The article presents the results of studying the impact of the spore-forming probiotic “Olin” and the prebiotic “Eсofiltrum” on the meat quality of broiler chicken carcasses of the Ross-308 cross. In the course of the research, it has been found that the inclusion of these preparations in the broiler diet has a positive effect on the studied indicators: the pre-slaughter weight increased by 4.3-5.7%, the weight of the gutted carcass by 4.6-6.2%, the muscle weight 4.8-6.5%, the weight of the loin muscles by 5.7-8.2%. The ratio of edible parts to inedible parts is 4.14 in the third experimental group, 4.08-in the second, and 4.04-in the control. Based on the results of the anatomical cutting of broiler carcasses and according to the fatness indicators the poultry carcasses of the third and second experimental groups, 87.5% and 87.2%, respectively, belong to the first grade, and the yield of the first grade carcasses is 86.2% in the control group. Meat products obtained from both the control poultry and the poultry of both experimental groups has no off-aroma odor and taste, the meat is juicy, tender and aromatic. The products obtained from broiler chickens, whose ration includes the probiotic “Olin” and the prebiotic “Ecofiltrum”, do not have any deviations from the established standards and norms. During the research, it has been found that the use of the studied drugs has a positive effect on the meat quality of poultry carcasses. However, broiler chickens receiving the probiotic “Olin” has more pronounced meat qualities.

The aim of the study is to increase the productive qualities of broiler chickens by including ultrafine silicon oxide into main diet. During the experiment, the biological effect of ultrafine silicon oxide on broiler chickens was estab-lished. Use of ultrafine SiO2 particles for poultry feeding contributed to an increase in the number of red blood cells and content of total protein and albumins. By the end of the experiment, the number of red blood cells in birds in-creased by 17.43% (P≤0.001) – in the blood of birds of the first experimental group, 16.51% (P≤0.01) – the second one, 20.80% (P≤0.001) – the third experimental and 21.71% (P≤0.001) – the fourth experimental group, compared with the indicator of the control group. The amount of total protein in blood serum of chickens of the first and the second experimental groups increased by 1.36-1.39 %, in the third and fourth ones there was a significant (P≤0.05) increase by 5.45 and 3.05%, respectively. The blood glucose content of chickens in the experimental groups is higher by 8.04-23.65% compared to this indicator with ones in the control group. During the experiment feed con-sumption per 1 kg gain of live weight decreased: in the first experimental group by 3.00 % in the second by – 0.50 %, the third – 6.00 % the fourth– by 4.50 %, compared to this with the control group. The chicken’s vibrancy of the first the experimental group was higher by 4.77 %, the second – by 6.20 %, the third – by 19.25 % and the fourth– by 11.59% than in the control one. Consequently, when converting the feed energy into the body energy of a broiler chicken, the energy conversion coefficient of the experimental group of poultry is higher than that of the control one by 7.16-21.76 %. Thus, the most optimal dose for further research was determined.

The aim of research was to recognize the impact of simultaneous e-practical presentations strategy in learning some basic codes for the first average grade students the importance of searching for the use of practical presentations in learning some basic skills of the codes of the mediterranean first grade students. in finding solutions, the use of traditional methods in teaching has led to lack of students' teaching association with their educational environment to focus on cognitive aspects as well as its reflection on the skill side, so the researcher is necessary to promote the teaching strategy to reach a better level in learning, and for the purpose of knowing this effect multiple teaching strategy for better learning. the third section used the experimental approach to a sample of medium students of the virginity for boys. 15 (15) students represented in one trial group. the fourth section has been presented and discussed by using a number of statistical means. the fifth section has been concluded through the findings of the researcher reached the following conclusions: v for the presentations in which a number of students participated with the teacher positive effect in teaching some basic football skills. v the use of simultaneous electronic practical presentations strategy is an interactive environment which has affected the outputs of the lesson and thus reflected the learning of the skills of the ball through conclusions recommend the researcher palaty: v the need to use synchronized e-practice strategy with other unused skills v enhanced experience of simultaneous e-business strategy for different samples and other seminars.

The paper presents requirements to high-quality beef in terms of its general view, biochemical composition, taste and nutritional properties. The parameters which determine the taste, aroma, juiciness, tenderness of meat, as well as the strength and richness of the broth are given. Quality of beef obtained from animals of different beef breeds and their hybrids was assessed. Meat quality of the Hereford breed is higher than that of other most common breeds by the main parameters. The effect of the cow class on the meatproductivity of the young Hereford bulls was experimentally established. They were superior to animals of the control group in pre-slaughter weight by 25 kg (6.4%), slaughter weight - by 15.4 kg (7.5%), relative mass of flesh - by 7.8 kg, half-carcass weight - by 8.1 kg (7.6%). At the age of 20 months Hereford x Simmental steers of the 1st generation and heifers of the 3rd generation were characterized by high quality meat. Depending on housing conditions (with an area of 3.5 m 2 per head), the Kazakh-white-headed x Simmental steers of the 1st generation were in the lead in terms of meat quality. When fattened at the site, the Kazakh-white-headed x young Simmental bulls and heifers of the 1st generation were superior. The positive effect of semen production of Australian stud bulls on meat marbling of Siberian analogues (6 points) was experimentally proven. A new accelerated method of taking a sample of meat for research is described. In this method probes are taken from four easily accessible large muscles: m. supraspinatus, longissimus dorsi, m. iliopsoas (fillet), m. semimembranosus. Their biochemical composition is determined, after which the quality composition of carcass flesh is defined by a special formula with allowance for correction factors.

