The effective functioning of all body systems is mostly determined by many essential substances that act as activators of metabolic reactions. Their diet deficiency leads to violations of alimentary nature homeostasis, exacerbated by environmental, social, and economic factors. This study aimed to compare antihypoxant properties nutrients of the vegetable and animal origin, their impact on respiratory and transport parameters of gas exchange, as criteria for the energy balance of the body, and the assessment of probiotic factor in improving the antihypoxant properties of targeted biologically active substances. The increase in the efficiency of gas exchange was evaluated on the example of students and teachers of an engineering university at ages from 16 to 65 in daily consumption of food products with known biocorrective properties: wheat germ oil (WGO), wheat germ oil meal (WGOM), concentrated tissue fish oil (CTFO) and their combinations with the biomass of the lacto- and Bifidus bacteria consortium. The change of energy efficiency of the nutritional status was assessed based on the analysis of the carbon dioxide (CO2) and oxygen (O2) concentration in the exhaled gas-air mixture and the level of hemoglobin (SpO2). Their values were recorded before and after the daily consumption of the tested products for 30 days. The average values of parameters in all age groups have demonstrated that the most effective antihypoxant is the wheat germ oil meal. A combination of biocorrectors under investigation with active forms of probiotic microorganisms provides a more active antihypoxant effect for all products under investigation in all age groups. The obtained data make it possible to state the possibility of an operational alimentary impact on gas exchange efficiency and prove the antihypoxant properties of WGO, WGOM, CTFO, and the synergetic effect of their combination with probiotic microorganisms in the active form.

The aim of the work is a comparative study of the effect of vegetable nutrients - wheat germ oil (WGO), flour from wheat germ cake (WGC), and animal - concentrated tissue fish oil, origin on lipid metabolism indicators of students and university teachers, as well as an assessment of the probiotic factor in increasing the effectiveness of the target biologically active substances. The data obtained confirm the relation between the nutritional sufficiency of the body and the increase in lipid metabolism effectiveness and atherosclerosis risk reduction in students and teachers of an engineering university with the daily use of bioactive nutrients: WGO, WGCF, CTFO and their combinations with the biomass of lactobacilli and bifidobacteria consortium. The lipid metabolism was evaluated based on the analysis of indicators of the total cholesterol (TC) concentrations, high-density lipoproteins (HDL), low-density lipoproteins (LDL), triglycerides (TG), atherogenic index (AI). The values of these indicators were recorded before and after daily consuming the study foods for 30 days. The data obtained were analyzed for 3 age groups: 16 – 24, 25 – 44, and 45 – 65. It was found that WGO has the most effective antiatherosclerotic effect; the decrease in the TC level was 6.4%, the increase in the HDL concentration was 13.7%, the decrease in the LDL concentration was 11.3%, the decrease in the TG concentration was 17.1%, and the AI decreased by 22.6%, respectively. With WGCF, the changes in the studied parameters were 6.0, 12.3, 13.1, 13.1, and 22.1%, respectively. Together with probiotics WGO effectiveness increased in terms of the reduced TC level (1.9%), increased HDL concentration (8.2%), decreased LDL concentration (2.5%), reduced TG concentration (5.7%), and decreased AI (6.3%) for CTFO by 9.1, 26.1, 14.7, 24.1 and 31.2%, respectively. Thus, the dynamics of lipid metabolism indices objectively testifies to the positive effect of bioactive nutrients on human health indicators.

The results of studies of the alimentary correction of the efficiency of gas exchange processes in the lungs are presented on the example of students and teachers of an engineering university with the daily use of food products with known bio-corrective properties: 3.5 g of wheat germ oil (MZP), 50 g of flour from wheat germ meal (MZHP), 6.5 g of concentrated tissue fish oil (CTR) and their combinations with the biomass of the consortium of lacto - and bifidobacteria (10 g). The efficiency of gas exchange processes was assessed based on the analysis of the respiratory coefficient, the concentration of carbon dioxide (CO2) and oxygen (O2) in the exhaled gas mixture was determined using a TESTO-310 gas analyzer, an MDG-1201 capnograph, the values of which were recorded before and after daily consumption of the studied products during 30 days. The experimental group consisted of volunteers - teachers and university students aged 16 to 65 years, divided into 3 age groups: 16-24, 25-44 and 45-65 years old. It was found that the most effective antihypoxant is MZHP, in all age groups the increase in the mean values ??of DC was 0.041 units, and relative to the initial values - 4.8%. With the use of MW, the change in DC was 0.032, an increase relative to the initial indicators - 3.7%. For the 1st, 2nd and 3rd age groups, the average change in DC was: 0.031, 0.036 and 0.043 units, relative to the initial indicators, the growth was 3.5, 4.2 and 5.0%, respectively. It has been proven that the combination of the investigated biocorrectors with active forms of probiotic microorganisms provides a more active antihypoxant effect for all investigated products, in all age groups. The efficiency of the minimum wage has increased, the increase in DC was 0.049 units, for CTR - 0.024 units. The growth of DC relative to the initial values was 5.7 and 2.9%, respectively. The synergism of the action of biocorrectors in combination with probiotics, by age groups, was 0.035, 0.033 and 0.038 units, which relative to the initial indicators was 4.1, 3.8 and 4.5%. The data obtained make it possible to state the possibility of a significant alimentary effect on the efficiency of gas exchange in the lungs, prove the antihypoxant properties of MZP, MZHP, CTR, as well as an increase in the effectiveness of combinations of these biocorrectors with active forms of probiotic microorganisms.

