Today the beverage industry occupies an important place in the processing industry of the Republic of Kazakhstan and is one of the most attractive investment sectors of the economy. However, this industry is still not provided in sufficient quantities with its own, domestic high-quality raw materials - rye and / or barley malt. For example, fermented malt is used as a source of colors and aromas. It is the main raw material in the preparation of kvass, kvass wort concentrate and kvass bread, the rate of application of this type of malt is from 40 to 60%, depending on the method of production of this type of product. The processing of cereals with a high protein content (above 12%) and a low starch content and extractiveness is economically disadvantageous, and undesirable from a quality point of view. The most important directions in solving this problem should be recognized as the improvement and development of new resource-saving technologies of malt using non-traditional types of raw materials. Currently, the use of triticale grain in the fermentation industry in the production of malt and the further replacement of traditional types of malt for the preparation of alcohol, beer, kvass is promising. In recent years, new varieties of triticale have been obtained in the Republic of Kazakhstan, which are distinguished by high technological properties, which are included in the State Register. In this regard, it is obvious that the performance of work related to theoretical and experimental research aimed at the development of new technological modes of preparation of malt from triticale is one of the urgent tasks, the decision of which, to create an assortment of drinks. The purpose of the research work is to study the malting properties of Kazakhstani varieties of triticale grain.

The article is devoted to the study of the features, problems, risks and development trends of the ferrous metallurgy of the Republic of Belarus. Its specificity lies in high centralization of the industry and signs of a cluster structure; the use of scrap metal as a raw material; the predominance of state ownership; export orientation; intra-industry cooperation institutionally formalized into a holding; geographical proximity to the consumer. Since the ferrous metallurgy of the Republic of Belarus is import-dependent and export-oriented, the article considers its development taking into account the risks arising in the field of raw material supply, as well as through the prism of factors determining dynamics of world steel markets as the main type of Belarusian ferrous metallurgy products. The dynamics of economic cycles; investments in ferrous metallurgy; stimulation and growth of steel-consuming industries; changing environmental requirements; protectionist measures of international trade are revealed as these factors. Ferrous metallurgy of the Republic of Belarus doesn’t take an important place in world markets, but nevertheless demonstrates the dynamic development and growth of production. At the same time, many, first of all, external risks and threats require constant adaptation of Belarusian metallurgical enterprises to maintain the economic security of the industry. There is proposed in the article to develop measures to preserve traditional trade relations; strengthening intersectoral cooperation with industries which consume products in the domestic market; individualization of demand; “smart” environmental policy, which involves toughening environmental requirements and preservation of economic efficiency; digitalization with the Russia and Western Europe experience; search for alternative sources of raw materials.

This research work is devoted to resource-based research on the harvesting of Scots pine pollen, as it is known that pine pollen is recognized worldwide as a unique "complete nutrition complex". It is also known that no plant resources can compare with pollen in terms of balance and activity of its constituent elements and BAS (biologically active substances), so its use in official medicine may be promising. In order to identify the possibility of using Scots pine pollen growing in the mountain zone of RSO-Alania on an industrial scale and using raw materials for obtaining broad-spectrum medicines, resource studies of Scots pine growth were conducted and areas forming a forest area that are promising for harvesting were identified, in particular, between the villages of Zintsar and Injinta in the mountain zone of the Alagir gorge of the Republic. A plot of about 3 hectares was taken for research. The operational stock of pine pollen was 117 kg, the volume of possible annual harvesting of pine pollen should not exceed 39 kg. The identified reserves of scots pine pollen growing in the mountain zone of the Alagirsky district of the Republic of North Ossetia-Alania allow us to recommend harvesting as a medicinal raw material in reasonable volumes. Of course, for reliable data on the recommended volumes of pollen harvesting, it is necessary to study all the places of growth of scots pine not only in the Alagirsky district of the republic, but also in other areas. Moreover, the research should be carried out both in the mountainous and in the flat part of the territory of the republic. Research in this direction continues.

Any change of the raw material sources for glazes, economically, ecologically motivated, and also from the glaze quality point of view, is conditioned by the molecular formula rationalization and by the variation limits of the molecular formula, respectively. The proper glaze compositions are placed within their limit variation intervals with optimized processing and utilization properties. For this purpose, the rationalization criteria and procedures of molecular formulas are summarized in the present paper, as well as the results referring to their rationalization obtained in the authors previous work. Thus, one starts from a base of raw materials that are selected, usable and also accessible for the design and producing of the glazes. On these bases the groundwork and the design equation for the glaze recipes are developed, exemplified for a single glaze. For an easy access to results, computer programs are used for an easy access to results.

