Among the problems of hygiene of food products special attention is paid to the prophylaxis of human illnesses which occur as a result of the use of such quite exotic product as snails’ meat that can be affected by microflora, as well as to the improvement of hygienical conditions of breeding, transporting and processing of meat. Microorganisms get to the organism of snails systematically and their presence confirms certain mechanism of infection of gastropods molluscs and in such way characterizes the object from the point of view of potential danger. Food product including snails’ meat is a favourable medium for their development. In order to prevent the development of microorganisms it is necessary to minimize or to limit the influence of the factors of environment on the organism of snails. Air, soil and water belong to such factors. At certain conditions pathogenic microbes get to the intestines of snails from the environment and can penetrate to other organs and muscles. As a result, meat from such snails is of low quality and biodegradable. It was determined in the conducted research that for snails breeding it is necessary to minimize negative influence of environmental factors of air, soil and water. In the premises where snails are kept when it is cold the amount of dust and consequently the amount of microorganisms depends on the way of premises cleaning, organiation of production process, application and efficiency of ventilation, etc. Contamination of snails, and therefore, of prepared products by microflora leads not only to considerable economic loss but also can become a reason of getting of poisonous substances and pathogenic bacteria to the human organism that cause serious diseases which can be dangerous for life.

The objective of this research was to evaluate waters quality in Pari island waters for aquaculture purpose based on bacteriological information conducted in Mei and September 2011. Microbiological parameters analyzed were total density of bacteria for coliforms, E.coli, pathogenic, heterotrophic, halotoleran, phosphate-nitrate-ammonia breaker, and total cells. Method to analyze coliform bacteria was filtration, identification of pathogenic bacteria using biochemical test, density analises for heterotrophic bacteria, analises for phosphate-nitrate-ammonia breaker bacteria using pour plate, and total cell using Acridine Orange Epifluorescence Microscopy. Results showed that the abundance of total coliform cell was about 1000-7000 colony forming unit (cfu)/100 ml. The abundance of heterotrophic, halotolerant, phosphate-nitrate-ammonia bacteria in seawater was (3.6-4.3)x105 cfu/ml, (1.1-1.3)x105 cfu/ml, (0.5-3.44)x103cfu/ml; and (3.6-6.7)x105 cfu/ml, (1.6-2.7)x105 cfu/ml, (0.6-5.22)x103 cfu/ml in sediment, respectively. The total cell of bacteria was (0.05-2.1)x107cells/ml. The dog-conch (Strombus turturella) and blood-clamps (Anadara granosa) can survive in Pari Island and there was a significant increase in sea grass litter with growth average of 0.67 mm/day and 0.90 mm/day. During snails and clamps growth, there were found several genus of pathogenic bacteria such as Salmonella, Vibrio, Aeromonas, Pseudomonas, Citrobacter, Proteus, Shigella, Hafnia, and Yersinia. The results showed that Pari island waters was suitable for developing shellfish aquaculture dog conch and blood clamps. Keywords: bacteria, parameter, shellfish, aquaculture.

There is a common point of view in Egyptology that Memphis was a state capital since the earliest times and that its protecting gods were Ptah and his spouse Sekhmet. Arguing this concept, the author tries to find the reason why a pyramid city of Pepi I — Mennefer — became a core of the future capital. The main conclusion is following: Constructing his pyramid complex, Pepi I probably included into it a cult center of Habes where Bastet and Imhotep, a high priest of Ra, were worshiped. Imhotep, a companion of the king Djoser, was known as a priest and charmer who tamed the fiery forces of Sirius associated with Bastet, after which the great drought was over. To commemorate this, New Year celebration and the first sun calendar were established. Imhotep’s tomb became an important cult place, where ceremonies important for surviving of the Egyptian state were conducted. In the second half of the Old Kingdom period the Nile started to flood much less, which led to the decline of agriculture. Thus, the role of the cult center of Habes and Imhotep grew greatly. By including Habes, Pepi protected the dominion of his pyramid city from negative influence of Bastet and decreased flooding. The fact that Mennefer was a successor of the aforementioned cult center determined its capital functions in future.