It is proved that the combination of the studied biocorrector with the active forms of probiotic microorganisms provides a more active antihypoxic effect for all the studied products in all age groups. The effectiveness of the WGO was increased, the increase in RC was 0.049 units, for CTFO – 0.024 units. The growth of RC relative to the initial values was 5.7 and 2.9%, respectively. The synergism of the action of biocorrectors in combination with probiotics, by age groups amounted to – 0.035, 0.033 and 0.038 units, which is 4.1, 3.8 and 4.5% relative to the initial indicators.

Полноценное, сбалансированное питание - основной фактор в формировании здоровья детей, когда в организме наиболее интенсивно протекают процессы роста и развития, формируются и созревают многие органы и системы, совершенствуются их функции. В статье приведены основные направления исследований зарубежных и отечественных ученых по лечению генетических заболеваний, таких как фенилкетонурия. Одним из приоритетных направлений в области здорового питания населения России в соответствии со Стратегией научно-технологического развития РФ до 2030 г. является развитие производства пищевых продуктов, обогащенных незаменимыми ингредиентами, специализированных продуктов детского питания, продуктов функционального назначения, диетических пищевых продуктов и биологически активных добавок. По данным ВОЗ от структуры питания на 70 % зависят здоровье и физическое развитие детей и подростков. Фенилкетонурия (ФКУ) - наследственное заболевание, вызывающее нарушение метаболизма аминокислоты фенилаланина у ребенка, одно из первых, рекомендованных ВОЗ для ранней диагностики у новорожденных. Отсутствие лечения вызывают серьезное поражение центральной нервной системы, отставание в умственном и физическом развитии. Особенностью современного этапа развития диетотерапии для детей, страдающих различными заболеваниями, в том числе наследственными, является разработка качественных функциональных продуктов питания, способствующих сохранению и улучшению здоровья ребенка за счет регулирующего и нормализующего воздействия на организм с учетом его физиологического состояния и возраста. Данные продукты можно широко использовать в практике лечебного питания не только в составе гипофенилаланиновой диеты, но и при любых заболеваниях, требующих ее соблюдения. В настоящее время единственным методом лечения ФКУ является диетотерапия, организованная с первых дней жизни с использованием специализированных смесей без фенилаланина. Из питания исключаются высокобелковые продукты растительного и животного происхождения. Целью лечебного воздействия диеты на ребенка является поддержка концентрации фенилаланина (ФА) в крови в пределах 2-12 мг на 100 мл в зависимости от возраста ребенка. Full-fledged balanced nutrition is the main factor in the formation of children's health, when the processes of growth and development are most intense in the body, many organs and systems are formed and mature, and their functions are improved. The article presents the main research areas of foreign and domestic scientists on the treatment of genetic diseases, such as phenylketonuria. One of the priority areas in the field of healthy nutrition of the Russian population in accordance with the Strategy for Scientific and Technological Development of the Russian Federation until 2030 is the development of the production of food products enriched with essential ingredients, specialized children's food products, functional products, dietary food products and biologically active additives. According to WHO, the health and physical development of children and adolescents depends on the nutritional structure by 70%. Phenylketonuria (PKN) - an inherited disease that causes impaired metabolism of the amino acid phenylalanine in a child - is one of the first recommended by WHO for early diagnosis in newborns. Lack of treatment causes serious damage to the central nervous system, a lag in mental and physical development. A feature of the modern stage of development of dietary therapy for children suffering from various diseases, including hereditary ones, is the development of quality functional food products that contribute to the preservation and improvement of the health of the child, due to the regulatory and normalizing effect on the body, taking into account its physiological state and age. These products can be widely used in the practice of therapeutic nutrition not only in the sastava of the hypophenylalanine diet, but also for any diseases requiring its observance. Currently, the only method of treating PKN is diet therapy, organized from the first days of life using specialized mixtures without phenylalanine. High-protein products of vegetable and animal origin are excluded from nutrition. The goal of the therapeutic effect of the diet on the child is to maintain the concentration of phenylalanine (FA) in the blood in the range of 2-12 mg per 100 ml, depending on the age of the child.