The results of studies of the content of polyphenolic compounds and their antioxidant activity in the Pontic hawthorn plant Crataegus pontica K.Koch., growing in the mountainous regions of the Tashkent region of the Republic of Uzbekistan are presented. The collection of raw materials took place in the spring at the beginning of October 2019 and at the end of April 2020. The conditions for the isolation of polyphenolic compounds were selected under various conditions. It was shown that the optimal content of polyphenols is extracted with 70% acetone, followed by fractionation of the aqueous residue with ethyl acetate and precipitation with hexane. It was shown that in the plants harvested in spring, the amount of polyphenols was 4.28%, and the collected volume was 2.6%, of the air-dry mass of the raw material. Chromatographic methods (BC and TLC) revealed that the composition of plant leaves collected in spring contains more polyphenols than those collected in autumn. This plant contains compounds belonging to the class of flavonols, phenolic acids and flavan-3-ols. Polyphenols were identified by rutin, quercetin, quercetin-3-O-β-galactoside, catechin, and gallic acid by BC and TLC methods. The antioxidant activity of the sum of polyphenolic compounds was studied in the model of lipid peroxidation (LPO) in rat liver mitochondria. It was found that polyphenols have a protective effect on mitochondria, a reduced damaging effect of Fe2+ / ascorbate and antioxidant activity depends on the concentration of the studied polyphenolic substances. The introduction of rutin into the incubation medium in 5 μM medium inhibits LPO processes by 32.0%, and at 10 μM – by 85.9% and in 20 μM – by 96.8%, compared with the control.

The ways of informing students about the activities which are organized on a faculty or university level daily present an increasing challenge. The very aim of this work is to analyze and compare ways of informing students of the Faculty of Education about the sport activities on the faculty and university level. The way of informing students about the activities will be compared with the ways of informing about general sport activities in order to identify possible deviation from two different types of activities. Promotion being one of the marketing elements, so is the appliance of adequate promotion tools very important in all social processes. Numerous examples, especially in sport, proved that the activities of the sport participants will not be successful without the adequate use of promotion. University sport in developed countries surely occupies an important place in the academic community; from that point of view it is very important to determine the way of managing the university sport. The university sport in the Republic of Croatia is becoming more significant element of students' activities every day, and the promotion contributes to that. Apart from comparing the ways of informing about sport and regular activities, this paper will provide the time comparison of the mentioned researches between 2014 and 2020. The comparison of the same data with the time lag will provide the best picture of the changes in the ways of informing in a 6-year-period. The obtained results have shown that even after six years, students continue to prefer certain communication channels, i.e. they remain primary.

The castle Colonna of Arnara: from the restoration of the monument to the enhancement of the ancient village and its territoryThe castle of Arnara, is located in Ciociaria in southern Lazio, in what was once the feud of the Conti of Ceccano. For the territory it is the most important monumental complex of medieval architecture. In fact, despite its small size, it is one of the few examples of fortified architecture still original in its essential lines. This castle represents an exceptional case of sedimentation and stratification, which even today, from its reading, allows us to reconstruct both its historical events and those related to the urban development of the adjacent historic village. Moreover it can be considered of priority importance also from the urbanistic point of view because it represents the first historical nucleus of Arnara. Unfortunately, today, the castle is in a bad state of conservation. With the passing of time its conditions have become more and more aggravated also because of the complex events linked to the various passages of property, of private and public nature, which have strongly influenced the management of the monument. The study of the castle of Arnara is part of the national and international debate that considers participation a key factor for the sustainable enhancement of the cultural heritage, because it promotes greater awareness of its social and economic value. The objective of the research work is to develop, taking the castle as a case study, a new approach that sees cultural heritage (tangible and intangible) as an irreplaceable heritage of knowledge and as a precious resource for economic growth, employment and social cohesion; therefore a cultural heritage seen as a driving force. In the specific case of Colonna Castle, attention has been focused on the importance of being able to activate virtuous circles around this very important place of culture, enhancing its role as a centre of knowledge and incubator of creativity and social innovation.

Currently, one of the priority areas of the food industry is the development of functional food products based on environmentally friendly raw materials of natural origin, including berry. When developing new products with protective properties, it is important to take into account the ingredient composition of the raw materials, which has a therapeutic and prophylactic effect, and from this point of view, raspberries and lingonberries deserve special attention. In order to maximize the preservation and extraction of natural, physiologically functional components of wild berries (vitamins, micro - and macroelements, phenolic compounds, pectin and other substances) were developed and created multienzymatic compositions for the pretreatment of lingonberry (MEKb) and raspberry (MEKm). Of great interest were studies on the characterization and content of dyes in the samples being studied. As structural elements of anthocyanins in raspberry and lingonberry juice, as well as in their enzymatic juices, disaccharides were established, the main structural component of which is cyanidine, and the quantitative content of anthocyanins (mg/dm3) in the juice of lingonberry and raspberry, corresponded - 305.40 and 106.20, and in the enzymatic juice of lingonberry and raspberry - 553.70 and 146.40. The high content of dyes is an important criterion for the use of BFS and MFS as a source of natural dyes. A higher antioxidant activity was found in BFS and MFS (1.3 and 1.5 times, respectively) compared with juice obtained without the use of enzyme preparations. Therefore, the enzymatic juice of berries has high antioxidant properties and is a source of natural dyes, so it can be considered as a promising raw material in the production of functional foods that have a beneficial regulatory effect on the human body.

At present, the acute question of rational resource consumption and resource saving arises in the republic. Sustainable development of the economy of Kazakhstan should be based on the planned and effective use of natural resources, in terms of the combined use of raw materials by enterprises of the mineral and raw materials complex. The current situation at the enterprises of the mineral and raw materials complex testifies to the need for the further development of the enterprise management system in order to obtain an additional chain of surplus value by passing out valuable components from raw materials. In connection, fundamental scientific research is needed, which makes it possible to scientifically substantiate improvement of the enterprise management system, the results of which can significantly improve the efficiency of the enterprise in the rational use of raw materials, both in terms of its processing, and in the direction of preserving the ecology of the region.