El actual trabajo afronta una de las problemáticas más apremiantes de los actuales momentos como es el alto índice de dispendio de drogas en las Instituciones Educativas, que afectan considerablemente a la sociedad ecuatoriana. Su objetivo es analizar los lineamientos que permitan mejorar la orientación familiar, y desarrollar relaciones interpersonales apropiadas que fomenten la unión familiar, practicar principios, fomentar valores morales, y que los jóvenes aprendan a decir “no” ante una eventual propuesta de consumir compuestos prohibidos, que lo único que se consigue es materializarse en un estado no idóneo ante la comunidad, considerar que las consecuencias para la salud son devastadoras, personas que a temprana edad padecen de enfermedades que en muchas ocasiones son gravísimas, causando malestar no solamente propio sino a la familia. Puedo mencionar como aporte de este artículo; y en base a resultados establecidos que resulta primordial e importante mantener la asistencia de un profesional especializado en psicología, diálogos científicos y motivadores, conjuntamente con atención médica provocarán en la persona afectada la erradicación del consumo de drogas. Constan muchos factores que causan gran influencia negativa en las familias, partiendo de que actualmente el mundo vive la tendencia del consumismo lo que influye en sobremanera que exista menos dialogo en el hogar, la aparición de la tecnología es otra de las situaciones adversas. Los profesionales encargados de brindar orientación familiar deben considerar siempre, que el comportamiento del ser humano debe ser comprendido desde el punto de vista de su forma de pensar, solo así se desarrollara una cultura que permita a las familias tomar las decisiones acertadas al momento de formar a sus hijos, lo que en un futuro se evidenciará como seres útiles a la sociedad. Its objective is to analyze the guidelines for improving family orientation, and develop appropriate interpersonal relationships that promote family unity, value the principles, and that young people learn to say "no" to a possible proposal to use prohibited drugs, that the only thing that is achieved is to materialize in an unsuitable state before the community, to consider that the consequences for health are devastating, people who at an early age suffer from diseases that in many occasions are very serious, causing discomfort not only their own but also the family. I can mention as contribution of this article; and based on established results that it is essential and important to maintain the assistance of a professional specialized in psychology, scientific and motivational dialogues, together with medical care, will cause the affected person to eradicate drug use. There are many factors that cause great negative influence on families, based on the fact that the world currently lives the trend of consumerism which greatly influences that there is less dialogue at home, the emergence of technology is another of the adverse situations. The professionals responsible for providing family counseling should always consider that the behavior of the human being should be understood from the point of view of their way of thinking, only in this way will a culture be developed that allows families to make the right decisions when forming to their children, which in the future will be evident as useful beings to society. Avian colibacillosis, caused by avian pathogenic Escherichia coli (APEC), is one of the major infectious diseases of poultry that bring about great economic loss for the Bangladesh poultry industry. The present study aimed to determine the virulence genes of avian pathogenic Escherichia coli (APEC) from cases of colibacillosis in poultry at the Noakhali district of Bangladesh. Currently, virulence-associated gene profiles of APEC isolates were investigated by polymerase chain reaction (PCR). A total of 24 (twenty-four) Escherichia coli isolates were collected and presumptively identified from 8 (eight) colibacillosis cases from 4 commercial broiler poultry farms (2 broilers per farm) in Noakhali, Bangladesh. The pathogenesis of Escherichia coli involves a wide range of different virulence genes. At this point, four virulence genes, iutA, hlyF, iroN, and iss were detected by PCR analysis. It has been observed that iutA, iss, hlyF, and iroN genes were found in 7(29.16%), 20(83.33%), 22(91.66%), and 24(100%) APEC isolates respectively. Furthermore, out of the twenty-four APEC isolates, six (25%) isolates had four virulence genes, fourteen (58.33%) isolates carried at least three virulence genes, three (12.5%) isolates carried two genes and one (4.16%) isolates had one virulence gene. Most importantly. six types of virulence gene profiles existed within the APEC isolates from which profile number 3 (hlyF, iroN, iss) having 13 (54.16%) isolates were predominant. The occurrence of APEC isolates of this region which is responsible for avian colibacillosis cases can be a matter of concern from the public health point of view. Future investigations will be able to utilize these virulence genes to identify APEC in Bangladesh helping in the diagnosis and prevention of colibacillosis in poultry. Drought is the major problem in India and occurrence at the time of critical growth stages, reduce crop yield significantly. The National Rice Research Institute, Cuttak, Odisha has developed so many drought tolerance rice varieties to reduce the economic loss due to drought. Krishi Vigyan Kendra, Malkangiri introduced NRRI released two rice varieties i.e. Sahbhagi Dhan and Satyabhama at framers' field to evaluate the performance of these drought tolerant varieties in South Eastern Ghat Zone of Odisha. The highest plant height was observed with the rice variety Satyabhama (104.1 cm). But, overall performance of Sahbhagi Dhan was better as compare to Satyabhama and local check verity (Khandagiri). Sahbhagi Dhan gave highest yield of 36.5 q/ha, which was statistically differed from others. Correlations study for Sahbhagi Dhan was assessed and observed the positive correlation for grain yield with all studied characters except plant height. For economic point of view, Sahbhagi Dhan recorded highest net return of Rs.19, 925/- per ha along with B:C ratio of 1.6 as compared to the rest two varieties.

