WATER ACTIVITY OF SMOKED PASTA FILATA CHEESE DURING STORAGE

Cheeses have been produced for many thousands of years. They were and still are one of the most important dairy products. One of the most popular type are Pasta Filata cheeses. In literature it is noted that in food production water activity is one of the most important, especially when designing production process. Based on the available information, a hypothesis is proposed that conditions and shelf life of Pasta Filata cheeses can have a significant impact on their water activity. To verify this hypothesis, aw was measured in samples of Polish Pasta Filata cheese known as Rolada Ustrzycka. Samples were stored in conditions of different temperature and time. During the analysis of the numerical data it was found that, among others, storage temperature affects the water activity of this type of cheeses. Conclusions can be used to improve the quality of cheese during storage.

The article presents scientific research in the field of statistical controllability of the food production process using the example of bakery products for a certain time interval using statistical methods of quality management. During quality control of finished products, defects in bakery products were identified, while the initial data were recorded in the developed form of a checklist for registering defects. It has been established that the most common defect is packaging leakage. For the subsequent statistical assessment of the stability of the production process and further analysis of the causes of the identified defect, a Shewhart control chart (p-card by an alternative feature) was used, which allows you to control the quality of manufactured products by the number of defects detected. Analyzing the control chart, it was concluded that studied process is conditionally stable, and the emerging defects are random. At the last stage of the research, the Ishikawa causal diagram was used, developed using the 6M mnemonic technique, in order to identify the most significant causes that affect the occurrence of the considered defect in bakery products. A more detailed study will allow the enterprise to produce food products that meet the established requirements.

Stored beans have active metabolism and respiration may cause significant quality losses. Therefore, some care is necessary during this period, aiming at maintaining the physiological quality of seeds, minimizing their deterioration and reducing their germinative power. Seed quality during storage may be influenced by environmental factors and the interaction of genotypes with the environment. The objective was to evaluate the germination and vigor of bean seeds after 90-days storage under different temperature conditions. The experiment was conducted under a completely randomized design, with four replications, in 3 × 2 factorial scheme, considering three storage temperatures (10 °C, 20 °C and 30 °C) and two storage times (0 and 90 days). For potential evaluation, the following characteristics were considered: moisture content, thousand seed mass, germination, electrical conductivity, accelerated aging and cold test. Numerical data were submitted variance analysis with averages compared by means test at 5% of significance. Results showed that storage temperature conditions directly affect physiological quality of bean seeds. Temperature of 10 °C provided better seed conservation whereas temperature of 30 °C promoted higher deterioration and reduced vigor.

Australian military ration packs contain a variety of processed foods, including some that are fortified with vitamins. In this study, freeze-dried meals, a key component of lightweight patrol ration packs, were fortified at the time of packing by direct addition of a vitamin premix containing vitamins B1, B2, B6 and E. Fortification was at three levels: 50%, 100% and 200% of the recommended vitamin content for military ration packs. Vitamin stability was determined following storage at temperatures of 1 °C, 30 °C and 40 °C for up to 24 months. HPLC methods were used to measure vitamin content; water activity and colour were also determined. Mean 24-month retention rates across all temperatures and fortification levels were 94%, 97%, 86% and 77% for vitamins B1, B2, B6 and E, respectively. Water activity increased with storage temperature, whereas colour changes due to fortification and storage temperature were at the threshold of visual detection. Fortification of freeze-dried meals would be an effective means of improving the quality of light weight military ration packs by addressing shortfalls in vitamin levels.

