В публикации представлены результаты анализа органолептических и физико-химических показателей столовых сухих виноматериалов из винограда сорта Кокур белый (2015-2017 гг. урожая), произрастающего в Судакском районе Республики Крым, полученных с использованием штаммов дрожжей I-527 (Раса 47-К) и I-271 (Феодосия I-19) из Коллекция микроорганизмов виноделия Магарач и препаратов активных сухих дрожжей производства Martin Vialatte , Франция: Vitilevure KD , Vitilevure 58W3 , Vitilevure Quartz M05 . Все исследуемые виноматериалы соответствовали требованиям ГОСТ 32030-2013 для столовых сухих вин: объемная доля этилового спирта составляла в среднем 11,2-12,0 об., массовая концентрация сахаров 1,0-1,4 г/дм3, титруемых и летучих кислот 6,1-6,5 и 0,41-0,54 г/дм3 соответственно. В результате проведенных исследований установлено влияние коллекционных штаммов дрожжей и препаратов активных сухих дрожжей на образование вторичных продуктов брожения (высших спиртов, сложных эфиров, альдегидов и терпеновых соединений) и формирование аромата столовых сухих виноматериалов из крымского аборигенного сорта винограда Кокур белый. Использование штаммов дрожжей I-527 (Раса 47-К) и Vitilevure KD позволило получить виноматериалы с ярким сортовым ароматом цветочно-медового направления с фруктовыми оттенками и свежим, гармоничным вкусом. В этих виноматериалах отмечено высокое содержание сложных эфиров (58,9-62,3 мг/дм3) и терпеновых соединений (4,81-5,42 мг/дм3) по сравнению с другими исследуемыми виноматериалами. При использовании коллекционного штамма дрожжей I-271 (Феодосия I-19) были получены виноматериалы с приглушенным ароматом и полным, гармоничным вкусом. Использование препарата активных сухих дрожжей Vitilevure 58W3 привело к усилению пряных оттенков в аромате виноматериалов, а Vitilevure Quartz M05 к усилению медовых оттенков. Коллекционный штамм дрожжей I-527 (Раса 47-К) и препарат активных сухих дрожжей Vitilevure KD рекомендованы для производства столовых сухих виноматериалов из винограда сорта Кокур белыйThe paper synthesizes analytical data on organoleptic and physicochemical parameters of table base wines from Kokur beliy grapes (2015-2017 harvest) cultivated in the Sudaksky region of the Republic of Crimea, obtained using yeast strains I-527 (Rasa 47-К) and I-271 (Feodosia I-19) from the Collection of microorganisms for winemaking Magarach and dry active yeast preparations produced by Martin Vialatte, France: Vitilevure KD, Vitilevure 58W3, Vitilevure Quartz M05. All the studied base wines met the requirements of GOST 32030-2013 for table dry wines: the volume fraction of ethyl alcohol made on average 11.2-12.0 , total sugars 1.0-1.4 g/dm3, titrated and volatile acids 6.1-6.5 и 0.41-0.54 g/dm3, respectively. The study confirmed the impact of collection yeast strains and active yeast preparations on formation of secondary fermentation products (higher alcohols, esters, aldehydes and terpenic compounds) and aroma dvelopment of table dry base wines obtained from Crimean autochthonous grapevine cultivar Kokur beliy. The use of yeast strain I-527 (Rasa 47-К) and Vitilevure KD produced base wines characterized by rich varietal bouquet with floral and honey flavors and fruity overtones, and fresh, well-balanced taste. The base wines exhibited high ester (58.9-62.3 mg/dm3) and terpenic compounds content, as compared to other base wines analyzed. When collection yeast strain I-271 (Feodosiya I-19) was used, we obtained base wines characterized by muted nose, and full-bodied balanced taste. The use of active dry yeast preparation Vitilevure 58W3 enhanced spicy overtones in the aroma of the base wines, while Vitilevure Quartz M05 preparation strengthened honey hints. Collection yeast strain I-527 (Rasa 47-К) and active dry yeast preparation Vitilevure KD are recommended for use in production of table dry base wines from Kokur beliy grapes.