Three techniques to prevent moisture transfer in a multidomain food system constituted by a cookie in contact with a moist filling were investigated: reducing the water activity difference between components, reducing the effective moisture diffusivity of the cereal-based component, and applying an edible moisture barrier at the interface between components. Shelf-life of the food product was extended by 6 days by decreasing the water activity of the moist filling in contact from 0.99 to 0.64 (cookie aw being 0.23, 20°C). Decreasing effective moisture diffusivity from 1.56 to 0.99*10-11 m²/s by the addition of 2.35 g of fat in the formulation of the cookie was limited by technological and organoleptic considerations and allowed an extension of shelf-life of 2 more days. From a technical and nutritional point of view, the application of a sprayed edible barrier at the surface of the cookie was the more effective solution increasing shelf life of almost 8 days for only 1.7 g of fat per cookie.

PM2.5 pollution causes great health hazards, which will finally result in much economic loss. In China, it is first time to take PM2.5 as a general limitation factor in the revised version of "Ambient Air Quality Standard". In this work, we take Beijing as investigation objective, choose five kinds of typical health impacts, and make rough economic estimation of the potential benefits from the decrease of PM2.5 concentration through the epidemic-doses model in a quantitative point of view. Assuming the PM2.5 pollution is controlled well and satisfies the requirement of Grade 2 and 1 of new standard, 1681 and 2269 million Yuan will be saved in Beijing considering only health aspects. So it is necessary to take PM2.5 into the new ambient air quality standard as a general indicator, which is overall beneficial for environment and economy.

