Abstract Ternate City, North Maluku Province is a producer of nutmeg. The nutmeg that is cultivated comes from smallholder plantations. So far, post-harvest handling is still traditionally with simple equipment and poor hygienic which results in low-quality nutmeg. Efforts to improve post-harvest handling need to be done to improve the quality and farmer’s income. The purpose of this activity is to provide knowledge on good post-harvest handling of nutmeg in Ternate. One of the phases of activity carried out is through a survey to farmers to identify the organoleptic properties of nutmeg, as well as testing the water and vitamin C content of the nutmeg. The test results show that the drying process is not optimal because the resulting water content does not meet Indonesian National Standard (SNI), which is above 10%. The content of vitamin C in the flesh is 22 mg. Meanwhile, the organoleptic properties found that the colour, flavour, and taste were the most preferred by the farmer in the mace, seed, and flesh, respectively. The results of this activity can provide information about the characteristics of nutmeg that have been produced by Ternate farmers as a recommendation for proper post-harvest handling of nutmeg.

Nutmeg oleoresin microcapsule is the solid, liquid, and gas coating technology of the nutmeg fruit.  The purpose of this study was to know how mace nutmeg oleoresin microcapsules could preserve the broiler chicken meat at room temperature during 4 days of observation. The experimental design used was a Completely Randomized Design (CRD) consisting of 5 treatments with mace concentration of nutmeg microcapsules oleoresin (0, 50, 100, 150, and 200) ppm. The variables observed were water content, pH value, total microbes, and organoleptic properties (color, aroma, and texture). The results showed that mace nutmeg oleoresin microcapsules did not affect (p> 0.05)  water content and sensory properties of broiler chicken meat, but had a significant effect (p <0.05) on the pH value and total microbe at the same day of room temperature storage. Panel organoleptic test results on the level of preference for meat color, aroma, and texture of chicken meat were in the range score of 3 (somewhat like) to 4 (somewhat dislike). The treatments of nutmeg oleoresin did not affect (p> 0.05) on color, the aroma, and the texture of broiler chicken meat. This research shows that marinating using oleoresin microcapsules has not been effective as a preservative to broiler chicken meat at room temperature. Skin watermelon is a waste of fruit watermelon that pemanfaatanya as food still low. this study aims to know how to take advantage of the skin watermelon be sweets and find out the influence the addition of sucrose in candied skin watermelon. benefits of this study can optimize waste skin watermelon in order to have the economic value of a high. this study using the method consists of two stages of the first stage of immersion skin watermelon by using the calcium hydroxide, the second phase of boiling skin watermelon using sucrose. engineering data processing using the design of randomized complete (RAL), which consists of three treatment and three replicates. Of the test results organoleptic treatment is best  treatment A1 with water content 44,4%, sugar levels 10,27% and vitamin C is 2,41%.Keywords : sucrose, watermelon, skin watermelon

Abstract This study aims to determine and analyze the components of nutmeg cultivation at the farm level. The method used in the study was a survey method of plant cultivation. Sampling was done by using the multistage random sampling method. The area of reserach selected uses the pivate area startification. Each village was randomly sampled as many as 10 farmers, the total number of which was 20 sampled farmers. The results showed that farmers in Lonthor Village and Selamong Village, Banda Subdistrict, had not fully carried out intensive nutmeg cultivation that included land cultivation, seeding, fertilization, maintenance and post-harvest processing. This is because the existing nutmeg plants generally inherited from their parents so that it affects the decreased nutmeg production.