<p style="text-align: justify;">The present paper describes the various possibilities of yeast addition and the advantages of active dry yeasts over yeast suspensions. The registered differences between selected yeast strains as well as between active dry yeast preparations, made from the same yeast strain are discussed in detail. The acceptance of active dry yeasts as well as their importance on the actual market are briefly discussed. Finally the use of some parameters for a more objective evaluation of the quality of yeast strains is briefly mentionned.</p>

Flavour in Scotch malt whisky is a key differentiating factor for consumers and producers alike. Yeast (commonly Saccharomyces cerevisiae) metabolites produce a significant amount of this flavour as part of distillery fermentations, as well as ethanol and carbon dioxide. Whilst yeast strains contribute flavour, there is limited information on the relationship between yeast strain and observed flavour profile. In this work, the impact of yeast strain on the aroma profile of new make spirit (freshly distilled, unmatured spirit) was investigated using 24 commercially available active dried yeast strains. The contribution of alcoholic, fruity, sulfury and sweet notes to new make spirit by yeast was confirmed. Generally, distilling strains could be distinguished from brewing and wine strains based on aroma and ester concentrations. However, no statistically significant differences between individual yeast strains could be perceived in the intensity of seven aroma categories typically associated with whisky. Overall, from the yeast strains assessed, it was found that new make spirit produced using yeast strains marketed as ‘brewing’ strains was preferred in terms of acceptability rating.

The article examines the impact of rapidly developing Internet technologies on the channels and methods of promoting tourist products. The authors compare two models of advertising - the traditional (offline) and digital-model in conditions of promotion of the product through the Internet. Using the example of the tourist portal of the Republic of Karelia, the authors analyze the channels of promotion (SEO-promotion, SMM-promotion in social networks, content marketing). Based on the information received from the analytical tool Yandex Metrics for the tourist portal of Karelia and third-party site analysis services, the site's quantitative and qualitative traffic is analyzed - the geography of visitors, their age structure, seasonal variations of views, the time spent by the user on the site, and the sources of this traffic. Based on the data obtained, the authors disclose the possibilities of a comprehensive analysis of the potential guests’ interest in tourist products of the region presented on the portal. It is recommended to focus on the already popular routes, while changing the form of presentation and the quality of the information about not very popular tourist products. Based on the social network Instagram, the article considers subjective user preferences of types of tourism in Karelia and tourist attractions of the region. Such analytical data coming in the monitoring mode can be used to develop the marketing strategy of the region and its tourism products.

A series of yeast strains was tested in order to evaluate their catalytic potential in biocatalysis of one-pot indolizine’s synthesis. Yeast cultivation was performed in a submerged system at 28 °C for 72 h at 180 rpm. An assessment of the reagents’ toxicity on yeast viability and metabolic functionality concluded that the growth potential of three Yarrowia lipolytica strains were least affected by the reactants compared to the other yeast strains. Further, crude fermentation products (biomass and cell-free supernatant)—obtained by submerged cultivation of these yeasts—were used in multistep cascade reactions for the production of fluorescent indolizine compounds with important biologic activities. A whole–cell catalyzed multicomponent reaction of activated alkynes, α-bromo-carbonyl reagents and 4,4′-bipyridine, at room temperature in buffer solution led to the efficient synthesis of bis-indolizines 4a, 4b and 4c, in good-to-excellent yields (47%–77%). The metabolites of the selected Y. lipolytica strains can be considered effective biocatalysts in cycloaddition reactions and the high purity and bioconversion yields of the synthesized indolizines indicates a great potential of this type of “green” catalysts. Seeds of Triticum estivum L. were used to investigate the impact of the final products on the germination and seedling growth. The most sensitive physiological parameters suggest that indolizines, at the concentrations tested, have non-toxic effect on germination and seedling growth of wheat, fact also confirmed by confocal laser scanning microscopy images.

Subject. To achieve a high level of economic security is a key priority of national development. Employment reveals one of the most important aspects of social development of the individual that is associated with his or her needs satisfaction in the sphere of employment and is boon to economic security. Objectives. The purpose of the study is to show the impact of unemployment on economic security in employment. Methods. I apply such scientific methods as dialectical, historical and logical unity, structural and functional analysis, traditional techniques of economic analysis and synthesis. The methods of multivariate statistical and comparative analysis serve as a methodological basis of the study. To determine the indicator of unemployment, I use the band theory. Results. I underpin the growing role of employment in ensuring economic security. The paper presents a comprehensive assessment of the unemployment status and a comparative analysis of the indicator in the Republic of Mordovia, the Volga Federal District, and the Russian Federation as a whole. I identify trends in the average duration of unemployment, show the distribution of unemployed by level of education and age groups. Conclusions. The average annual unemployment rate in the Republic of Mordovia is lower than in Russia and the Volga Federal District. The findings may be useful for public authorities to substantiate their employment policy at both macro- and meso-levels, for designing programs and strategies for socio-economic development of regions and the social security doctrine, as well as in practical activities of employment services.