SummaryThe aim of this study was to find out whether differences exist in the physical development, nutritional status and psychosomatic status of children living in deprived regions of Hungary compared with the Hungarian national reference values. The Hungarian government’s decree No. 24/2003 created a complex indicator of social and economic conditions by which the country’s regions were graded into deprived and non-deprived regions. This study examined 3128 children (aged 3–18 years) living in the deprived regions and their biological status was compared with the national reference values (2nd Hungarian National Growth Study). Children’s body development was assessed via some absolute body dimensions. Nutritional status was estimated by BMI with children being divided into ‘underweight’, ‘normal’, ‘overweight’ and ‘obese’ categories. For children aged 7–18 years a standard symptoms list was used to characterize psychosomatic status. The subjects were asked to rate their health status as excellent, good, fair or poor. The body development of children living in these deprived regions was significantly retarded compared with the national references in the age groups 7–9 years and 14–17 years for boys and in the age groups 4–6 and 14–17 for girls. The prevalence of underweight was significantly higher in children and adolescents living in deprived regions (boys: 4.8%; girls: 5.9%) than the national references (boys: 2.9%; girls: 4.0%), while the prevalence of overweight and obese children did not differ between deprived regions (boys: 20.2%; girls: 19.8%) and the national references (boys: 21.5%; girls: 19.1%). Children and adolescents living in the deprived regions rated their health status worse, and experienced more psychosomatic complaints (abdominal discomfort and fear), than the national references. Although the majority of body dimensions of children in deprived regions were close to the 50th centile of the Hungarian national references, a sizeable minority (31%) were 0.20SD or more away from the median value, which has implications as to how social, medical and public welfare policy can be shaped.

Sorghum is a local grain that grows predominantly in the semi-arid, savannah and grassland region of Northern Nigeria and other parts of the world. Sorghum samples were collected from five districts in each of the six agro-ecological zones, while the sorghum based products such as gruel, pap and porridge were also sampled using A quantitative food frequency questionnaire (QFFQ) followed by measurement of the body weight and  the quantity of food consumed by the respondents. The mycotoxin concentrations in both raw sorghum sample and the sorghum based products were determined using High performance liquid chromatography (HPLC). Mycotoxin concentrations determined from the two different samples was used to determine the amount of mycotoxins consumed by respondents from different age groups. Subsequently the burden of aflatoxin induced Hepato celluar carcinoma (HCC) in communities (within the zone) that subsist on sorghum and sorghum based products was also determined. There was a significant difference (P = 0.05) between the concentration of the mycotoxins in the raw and the processed sorghum samples in the area under study. The processing methods employed in the in the preparation of these products could not reduce the toxin level below the PTDI and TDI levels set by the regulatory agencies. Average daily consumption of sorghum based products based on age range was found to be 192.5 g/day, 617.0 g/day, 810.2 g/day and 746.1 g/day for the infants, children, adults and elderly respectively The incidence of HCC and the burden aflatoxin induced HCC in the HbsAg+ and the HbsAg- populations was alarmingly high. Sorghum is a major grain corn in the world agricultural economy and represents an important staple food for the populations of many developing countries. Nevertheless, the nutritional value of sorghum as human food, as well as a feed material for animals, is impaired by its susceptibility to infection by fungi and fungal metabolites and this calls for urgent mitigation strategies to avoid health emergencies particularly in the poverty stricken countries of the sub Saharan Africa where this crop is a common staple.

Abstract An important role in human nutrition is played by fats, both of plant and animal origin. Fats are a category of foods rich in liposoluble vitamins and fatty acids. They are widely used in nutrition, in cosmetics, in the content of creams as well as in pharmaceutical products, in the form of dietary supplements, such as capsules with oils rich in fatty acids and the addition of liposoluble vitamins. The objective of this paper was to study the content in vitamins and fatty oils of two vegetable oils (wheat germ and sea buckthorn oils) and an animal oil (fish oil). The results show that these oils are rich in liposoluble vitamins, omega-3 fatty acids and omega-6 fatty acids. Hence, these oils can be used successfully in daily nutrition as substitutes for synthetic vitamins.