<p><span class="fontstyle0">The objective of this work was to evaluate, throughout the storage, the effect of temperature and moisture content on soybean grains with high damage caused by stink bug in the crop, through sanitary quality. Two moisture contents (11.75 and 13.84% wet base) were used and the grains were packed in high density polyethylene packages (HDPE), stored in four BOD’s, regulated at temperatures of 20, 25, 30 and 35 °C and evaluated every two months by analyzing the water activity, grain sanity and the occurrence index. The experiment was set up in a completely randomized design and in a 2 x 4 x 4 factorial scheme, with two moisture contents, four storage temperatures and four evaluation times. The moisture content and the temperatures throughout the storage influence the sanitary quality of the soybean grains damaged by stink bug. Introduction. An increase of the Earth population leads to the necessity to increase food production. To ensure world food security, it is necessary to increase food production compared to the current time by 70%. The solution to this global problem is possible due to the modernization of the economy using digital technologies and artificial intelligence. Despite the fact that Kazakhstan, at present, has significant potential in food production, even its own needs are not fully provided. The article discusses the possibility of digitalization of the agricultural market of Kazakhstan in order to increase the volume of milk production and processing, increasing the competitiveness of dairy products, realization of the export potential and ensuring food security of the country. Aim and tasks. The aim of the study is to justify the need for the adoption of digital technologies in the agricultural market of Kazakhstan. Results. The article discusses the concept of the term "digitalization of the economy" in the world and its spheres of application. Practical examples of digitalization in countries with a developed economic system and the need for their usage in order to transfer to the digital structure of the agricultural market are given. The volumes of milk production in Kazakhstan over the past 3 years are analyzed. The reasons for the incomplete plant capacities of milk processing enterprises and the low level of marketability of dairy farming in Kazakhstan are identified. The rationale is given, that the use of digital technologies and other positive effects associated with their use will contribute to the improvement of the quality of milk. Conclusions. According to the results of the study, the constraints on the development of the dairy industry in Kazakhstan were identified and it was found that most of them can be solved using digital technologies. The solution of these problems is possible with the aid of creation of information platforms and technological re-equipment, conditioned upon organizational, legal and financial support of the state. It was substantiated that the integrated use of digital technologies in the agricultural market of Kazakhstan along the entire product distribution chain from raw milk to sales to the final consumer will help to reduce costs, improve the quality of milk and dairy products, labor productivity, as well as to transform the workforce of the industry.

ABSTRAKPenelitian ini dilakukan untuk mengetahui motilitas dan viabilitas spermatozoa ayam kampung pada suhu 5oC menggunakan pengencer dan lama simpan yang berbeda. Metode yang digunakan dalam penelitian ini adalah penelitian laboratorium menggunakan Rancangan Acak Lengkap (RAL) Faktorial dengan pengencer ringer lactat solution, air kelapa dan tanpa pengencer serta lama simpan 0, 3, 6, 9, 12, 15, 18, 21, 24, 27, 30, masing-masing diulang 10 kali. Variabel yang diamati yaitu motilitas dan viabilitas spermatozoa. Analisa data yang digunakan adalah analisis varian. Hasil analisis data menunjukkan bahwa motilitas dan viabilitas spermatozoa menggunakan pengencer ringer lactat solution lebih tinggi (P<0,01) serta dapat bertahan sampai lama simpan 24 jam dibandingkan air kelapa dan tanpa pengencer. Adapun nilai motilitas ringer lactat solution, air kelapa dan tanpa pengencer pada lama simpan 24 jam masing-masing sebesar 43,5±17,17%; 8±4,83%; 6,5±2,4%, sedangkan nilai viabilitasnya sebesar 83,2±7,25%; 64,6±3,20%; dan 63,1±2,33%. Kesimpulan dari hasil penelitian ini adalah ringer lactat solution lebih baik dibandingkan air kelapa dan tanpa pengencer dalam mempertahankan kualitas semen ayam kampung pada suhu simpan 5oC sampai lama simpan 24 jam.Kata Kunci : air kelapa, ayam kampung, motilitas, spermatozoa, viabilitas  ABSTRACTThis study was conducted to determine the motility and viability of spermatozoa of Native chickens at 5oC using different diluents and time storage. The method used in this study was laboratory research using Factorial Completely Randomized Design with ringer lactate solution, coconut water and without diluent at 0, 3, 6, 9, 12, 15, 18, 21, 24, 27, 30 hours of time storage each repeated 10 times. The variables observed were motility and viability of sperm. Data analysis used is variance analysis. The results of data analysis showed that the motility and viability of spermatozoa using ringer lactate solution diluents was higher (P <0.05) than coconut water and without diluents. The motility values of ringer lactat solution, coconut water and without diluents were 43,5±17,17%; 8±4,83%; 6,5±2,4% respectively, while the viability values were 83,2±7,25%; 64,6±3,20% and 63,1±2,33%. The conclusion of this study is that ringer lactat solution is better than coconut water an without diluents in maintaining the quality of Native chicken semen at a storage temperature of 5oC until 24 hours.Keywords: coconut water, motility, native chicken, sperm, viability

