seaweed), geographical conditions, extraction methods, solvents, temperature and the length of time of extraction. The purpose of this study was to known the total polysaccharide and antioxidant activity in red, green and brown seaweed extracts from Jangkar Situbondo beach. Method. The study was conducted on red, green and brown seaweed extracted with ethanol and water to determine total polysaccharides. Antioxidant analysis uses the method 2,2-diphenyl1-picrylhydrazyl (DPPH) radical. Total polysaccharide and antioxidant activity were observed statistically using two-way ANOVA. The results of this study show that the polysaccharide content in seaweed water extract was significantly higher than ethanol extract, especially in brown seaweed. Seaweed water extracts showed higher antioxidant activity than ethanol extracts. The antioxidant activity of brown seaweed was significantly higher than that of green and red seaweed. Conclusion. Seaweeds have high antioxidant activity in water extracts. Brown seaweed water extract contains high polysaccharides than green and red seaweed. Antioxidant activity in brown seaweed is also higher than in green and red seaweed.

In this study, it was aimed to determine some quality properties of Erzincan mulberry pekmez (molasses) produced with traditional method. For this purpose, various physicochemical properties and antioxidant activity were determined on ten mulberry molasses samples traditionally produced in 2018 and 2019. In the pekmez samples pH 4.86-5.17, titratable acidity 0.53-0.85%, total dry matter 71.91-84.07%, water soluble dry matter 70.60-83.80%, total ash 1.44-3.47%, protein 1.47-3.19%, water activity 0.59-0.75, 5-hydroxymethyl furfural (HMF) 5.70-72.62 mg/kg, total sugar 64.04-71.40%, invert sugar 40.46-56.15%, sucrose 7.76-26.59%, calorie 262.01-294.54 kcal/100 g, viscosity 745-15275 cP, L* value 19.19-32.64, a* value 5.68-17.53, b* value 2.46-9.01, H° value 15.78-52.10 and C* value were detected in the range of 8.74-19.72. Total phenolic content (TFM), 1,1diphenyl-2picyrlhydrazyl (DPPH) antioxidant activity and % inhibition values were found to be in the range of 3.92-10.05 mg GAE/g, 1.31-6.25 mg TE/g and 7.96-30.69%, respectively. According to the results, in general the pekmez samples were found to have quite high nutritional values, to be a good source of antioxidants and TPC, and the amount of HMF remained quite below the limits reported in the TS 12001 Standard (Made From Mulberry). Consequently, it was revealed that molasses which have natural, high nutritional values and health beneficial can be produced with the traditional production technique in Erzincan region. It is thought that these research results will contribute to the importance, promotion, appreciation and protection of Erzincan traditional mulberry pekmez.

The aim of this study was to examine the antioxidant activity of water extracts from fig leaf. Water extracts were prepared according to traditional medicine. The antioxidant activity of the extracts was spectrophotometrically determined. Using the potassium permanganate colorimetric method it was found that the water extract that was maintained at the refrigerator had lower antioxidant activity than extract that was maintained at the room temperature.