Penelitian ini bertujuan untuk menganalisis pengaruh natrium benzoat dan waktu penyimpanan terhadap mutu kimia dan mikrobiologi selai pala. Penelitian dilakukan secara acak lengkap dengan dua variabel yaitu natrium benzoat dan waktu penyimpanan dengan dua ulangan. Hasilnya menunjukkan bahwa konsentrasi natrium benzoat dapat mempertahankan kandungan vitamin C hingga penyimpanan 15 hari. Namun penambahan 250 mg natrium benzoat pada penyimpanan 15 hari dapat mengawetkan selai pala dengan kandungan vitamin C 0.138 mg/100g bahan, total asam 9.25 mg/100g bahan dan nilai pH 2.00. Sedangkan penambahan natrium benzoat 750 mg dapat mengawetkan selai pala hingga 60 hari ditunjukkan dengan jumlah koloni terendah (25 x 10-3 CFU/ml) yang memenuhi standar mutu Indonesia (SNI). Kesimpulannya, produksi selai pala dengan penambahan natrium benzoat layak untuk memperpanjang waktu penyimpanan.

Abstract.The antioxidant activity from methanol extract of nutmeg leaves (Myristica fragrans Houtt) was performed using 2,2-diphenyl-1-picrylhydrazil (DPPH). Antioxidant assay using DPPH of the methanol extract at a concentration of 25 ppm, 50 ppm and 100 ppm, showed high antioxidant activity with IC50 = 36.31 ppm and Vitamin C showed antioxidant activity with IC50 = 3.657 ppm. The methanol extract of nutmeg leaves were partitioned with chloroform to obtain chloroform extract of the leaves with IC50 = 28.30 ppm. isolation of the active compounds from the chloroform  extract of the nutmeg leaf using column chromatography yielded 6 mix fractions MFMD 1, MFMD 2, MFMD 3, MFMD 4, MFMD 5 and MFMD 6. The test results of antioxidant activity in very strong category is fractions MFMD 4, MFMD 3, MFMD 2, MFMD 6 and MFMD 5 with IC50 of each are 26.590 ppm, 27.239 ppm, 29.639 ppm, 39.766 ppm and 55.436 ppm, while antioxidant activity in a weak catagory is fraction MFMD 1 with IC50 is 126.270 ppm. This shows that the fraction of the leaf has a better inhibitory activity, because some of the active compound contained in the fraction can synergize in inhibiting free radicals, so that the IC50 value of the fraction is stronger than the extract. Keywords: Antioxidant, chromathography, Nutmeg (Myristica fragransHoutt), methanol extract, leaves

ABSTRACT The purpose of this research is to find out the nutrient content on five types of livestock manure compost which made of the mix of some livestock manure. This research uses three stages starting from the inventory, then analyzing the data, and finally interpretation of the data for the parameters: follow-up material, color, odor, moisture or water content, Reaction Fertilizer PH, Levels of C Organic, Levels of Total N, Total P, Total K, and Fe. The inventory stage is conducted in laboratory using fast accurate qualitative methods based on Soil Research Center manual guide (2015). The research showed the results of the analysis of physical quality of blackish brown color, soil smells, moisture content less than 50% have met the Indonesian National Standard (SNI) 19-7030-2004. However, based on Decree of the Minister of Agriculture no 28/Permentan/SR.130/B/2009, the water content obtained under the requirements is only in the range of 7.82 to 13.31 from 15-25% while the follow-up material showed <2%. The test results using a set of compost test tools showed N Total content of the livestock manure mixture compost that were made in the range of 2-3% (SNI standard >0,4% and Decree of the Minister of Agriculture <6%), P2O5 1-1.5% (SNI standard >0.1% and Decree of the Minister of Agriculture <6%), C-Organic 10% (SNI standard >9,8-32% and Decree of the Minister of Agriculture >12%), and Fe content 1000-2000 ppm (Decree of the Minister of Agriculture standard 0-8000 ppm), PH 5-7 (SNI standard 6,8 and Decree of the Minister of Agriculture standard 7,49).Key words: compost,  domesticated cattle