Subject. This article discusses the role of social infrastructure in the national economy and analyzes the relationship between the notions of Infrastructure, Service Industry and Non-Productive Sphere. Objectives. The article aims to outline a methodology for development of the social infrastructure of Russia's regions. Methods. For the study, we used the methods of statistical and comparative analyses. The Republic of Crimea and Rostov Oblast's social infrastructure development was considered as a case study. Results. The article finds that the level of social infrastructure is determined by a number of internal and external factors. By analyzing and assessing such factors, it is possible to develop promising areas for the social sphere advancement. Conclusions. Assessment and analysis of internal factors largely determined by the region's characteristics, as well as a comprehensive consideration of the impact of external factors will help ensure the competitiveness of the region's economy.

The process of globalization, which many times is considered as new world order is affecting all spheres of modern society but also the media. In this paper specifically we will see the impact of globalization because we see changing the media access to global problems in general being listed on these processes. We will see that the greatest difficulties will have small media as such because the process is moving in the direction of creating mega media which thanks to new technology are reaching to deliver news and information at the time of their occurrence through choked the small media. So it is fair to conclude that the rapid economic development and especially the technology have made the world seem "too small" to the human eyes, because for real-time we will communicate with the world with the only one Internet connection, and also all the information are take for the development of events in the four corners of the world and direct from the places when the events happen. Even Albanian space has not left out of this process because the media in the Republic of Albania and the Republic of Kosovo are adapted to the new conditions under the influence of the globalization process. This fact is proven powerful through creating new television packages, written the websites and newspapers in their possession.

Introduction.The study of the elemental status of the population of individual regions of the Russian Federation with the purpose of scientific development and implementation of measures for elimination of revealed elementosis is a promising direction for preventive medicine.The aim of the studyis to study the elemental status of the adult able-bodied population of the Republic of Buryatia, which was part of the Siberian Federal district (SFD) until 2018.Materials and methods.The analysis was performed by inductively coupled plasma mass spectrometry (ICP-MS) on the basis of the accredited laboratory of “Center of biotic medicine”. (Moscow; ISO 9001: 2008 certificate 54Q10077 from 21.05.2010). The content of chemical elements in the hair of 130 adults (102 women and 28 men) aged 25–50 years was studied. This indicator serves as an indicator in assessing the impact of the environment on the human body. Methods of nonparametric statistics were used for mathematical processing of the data.Results.For women living in the Republic of Buryatia, the maximum values of Zn, increased levels of Cu, Li, Si were revealed; for men — the maximum values of Mg, Cr, Si, increased levels of P, Li, Se, V, Pb. Minimum values were found for P, Fe, V. Elemental status indicates a significant degree of prevalence of essential trace element deficiencies and electrolyte imbalance. The obtained data can be used as reference values for the content of chemical elements in the hair of adults living in the Republic of Buryatia.Conclusions:Elemental analysis of the population of the Republic of Buryatia indicates imbalances among the adult working-age population.

The article considers the impact of the colonial past of some countries in sub-Saharan Africa and its effect on their development during the post-colonial period. The negative consequences of the geopolitical legacy of colonialism are shown on the example of three countries: Nigeria, the Democratic Republic of the Congo and the Republic of Angola, expressed in the emergence of conflicts in these countries based on ethno-cultural, religious and socio-economic contradictions. At the same time, the focus is made on the economic factor and the consequences of the consumer policy of the former metropolises pursuing their mercantile interests were mixed.

This article analyzes the most current security issues for the Republic of Moldova that are part of the regional security context of Eastern Europe –the region that can be considered the epicenter of international tensions through which the„geopolitical line of fracture”passes. The geographical position of the Republic of Moldova makes this state particularly sensitive to any negative trends in theregion. Growing of international tensions creates security threats and complicates economic development. From a historical point of view, Moldova has repeatedly fallen victim by the confrontation of the great powers. Therefore, the Republic of Moldova has a vital interest in preventing a new conflict in Eastern Europe. This article is based on a number of assumptions made by changes in the European security environment, such as the „shift of weight” to the East, strategic uncertainty, increasing the role of non-state actors, the situation in eastern Ukraine, etc. Based on these assumptions, this article makes an attempt to outline the potential role of the Republic of Moldova in the Eastern European security system, taking into account the desideratum for integration of the republic into the European Union. Other relevant factors will be taken into account for shaping the role of the Republic of Moldova in the European security system, namely: the security deficit; the impact of NATO and EU security policy; the rebirth of the project to create a regional defense alliance, etc. This article will largely take into account the military aspects of security.
