Many component contained in the plants we usually eat are characterized by antioxidant properties, for example polyphenols effectively neutralize free radicals and other reactive oxygen species. The antioxidant potential of some herbal plants is many times higher than that of fruits and vegetables and therefore there has been a growing interest in the active substances contained therein. An improper diet, such as the one rich in lipids, adversely affects the level of free radicals in the body; so it is very important to choose to eat foods with a high antioxidant potential. The oxidation reactions that occur in food products have a detrimental impact on their nutritional value and sensory properties, such as taste, smell, color and texture. Antioxidants added to food can effectively counteract those changes, therefore there are sought natural food ingredients with antioxidant properties to replace synthetic antioxidants, such as BHA, BHT, which are often used in food. Some herbal spices have an anti-inflammatory and antibacterial effect. Moreover, they can stimulate appetite, increase the secretion of digestive juices and improve the absorption of nutrients. A diet enriched with suitable herbs or preparations obtained from them, mainly owing to the antioxidants contained therein, improves the functioning of the organism and prevents the development of certain diseases, such as cancer or atherosclerosis of blood vessels.

Vitamin C is one of the nutrients that act as antioxidants and effectively overcome free radicals that can damage cells or tissues, including protecting the lens from oxidative damage caused by radiation. Vitamin C is widely found in fruits, and vegetables, one of them in chili. Vitamin C in chili has a function as a good antioxidant for the body (able to increase the immune system absorbed by calcium in the body. This study aims to determine the levels of vitamin C contained in some types of chili using UV-Vis spectrophotometry method and conduct a preliminary test. The highest levels of vitamin C obtained by using spectrophotometric method at 200 nm wavelength were on red curly pepper (50 g/100 g) and followed by chili jablay orange-red (38 g/100 g), green cayenne (29 g/100 g), red pepper large (22 g/100 g), and large green chili (9 g/100 g). While based on preliminary test it was found that all chilies contain saponins, as well as only large red pepper (sample 1) and red curly pepper (sample 4) containing flavonoids Keywords: capsicum, chilly, spectrophotometry


Human activities at this time tend to use substances that are pollutants and have an impact on health. Pollutants can enter the body through the process of respiration and will disrupt the organ function. Substances that are often used in daily life and potentially as pollutants are hairspray. They contain vinyl acetate and methacrylate complex polymers. Cocamide DEA surfactants in hairspray can cause cancer and produce toxins. The use of hairspray continuously will cause organ damage due to the emergence of secondary metabolites and free radicals. The diagnosis of organ damage in the latest research from various scientists is to utilize the electrical characteristics of the organ. The bioelectric characteristic that can be observed is dielectric constant. Based on the impact of organ damage and suspected changes in organ electrical properties due to exposure to pollutants, a study needs to be conducted to observe changes in the resistivity and dielectric constant in organ tissue in mice exposed to hairspray with cocamide DEA surfactant content. The results showed that the more concentration of exposure given causes increasing the level of damage to the organs. The increasing level of damage is very significant in the changing of the resistivity and dielectric constant value of mice organs. The changing of electrical properties of mice organs is possible due to damage to organ cells caused by increasing reactive oxygen species and free radicals due to oxidation reactions resulting from the interaction of cocamide DEA with cell components.

Antioxidants are compounds that can inhibit oxidation reactions by binding to free radicals and highly reactive molecules. One form of reactive oxygen compounds is free radicals, these compounds are formed in the body and are triggered by various factors. Noni fruits have been used by the community as a medicine for high blood pressure, beriberi, urinating, inflammation of bile, inflammation of the intestine, dysentery, constipation, spleen pain, liver pain, diabetes and lumbago. Nevertheless, research on the identification of the active compounds of noni fruit which act as antioxidants yet. This study aims to extract and fractionation of Noni fruit, determine the antioxidant activity of Noni fruit extract, and identify the types of bioactive compounds that act as antioxidants. Noni fruit was extracted used maceration technique with 96% ethanol and then fractionated using n-hexane, chloroform and ethyl acetate solvents. Antioxidant activity from the results of noni fruit fractionation was measured by the DPPH (1.1 diphenyl-2-picrylhydrachyl) method and identification of bioactive compounds was carried out by GCMS. The results showed the greatest antioxidant activity was found in chloroform fraction with a percentage of inhibition of 78.19%. For the first time this study revealed the types of bioactive compounds from noni fruit ethyl acetate fraction which act as antioxidants are n-hexadecanoic acid, squalene, pyridin-3-carboxamide, oxime, n- (2-trifluoro methyl phenyl), and beta-sitosterol