According to modern classification of trace elements, which is based on their biological significance for living organisms, selenium is classified as a group of vital or biogenic elements. As a biotic element, it has unique physico-chemical and biochemical properties and, with adequate intake into the body of farm animals and poultry has a positive effect on a number of physiological processes. The discovery of biological properties of selenium became the basis for its use first in the prevention and treatment of many diseases associated with a deficiency of this trace element, and later – as a stimulator of growth and development of young animals, as well as in order to increase egg production, poultry safety, improve the incubation characteristics of eggs and several other productive qualities. Scientists who have studied the effects of selenium on poultry have paid relatively little attention to meat quality. The effect of additives of different selenium doses in compound feed on the chemical composition, energy and biological value of Ukrainian white breed ducklings’ meat was studied in the scientific and economic experiment. Four groups of ducklings with 100 heads in each groups were formed to conduct the scientific and economic experiment. The duration of the experiment was 56 days and corresponded to the period of raising ducklings for meat. The ducklings of the first control group did not receive selenium supplementation. Selenium was additionally introduced into compound feed for poultry of the experimental groups in the following amount, mg/kg: the second group – 0.2; the third – 0.4 and the fourth – 0.6. It was established that the introduction of selenium into compound feed in the studied dose did not significantly affect to the quality of ducklings’ meat, although it had a positive effect on some indicators that characterize its chemical composition, nutritional and biological value. Among the experimental groups, ducklings of the third and fourth groups, which were injected with selenium into compound feed at the rate of 0.4 and 0.6 mg/kg, stood out in terms of meat quality.

The studies aimed to evaluate the impact of milk thistle seeds in broiler chicken feed rations on rearing results, carcass composition and meat quality. The experiment involved 120 broiler chickens randomly allocated to three equinumerous groups (C, MT02, MT23). Each group was divided into five subgroups of eight chickens each. Over the first 21 days of life the birds were fed starter rations, and over the following 21 days received grower rations. Chicken starter/grower diets in groups MT02 and MT23 were supplemented with ground seeds of milk thistle in the amount of 0/2% (MT02) and 2/3% (MT23). It was demonstrated that Silybum marianum added to feed rations over the whole rearing period (group MT23) increased above 3% the birds’ body weight on rearing day 42. (p < 0.05) and decreased about 7% the feed conversion ratio (p < 0.05) in comparison to group C. No effect of feeding on the carcass composition was observed, including on muscularity and fattening grade, although diets containing milk thistle reduced (by 15% and 19% in group MT02 and MT23, respectively) the content of crude fat in chicken leg muscles (p < 0.05). The highest (p < 0.05) content of polyunsaturated fatty acids (PUFA) was determined in the breast (38.06%) and leg (37.63%) muscles of chicken receiving feed rations containing Silybum marianum throughout the rearing period. No effect of nutrition on the evaluated physical properties of muscles was observed, except on the decrease in lightness color (L*) and increase in values a* and C as well as a decrease of water holding capacity of the breast muscles. It was found that Silybum marianum in chicken diets had a positive effect on the evaluated meat flavor characteristics of the muscles. To sum up, based on the study results, including ground seeds of milk thistle in broiler chickens nutrition can be recommended in the amount of 2/3% in starter/grower diets, respectively.

The article presents results of the studies on chemical composition of femoral, pectoral muscles and liver of broiler chickens of Ross 308 cross when using “Zaslon 2+”additional nutrition complex to reduce the impact of toxins in the feed, since meat and liver quality of broilers is mainly determined by the content of protein and fat, the value of the resulting product depends these parametres. The tasks of the study included: specification of moisture, dry matter, protein, fat and leach in the muscles and liver of chickens. Broiler chickens of Ross 308 cross, which were raised up to 38 days were the object of the research. Two groups of 1-day old chickens were formed, 1000 heads in each, without gender division. The control group received the main diet, as for the experimental group, the main ration and a complex of additional nutrition were used at the dose of 0.5 kg per 1 ton of compound feed to reduce the effect of toxins in the feed. On the 14th, 21st and 38th days of the study, a control slaughter of chickens was carried out in order to study the chemical composition of bird muscles and liver. There was a decrease in the amount of moisture with an increase of dry matter, crude leach and protein, while the amount of fat in broiler chickens of the experimental group, where there was the main diet and “Zaslon 2+” deceased in comparison with the control group where only the main diet was used. It indicated positive influence of the studied feed additive of complex action on chemical composition of the muscle tissue and liver of broilers and improvement of dietary properties of the products