Chili is one of the spices that are consumed by many Indonesians. It has several vitamins, one of which isvitamin C and ß-carotene is a pro-vitamin A which plays an important role in the formation of vitamin A. The studywas conducted in August 2018 and sampling from the regions Toraja and Malino. This study aims to determine thelevels of vitamin C in several types of chilli obtained by using iodine titration method and the levels of ß-caroteneby spectrophotometric method at a wavelength of 460-480 nm. The chili sample was first measuredmorphologically, weighed by base and dry weight and its water content. The test results showed vitamin C levels ofPepper Katokon Toraja Capsicum annuum L. Var. Sinensis is tested with seeds (0.129% / 10 g) and seedless(0.182% / 10 g). Large Chili Capsicum annuum L. Var. Abreviatum Fingerhuth was tested with seeds (0.220% / 10g) and seedless (0.223% / 10 g). Curly Chili Capsicum annuum L. Var. Longum sendt was tested with seeds(0.537% / 10 g) and seedless (0.592% / 10 g). Test results showed the levels of β-carotene Pepper Katokon TorajaCapsicum annuum L. Var. sinensis were tested with seeds (5.888mg / kg) and seedless (6.073mg / kg). Large ChiliCapsicum annuum L. Var. Abreviatum Fingerhuth was tested with seeds (5.529mg / kg) and seedless (6.338mg /kg). Curly Chili Capsicum annuum L. Var. Longum sendt was tested with seeds (6.655mg / kg) and seedless(6.942mg / kg). Conclusion The highest content of vitamin C and ß-carotene was found in Curly Chili Capsicumannuum L. Var. Longum sendt without seeds.

Antioxidant activity test for the extract of ethyl acetate nutmeg stem bark (Myristica fragrans Houtt) was carried out using 2,2-diphenyl-1picrylhydrazil (DPPH). The test results of antioxidant activity of ethyl acetate nutmeg stem bark extract with DPPH method at a concentration of 25 ppm, 50 ppm and 100 ppm obtained IC50 value = 68.14 ppm with IC50 value of vitamin C (as positive control) 3.657 ppm. The results of column chromatographic separation of ethyl acetate nutmeg stem bark extract obtained 5 combined fractions namely MFEK 1, MFEK 2, MFEK 3, MFEK 4 and MFEK 5. The test results of the fraction antioxidant activity in a good category were the MFEK 1 fraction. The MFEK 2 fraction to MFEK 5 showed an antioxidant activity lower than compared  to the ethyl acetate extract. This shows that the ethyl acetate nutmeg stem bark extract has a better inhibitory activity, because there are several active compounds contained in the extract which can inhibit free radicals, so the IC50 value of the extract is better than the fractions.

The manufacture of Nata de soya uses additional chemicals in Zwavelzure Ammonia (ZA) which functions as a nitrogen source. ZA is dangerous if consumed at the maximum limit, so it needs to be replaced with natural ingredients. Sprout is one of the natural ingredients containing organic nitrogen. This mung bean sprout will be used as a nitrogen source to replace the function of ZA. This study aims to determine the effect of adding green bean extract and sugar as characteristics of Nata de soya. This study is prepared using a completely randomized design (CRD). According to the Standard National Indonesian (SNI), the best test results obtained are 98.76% water content, 12.68% vitamin C, 22.74% yield, 1.1 cm thickness, and less than 4.5% fiber content.ABSTRAKPembuatan nata de soya menggunakan bahan kimia tambahan berupa Zwavelzure Ammoniak (ZA) yang berfungsi sebagai sumber nitrogen. ZA berbahaya jika dikonsumsi dalam batas maksimum sehingga perlu diganti dengan bahan alami. Kecambah adalah salah satu bahan alami yang mengandung nitrogen organik. Kecambah kacang hijau inilah yang akan digunakan sebagai sumber nitrogen untuk menggantikan fungsi dari ZA. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan ekstrak kecambah kacang hijau dan gula sebagai karakteristik nata de soya. Penelitian ini menggunakan metode Rancangan Acak Lengkap (RAL). Didapat hasil uji terbaik kadar air 98,76%, vitamin c 12,68%, rendemen 22,74%, ketebalan 1,1 cm dan kadar serat kurang dari 4,5% sesuai Standar Nasional Indonesia (SNI).