AIM: to determine whether there is a difference in the level of nutritional status of children across age groups, which would indicate the need for a change in caloric values of daily menus that are currently the same for all age groups in kindergartens in Split. PARTICIPANTS AND METHODS: The study was conducted during June 2020 in “Grigor Vitez” kindergarten in Split. All parents were asked to voluntarily complete a questionnaire with a guarantee of anonymity. The data on height and weight of children were used to calculate the nutritional indicators: the body mass index (BMI) and the percentile curves of the body mass index (% BMI), defined by gender and age. RESULTS: Data for 128 children aged 3 - 6.99 of the kindergarten "Grigor Vitez" were analyzed. Children in the selected kindergartens did not differ significantly in relation to the level of their nutritional status across age groups (3 – 3.99 years, 4 – 4.99 years, 5 – 5.99 years, 6 – 6.99 years). The highest average percentile was determined (60.30) in the age group of children aged 6.00 - 6.99, which is 12.89 points higher than the average value of the percentile of children aged 3.00 - 3.99 years, while no difference was found by testing (F = 0.936; p = 0.426). CONCLUSION: Only percentile values were compared between kindergarten groups, and so it can be concluded that meals may have appropriate energy values, which should be checked by analyzing the menus, and comparing them with the recommendations.

The article presents the results of an experiment to assess the effect of feed additive of humates on the growth rate and survival of different age groups of sterlet (Acipenser ruthenus L., 1758) and the conversion of fish feed for keeping in aquaculture. Based on the analysis of sources of scientific and technical information, it was found that humic drugs have long been used in crop production as growth stimulants and microfertilizers, and in animal husbandry - to normalize metabolism, treatment of digestive diseases and general stimulating effect on the body as a whole. Analysis of data on the use of humates in aquaculture indicated the presence of a positive effect of these compounds on individual cultivation objects. The small amount of information on the use of humates in fish farming has led to the conclusion that this direction of fish farming intensification is still insufficiently studied, and that studies of the impact of humic substances on aquaculture objects are not comprehensive and mainly concern the assessment of individual effects of biologically active action of the compounds on fish. The available information gave grounds to speculate about the prospects for the use of humates in sturgeon farming. To test this assumption, a series of experiments was conducted on the feeding of sterlet feed with the addition of sodium humate. The research was conducted in 2018, 2020 and 2021, in the production conditions of the cage fishery, located on the Kaniv Reservoir. The effect of different concentrations of sodium humate feed additives on one- and two year old sterlet was evaluated. It was found that the addition of sodium humate to fish feed in concentrations of 60, 100, 120 and 200 mg / kg of feed did not significantly affect the growth rate of sterlet. Thus, the advantage of experimental variants over the control for this indicator was insignificant, in the range of 1.0-1.6%. The effect of sodium humate on the survival of this year sterlet, for their cultivation in gardens. At the same time, the best, by 6.7-17.4%, feed conversion with the addition of humates by one- and two-year-old sterlet was noted. According to the results of the experiments, the best result was obtained in the variant using a feed additive of humates at a concentration of 200 mg / kg of feed. It is considered promising to continue the study of the impact of feed additives of humates on the growth and survival of valuable aquaculture objects under different housing conditions, in particular in closed recirculation aquasystems (RAS), as well as finding the optimal concentration of these additives in feed for different species and age groups of fish.

The most important area of any biophysical research is the study of the influx and conversion of energy in biological systems - bioenergy, which ensures the vital activity of the body. Analysis of the possibilities of stabilization of the human body from the standpoint of biothermodynamics is that it allows you to more fully and correctly assess the impact not only on biologically active substances, but also on human health. Analysis of the results of experimental and theoretical sources of biothermodynamics, the authors came up with the idea of positioning biologically active additives to the entropy component, which consists in the fact that drugs or surgery are required to treat a person. to any effect (reduction of chaos, therefore, a decrease in entropy). Important for understanding the thermodynamic approach to evaluating dietary supplements is that they do not increase the entropy of the system. The authors are convinced of the need to revise the paradigm for assessing biological activity (bioeffectiveness, biocorrective properties, functional capabilities) and the substances that underlie the transition from differential quantitative characteristics to an integral qualitative assessment of the overall effectiveness of oxidative processes in the body.