It is assumed that the combined effect of an effective probiotic and feed bentonites will enhance their positive effect on the growth, development, immunity of poultry, the quality of products, economic results of production. The purpose of the research was to study the effectiveness of the probiotic Vetkor and trace elements contained in bentonites in the compound feed of broiler chickens. Scientific and economic experiment has been carried out in the company “Uksyansky broiler” on broiler chickens cross “Smena-4”, which have been distributed in 3 groups on the principle of analogues. For each group 50 heads have been selected one day-old chickens. The conditions for rearing and housing the chickens were the same. The joint use of bentonite and probiotic in rearing and fattening broiler chickens have been studied. At the beginning of rearing the weight of chickens in all groups was almost the same and averaged 39,6 g. However, with increasing age of chickens not only their live weight increased, but also the difference between groups for this indicator. So, at the age of 7 days the chickens of the 1st experimental group had live weight higher than the control ones by 1,86 %, and the chickens of the 2nd experimental group by 2,00 %. The live weight of the broiler chickens of the control group at the end of rearing (age 42 days) was less than the live weight of the 1st broiler chickens of the experimental group by 101,14 g or 5,23 % (P < 0,05), and the 2nd experimental group by 132,14 g or 6,83 % (P < 0,01). The total and average daily increase in live weight of chickens of the 1st experimental group was greater by 5,34 % (P < 0,05), and the 2nd experimental group by 6,96 % (P < 0,05) than in the control group. Broiler chickens that consumed the probiotic Vetkor in the compound feed had higher growth energy than in the control. Against this background the best growth has been observed in broiler chickens of the 2nd experimental group who consumed compound feed with the addition of Vetkor and 3 % bentonite. It has been experimentally justified the use of probiotic and bentonite in the industrial production of meat of broiler chickens, it has been established a positive effect of probiotics and bentonite on the growth and development of broiler chickens, the quality of the resulting products.

Abstract. The purpose of the research is to study the effect of a probiotic supplement on the productivity of broiler chickens of the fast-growing Cobb 500 cross and the quality of poultry meat. Research methods. To study the parameters of meat productivity of broiler chickens, slaughter and anatomical cutting of poultry carcasses were carried out, the morphological composition of individual parts of carcasses was evaluated, the chemical composition of poultry meat was analyzed by determining moisture (GOST 9793-74), fat (GOST 23042-86), protein (GOST 25011-81), the level of essential amino acids (capillary electrophoresis method), organoleptic parameters of poultry meat and broth were studied. Research results. It was found that the introduction of a fodder additive into the poultry diet contributes to the improvement of meat characteristics of the Cobb 500 cross, improves the quality properties of poultry meat, as well as the bio-value of poultry meat products. When studying meat productivity, it was revealed that in experimental groups the mass of the gutted carcass was higher than in the control by 1.45.3 %, the slaughter yield was higher by 0.31.4 %, the mass of all breast tissues of broiler chickens of experimental groups exceeded this indicator in the control by 1.78.2 %, the mass of all femoral tissues was higher by 2.07.8 %, and the mass of all shin tissues by 1.56.8 %. The results of the chemical analysis of muscles of broiler chickens showed that the protein content was higher in experimental groups compared to the control group by 0.180.60 %, with a decrease in fat by 0.060.16 %, and there was also a decrease in meat quality index in all experimental groups by 4.510.5 %. A positive statistically significant difference was revealed when analyzing the amino acid score in the muscles of birds of experimental groups compared with the control group. The organoleptic evaluation of boiled broiler chicken meat and broth from them in experimental groups showed superiority over the poultry meat of the control group and averaged 4.9 versus 4.8 points. Scientific novelty. For the first time, the meat productivity and meat quality of broiler chickens were evaluated when using a microbial additive based on autochthonous microorganisms of the genus Lactobacillus isolated from the contents of the gastrointestinal tract of wild quails in their diet.

This study aimed to compare the effect of Zn, Cu and Fe glycine chelates on the proximate composition, cholesterol levels, fatty-acid profile and dietary value of the thigh meat of broiler chickens. The experiment involved three hundred and fifty Ross 308 chickens divided into seven groups. The chickens were administered Zn, Cu and Fe glycine chelates in an amount corresponding to 50% of the requirement or 25% of the requirement for 42 days. It was found that the use of Zn, Cu and Fe glycine chelates did affect the fatty acid profile and dietary value of meat. A positive impact was most frequently (p < 0.05) noted in chickens receiving Zn chelate in an amount covering 50% of the requirement: the lowest levels of SFA and atherogenic and thrombogenic indices, the highest content of PUFA n–3 and PUFA/SFA ratios and hypocholesterolemic/hypercholesterolemic indices. Positive effects were more often recorded for chickens receiving Zn in an amount corresponding to 50% of the requirement. The results did not show that the use of Cu and Fe glycine chelates can reduce the dietary value of thigh meat in broiler chickens since, generally, the outcomes were not worse than those in the control group. It should be highlighted that due to ambiguous results, it is impossible to determine a dose of Cu and Fe glycine chelate which would be more efficient for broiler chickens. However, chickens receiving chelates in amounts corresponding to 25% of the requirement showed far better results.