ABSTRACT Preservation by pickling has been used for many years to extend the shelf life of various types of food products. By storing meat products in a brine solution containing an organic acid, salt, spices, as well as other preservatives, the pH of the product is reduced, thus increasing the safety and shelf life of the product. Pickling may involve the use of heated brines to further add to the safety of the food product. When precooked, ready-to-eat (RTE) sausages are pickled with a heated brine solution, the process is referred to as hot filling. However, hot filling has been shown to affect the clarity of the brine, making the product cloudy and unappealing to consumers. Because of the potential quality defects caused by higher temperatures associated with hot fill pickling, cold fill pickling, which uses room temperature brine, is preferred by some pickled sausage manufacturers. Because little information exists on the safety of cold fill, pickled sausages, a challenge study was designed using a brine solution (5% acetic acid and 5% salt at 25°C) to pickle precooked, RTE sausages inoculated with a pathogen cocktail consisting of Salmonella Typhimurium, Salmonella Senftenberg, Salmonella Montevideo, Listeria monocytogenes, and Staphylococcus aureus. All pathogens were reduced ~6.80 log CFU/g in 72 h when enumerated on nonselective media. On selective media, Salmonella and L. monocytogenes decreased 6.33 and 6.35 log CFU/g in 12 h, respectively whereas S. aureus was reduced 6.80 log CFU/g in 24 h. Sausages experienced significant (P ≤ 0.05) decreases in pH over the 28 days of storage, whereas no significant differences were observed in water activity (P =0.1291) or salt concentration of the sausages (P =0.1445) or brine (P =0.3180). The results of this experiment demonstrate that cold fill pickling can effectively reduce and inhibit bacterial pathogens.

Listeriosis occurs in a variety of animals including humans, and most often affects the pregnant uterus, the central nervous system (CNS) or the bloodstream. During pregnancy, infection spreads to the foetus, which will either be born severely ill or die in-utero. In non-pregnant animals, listeriosis usually presents as meningitis, encephalitis. In humans, infection most often occurs in the immunocompromised and elderly, and to a lesser extent the pregnant woman, the unborn, or the newly delivered infant. Infection can be treated successfully with antibiotics, however 20–40% of human cases are fatal..In domestic animals (especially in sheep and goats) listeriosis usually presents as encephalitis, abortion, or septicaemia, and is a cause of considerable economic loss.The genus Listeria comprises six species of Gram-positive bacteria. Almost all cases of listeriosis are due to Listeria monocytogenes although up to 10% of cases in sheep are due to Listeria ivanovii.Listeriae are ubiquitous in the environment worldwide, especially in sites with decaying organic vegetable material. Many animals carry the organism in the faeces without serious infection. The consumption of contaminated food or feed is the principal route of transmission for both humans and animals, however other means of transmission occur.Human listeriosis is rare (<1 to > 10 cases per million people in North America and Western Europe), but because of the high mortality rate, it is amongst the most important causes of death from food-borne infections in industrialized countries. In the UK, human listeriosis is the biggest single cause of death from a preventable food-borne disease. Listeriosis in domestic animals is a cause of considerable economic loss. Control measures should be directed towards both to exclude Listeria from food or feed as well as inhibiting its multiplication and survival. Silage which is spoiled or mouldy should not be used, and care should be taken to maintain anaerobic conditions for as long as possible.Dietary advice is available for disease prevention, particularly targeted at ‘at risk’ individuals to modify their diet to avoid eating specific foods such as soft cheese and pâté.

Detection of pathogenic microbes as well as antibiotic residues in food animals, especially in chicken, has become a matter of food security worldwide. The association of various pathogenic bacteria in different diseases and selective pressure induced by accumulated antibiotic residue to develop antibiotic resistance is also emerging as the threat to human health. These challenges have made the containment of pathogenic bacteria and early detection of antibiotic residue highly crucial for robust and precise detection. However, the traditional culture-based approaches are well-comprehended for identifying microbes. Nevertheless, because they are inadequate, time-consuming and laborious, these conventional methods are not predominantly used. Therefore, it has become essential to explore alternatives for the easy and robust detection of pathogenic microbes and antibiotic residue in the food source. Presently, different monitoring, as well as detection techniques like PCR-based, assay (nucleic acid)-based, enzyme-linked immunosorbent assays (ELISA)-based, aptamer-based, biosensor-based, matrix-assisted laser desorption/ionization-time of flight mass spectrometry-based and electronic nose-based methods, have been developed for detecting the presence of bacterial contaminants and antibiotic residues. The current review intends to summarize the different techniques and underline the potential of every method used for the detection of bacterial pathogens and antibiotic residue in chicken meat.
