The goal of the present study was to evaluatecharacteristics of the carcass and meat of steers and heifers, finished in feedlots and fed different high-grain diets. Forty-five bovines were used: 21 heifers, with an initial age of 32 months and initial weight of 359.9 kg, and 24 steers, with an initial age of 20 months and initial weight of 337.6 kg, from a Charolais × Nelore crossbreed. The animals were divided among the treatments, which were defined by the energy source used in the diet: rice, white oats, or corn; seven heifers and eight steers were used per diet treatment. The animals remained confined until reaching an estimated warm carcass weight of 220 kg. The experimental design was completely randomized, with a 3 × 2 factorial arrangement. Weights at slaughter were higher for animals fed white oats (449.3 kg) or corn (430.4 kg) than for animals fed rice (401.8 kg). Higher carcass yields were found in corn-fed animals. Animals that received rice had lower coverfat thickness. The yields of the rib and hind-quarter commercial cuts were higher for cattle that received white oats or corn. Animals that received corn diets had greater arm circumference than animals that received white oatsand both were larger than animals that were fed rice. The tenderness (5.15 points) and palatability (5.46 points) of rice-fed animals werelower than those of animals fed white oats (5.73 and 6.40 points, respectively) or corn (6.04 and 6.45 points, respectively). Slaughter weights were similar between categories - 424.1 kg and 430.2 kg for steers and heifers, respectively. Steers had higher fore-quarter yield (38.0% vs.37.4%), whereas heifers had a greater carcass length (126.0 cm vs. 123.1 cm). The finishing of cattle with corn- or white oat-based high grain-diets yielded heavier carcasses, with adequate deposition of fat, andbetter performance of principal carcass cuts. Feeding with rice in high-grain diets produced leaner meats, but reduced carcass weight, with greater losses upon cooling and less tender meat. The production of confined heifers or steers ensures similar meat products.

The objective of this study was to evaluate the effects of combinations of dry and moist corn and sorghum grain on the carcass and cut characteristics of crossbred lambs Suffolk x Santa Inês produced in feedlots. The experimental design was a randomized block with four treatments and three replicates. Sixty uncastrated male lambs with an initial average weight of 15.5 kg were used in this experiment. Four combinations of grain were evaluated: dry sorghum milled + silage of high-moisture sorghum grain (DS: MS); dry corn milled + silage of high-moisture sorghum grain (DC:MS); dry corn milled + silage of high-moisture corn grain (DC:MC); dry sorghum milled + silage of high-moisture corn grain (DS:MC). There was no difference between treatments for carcass yield, warm and cold carcass weight and for cooling loss. The slaughtering weights of lambs fed DC:MS associations were higher (29.46 kg) than lambs fed DC: MC (24.17 kg), but both did not differ DS:MS (26.18 kg) and DS:MC (25.21 kg). There was influence of the grain associations on the yield of commercial cuts palette and shank. Combinations of corn and sorghum grain, dried and ensiled, can be used to feed lambs in confinement for meat production without affecting the quality of the carcass.

AbstractThe influence of sex on the meat quality of Lacha (L) and Rasa Aragonesa (RA) lambs was studied. Male and female L lambs were given ewes' milk and were slaughtered at 25 and 24 days of age corresponding to 11·4 and 10·9 kg live weight (LW), respectively. Male and female RA lambs were weaned at 58 days (16·0 kg LW) and then given concentrate and barley straw until slaughter at 89 and 91 days of age, corresponding to 24·5 and 23·1 kg LW, respectively. The parameters measured on the carcasses were: hot carcass weight, cold carcass weight, conformation, colour, firmness and thickness of dorsal fat and colour of muscle rectus abdominis. Parameters measured on longissimus dorsi muscle were: ultimate pH (pHu), instrumental colour (L*, a*, b*), myoglobin concentration, ash, crude protein, fat, moisture and water-holding capacity (WHC). Iodine value and fatty acid composition were studied in the intramuscular (IM), intermuscular (IN) and subcutaneous (SC) fat depots. Females of both breeds had higher amount of IM fat (P < 0·001 and P < 0·05 for L and RA breeds, respectively) and firmer SC fat than males (P < 0·05). There were no differences between sexes in pHu, myoglobin concentration, WHC and the L*, a* and b* colour parameters. No significant differences between sexes were observed in the total saturated fatty acids, total unsaturated fatty acids and in the iodine value in the three fat depots studied in both breeds. However, the females of the breed had significantly higher proportions offatty acids with 15 carbon atoms (pentadecanoic (C15:0)) and with 16 carbon atoms (palmitic (C16:0)and palmitoleic (C16:1)) than the males in the three depots. The females of Rasa Aragonesa breed had a higher proportion of palmitoleic acid (C16:1)in the IM depot (P < 0·001) and of palmitic acid (C16:0)in the SC depot (P < 0·05) than the males. The absence of significant differences in the unsaturated fatty acid content between males and females showed that at the low slaughter weight, sex had no effect on the nature and composition of fat.