<p>Maillard Reaction (MR) was performed in ‘dry’ conditions at 50 °C for 48 h between native shrimp hydrolysate (HN) and xylose or dextran. Resulting emulsifying and antioxidant properties were assessed. HN was compared with a native sodium caseinate (CN) and its glycoconjugates, obtained in the same conditions. Compared to dextran, xylose resulted in significant browning after MR with HN or CN, but HN-xylose conjugates showed the most functional modifications. Increasing xylose/HN ratios led to significant molecular rearrangements in the peptide populations and intermediate aromatic compounds of the MR detected at 220 and 294 nm, respectively. Consequently, HN-xylose conjugates had higher reducing power than HN. Conversely, at 0.5% (w/w), a sharp increase in consistency index and apparent viscosity of emulsions after a 4-h ageing period was obtained with the lowest xylose/HN ratio. These results confirm that MR is a promising process for the production of new natural food ingredients from marine-derived protein sources.</p>

Elderberry growth phases represent an irreversible process involving a series of biochemical changes that have an extremely important impact on nutritional characteristics. The aim was to assess the impact of genotype and maturity stage on phenolic compounds, antioxidant capacity and mineral profile in Sambucus plants harvested during different growth phases, from green elder flower buds to purple-black elderberries, including pollen, peduncles and seeds. Growth phases proved to have a greater influence compared to varieties. The green buds and flowers of both varieties had a high concentration of quercetin 3-rutinoside, also termed the key compound of the study. It was found that antioxidant activity varied in the following order: blooming elder flower pollen > white elder flower buds > blooming elder flowers. Based on these findings, several novel food ingredients and supplements could be obtained in order to develop innovative health-promoting products.

Antioxidants are, no doubt, an essential part of an optimal health and even traditional doctors support the importance of an appropriate contribution of antioxidants taken through food. Antioxidants are a category of molecules able to inhibit the oxidation of other molecules. The body distributes various nutrients in the body due to their antioxidant properties and also factory antioxidant enzymes to keep under control the reaction in the chain of free radicals. Some antioxidants are produced by the body, but others don't. In addition, the body's natural ability to produce antioxidants decreases with age. Antioxidants play a significant role for health as it may influence the aging by fighting free radicals. There are antioxidants which can’t be produced in the human body, and to be taken through antioxidant-rich foods, or supplements powerful antioxidant. The paper aims to present some natural sources of oxidants that can be obtained through diet.

Over the past several years, natural antioxidants have attracted considerable interest as potential treatment for a wide variety of disease states, including cancer and other causes e.g. chronic inflammatory diseases and aging. Therefore, plant derived antioxidants are now receiving a special attention as they possess good antioxidant properties and hence a worldwide trend towards the use of natural phytochemicals present in fruits and vegetables have been reported. Numerous epidemiological studies indicate that consumption of cruciferous vegetables is associated with prevention of cardiovascular diseases and reduced incidence of cancers of the gastrointestinal tract and other sites. The substances that seem to be responsible for these properties are phenolic compounds (phenolic acids, flavonoids, polyphenols etc.) and sulphur-containing organic compound glucosinolates and their derived products. The present review focuses on the health promoting effects of phytochemicals and their beneficial bioactivities in Brassicaceae.

Various diseases can be triggered by the condition of oxidative stress in the body. Oxidative stress is a condition that occurs in cells when free radicals are present in excess amounts. To reduce the negative effects and negative effects of these free radicals, the body needs antioxidants. The aim of this research is to know the antioxidant potential of black plum leaf extract (Syzigium cumini (L.) Skeel) using DPPH method. Based on the results of antioxidant potential testing in black plum leaf extract known that it has antioxidant content that is classified as very active with an IC 50 value of 8.85. The results of this study indicate that the leaves of black plum (Syzigium cumini (L.) Skeel have the potential to be developed as a source of natural antioxidants for humans.

Aging is a complicated biological process in which functional and structural alterations in a living organism take place over time. Reactive oxygen species is one of the main factors responsible for aging and is associated with several chronic pathologies. The relationship between aging and diet is quite interesting and has attained worldwide attention. Healthy food, in addition to dietary antioxidants, are required to delay the process of aging and improve the quality of life. Many healthy foods such as fruits are a good source of dietary nutrients and natural bioactive compounds which have antioxidant properties and are involved in preventing aging and other age-related disorders. Health benefits linked with healthy consumption of fruit have drawn increased interest. A significant number of studies have documented the advantages of fruit intake, as it suppresses free-radical development that further reduces the oxidative stress created in the body and protects against several types of diseases such as cancer, type 2 diabetes, inflammatory disorders, and other cardiovascular diseases that ultimately prevent aging. In addition, fruits have numerous other properties like anti-inflammatory, anti-cancerous, anti-diabetic, neuroprotective, and have health-promoting effects. Mechanisms of various bioactive compounds that aids in preventing various diseases and increases longevity are also described. This manuscript provides a summary of various bioactive components present in fruits along with their health-promoting and antiaging properties.