In two parts of the article, more than 70 errors and violations of the Biotechnics of artificial breeding of Pacific salmon in salmon hatcheries are collected and summarized, which lead to an immediate or delayed deterioration of the quality of reared fry and a decrease in their survival rate. Deviations from the biological basis of fish farming are shown and possible consequences of such errors or violations are predicted. In the first part of the article (#7,2020) there were General errors (throughout the entire fish-breeding process), as well as violations of Biotechnics during the work with producers, collecting eggs and preparing them for incubation, in the second part-violations of Biotechnics during the incubation of eggs, holding pre-larvae, rearing and release of young. Their correction, prevention or minimization of consequences will significantly improve the quality of sexual products and offspring from producers, increase the linear and weight gain of juveniles during rearing, improve the coefficient of feed payment, reduce the time of rearing, improve the epizootic situation by developing immunity in fry and mobilizing other protective reactions of their body, significantly reduce waste at all stages of the production process, increasing survival by 10–15%. In conclusion, it is noted that the first and most important condition for an efficient salmon hatchery is the creation of optimal environmental conditions at each stage of the production process. The second condition is strict compliance with the Biotechnics of artificial salmon breeding and the complex of veterinary and sanitary, fish-breeding and meliorative and therapeutic and preventive measures. The third is the availability of competent specialists who regularly improve their skills in accredited Universities to implement, control and manage the first two conditions.

This article presents the results of determining the level of perinatal infection of calves with the bovine leukemia virus at the age from birth to colostrum intake and 1-1.5 months after birth when drinking milk from healthy individuals, excluding the alimentary transmission route, with an infection frequency of 5.4% in the surveyed farm. Improvement of molecular diagnostics based on genomic analysis in the scheme of complex antiepizootic/recreational measures for bovine leukemia has been carried out in order to improve the quality of dairy products. As part of the implementation and improvement of the scheme of preventive measures, a positive trend was found, expressed in a tendency to a 3.6-fold decrease in the frequency of detection of BLV infection of young animals. In the course of work, the efficiency of the use of a gene diagnostic test - multiplex PCR-RT – as a tool for the specific prevention of bovine leukemia of calves in the early stages of the disease was shown: the relative diagnostic sensitivity of the PCR-RT technique is at a level not lower than that of the serological method and differs in the side of overestimation by 3.8 times.

The priority in improving the existing methods of processing fish is salting with the use of food additives with different functional orientations. The aim of the study was the development of preserves with the introduction of lactate-containing additives and using sonochemical technologies; examination of the quality of the products obtained according to organoleptic and microbiological safety indicators. The article proposes a resource-saving technology for the production of fish products with prolonged shelf life due to the use of a complex food additive consisting of lactic, acetic, propionic acids and their salts in different proportions with subsequent ultrasonic treatment using the ultrasonic generator of the Wave series model UZTA-0 2/22-OM. There was established the optimal mode of using the ultrasonic processing power of 75 W / m2 in the manufacture of fish preserves from herring. Organoleptic and microbiological quality indicators were studied during storage of preserved products with the addition of additives and ultrasonic treatment compared to the control. Organoleptic assessment was carried out on a five-point scale, microbiological indicators were studied by standard methods. The Dilactin Forte Plus dietary supplement in the composition of preserves in the amount of 3% and in combination with the use of sonochemical technologies makes it possible to obtain a safe high-quality fish product. Manufactured preserves at a storage temperature of 0 ± 2 ° C can maintain their high quality for 5 months.

Proteomics is a new area of study that in recent decades has provided great advances in the field of medicine. However, its enormous potential for the study of proteomes makes it also applicable to other areas of science. Milk is a highly heterogeneous and complex fluid, where there are numerous genetic variants and isoforms with post-translational modifications (PTMs). Due to the vast number of proteins and peptides existing in its matrix, proteomics is presented as a powerful tool for the characterization of milk samples and their products. The technology developed to date for the separation and characterization of the milk proteome, such as two-dimensional gel electrophoresis (2DE) technology and especially mass spectrometry (MS) have allowed an exhaustive characterization of the proteins and peptides present in milk and dairy products with enormous applications in the industry for the control of fundamental parameters, such as microbiological safety, the guarantee of authenticity, or the control of the transformations carried out, aimed to increase the quality of the final product.