Abstract Two spent hen breeds (Mos and Isa Brown) fed with three different diets [commercial feeding (CF); corn, pea, and triticale (CPT); and corn and wheat (CW)] were studied to assess their laying performance, carcass characteristics, and meat quality parameters (breast and drumstick). A total of 48 hens reared in a traditional free-range system were used. Birds were slaughtered at 72 weeks of age after the moulting in an accredited abattoir, and measurements (for each bird) of carcass and meat started at 24h post-mortem. The results demonstrated a breed and diet effect (P < 0.05) on laying performance, carcass, and meat quality. The Mos breed showed lower laying performance, higher live weight (P < 0.001), carcass weight (P < 0.001), dressing percentage (P < 0.001), and carcass fat (P < 0.001) than Isa Brown. The breed also affected physicochemical parameters of drumstick and breast (P < 0.05). Concerning the diet effect, spent hens fed with commercial feeding shown heavier live weight (P <0.01) and carcass weight (P <0.01). Diet significantly affected most of meat quality parameters, being CPT the formulation that most affected (P < 0.05) drumstick composition, while in the breast was CF (P <0.001). Significant (P ≤ 0.005) effect in breast colour, cooking loss and hardness were observed in animals fed with alternative diets to CF. Regarding nutritional quality, no breed or diet effect (P < 0.05) was observed in MUFAs, PUFAs and n-6 contents of meat. Overall, both breeds showed a high protein and low-fat content in the breast, showing these hens as an opportunity for the development of meat products as well as an economic purpose for spent hens that reach the end of their productive lives.

This objectives of this research were both to study and determine the best level of concentration of yeast Saccharomyces cereviseae and period of fermentation on the quality of tomi-tomi vinegar (Flacourtia inermis). A completely randomized experimental design with two factors of treatment was applied in this research. The first factor was concentration of yeast S. cereviseae having four levels of tretament, i.e.: without the addition of yeast 0.5, 1 and 1.5 g yeast. The second factor was period fermentation with 1, 2, 3, 4, and 5 weeks. The result indicated that the concentration of yeast S. cereviseae 1.5 g and period fermentation 5 week produced a good tomi-tomi vinegar with total acids 51.22%, total dissolved solids 8.35, total sugar 8.07% and pH 5.40.

This study aimed to determine the effect of ovaprim hormone, aromatase inhibitor and pituitary on the quality of the catfish eggs (Clarias gariepinus). Experimental Design used was Completely Randomized Design (CRD) with four treatments, each with three replications. Treatment A: ovaprim; treatment B: Aromatase inhibitors, treatment C: hypophysis and treatment D: Control. The results showed that the difference in treatment gave highly significant effect on fertilization and hatching eggs but no significant effect on the survival rate of larvae. Aromatase inhibitor hormone was the best because it provided highly significant effect on fertilization (92.66%), hatchability of eggs (95%), and surviva rate (81.33%) of fish larvae.   Keywords : Clarias gariepinus. Ovaprim, Aromatase Inhibitor, Hypophysis, egg, larvae

This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

The aim of this study was to estimate the effect of feeding system on the growth rate and carcass quality of crossbred Improved Jezersko-Solčava x Texel (JSRT) lambs and to evaluate the effect of sex on these traits. The trial was conducted in nature according to the traditional rearing systems. The trial included 44 crossbred lambs, which were born and reared until the slaughter in three different flocks. In the age of 10 days suckled lambs were offered with ad libitum corresponding diets according to the feeding system. All lambs were slaughtered in seven consecutive days by the same procedure. The effect of feeding system significantly affected daily gain from birth to slaughter, EUROP carcass conformation and shoulder width. Likewise, the effect of sex significantly affected daily gain from birth to slaughter and internal fatness of carcasses. According to carcass cuts the feeding system significantly affected only the proportion of neck and leg. Considering meat quality traits, feeding system had a significant effect on the pH 45 and CIE a* values. In this study, we could speculate that more than the feeding system the growth and the carcass traits as well as meat traits were affected by the amount of the supplement.
