Natural or local yeasts are microorganisms from natural ingredients obtained from fermentation without the need for artificial additives. The objectives of the present study were 1.) to evaluate the physical quality of potato doughnuts produced from the local yeast derived from residue of red fermented palm sap, 2) to obtain the best treatment from the use of local yeast in making doughnuts. In the fermentation process, yeast converts sugar and carbohydrates in the dough into carbon dioxide gas (CO2) and alcohol. Doughnuts are made from wheat flour, but the addition of potato paste can improve the texture so that it is softer and tender due to the interaction between gelatinized starch and gluten but can reduce its swelling power.             The experiment was designed using a completely randomized design (CRD) with three treatments and five replications to produce 15 experimental units. The treatments were a) Control (commercial yeast); b) Wheat flour: potato paste: local yeast; 2:1:1; c) Wheat flour: potato paste: local yeast; 2:1:2 and d) Wheat flour: potato paste: local yeast; 2:1:3. The results showed that the best treatment formula was obtained in the treatment B (wheat flour: potato paste: local yeast; 2:1:1) with 20,6% moisture content,  2,09% protein content and 3,644 color value (very like), 3,800 taste value (very like) and texture/tenderness with a value of 1032,500.

Since Nusantara Malay Archipelago is a maritime community, its indigenous knowledge and local wisdom is largely connected to sea life and water. Nevertheless, there are also mountains, valleys, forests and flatlands; hence, local knowledge is also connected to these landscapes and spaces. This article submits the environmental paradigm of Nusantarazation  and its interconnectedness with local ecological knowledge (LEK) as well as reports on findings in the form of case exemplars in the field related to these constructs.  The authors argue that Nusantarazation  is an epistemological paradigm which is able to decolonize environment knowledge and provide an integrative framework for LEK, sustainable practices and technological know-how.  The spatial scope covers mainly areas in Malaysia and Indonesia as these are part of Nusantara.  Among the key findings are that LEK tend to be accompanied with seemingly unscientific or mythical narratives but are translated into practices that promote sustainability either in the land or waters.  This article also capture various local constructs and beliefs that capture the underlying value systems which are integral to conservation and ecological balance. Nevertheless, the Nusantarazation  environmental paradigm encounters challenges from colonial legacies of power modern practices and industrial complex that threaten to harm the environment and humanity.

In national development in Indonesia, the agricultural sector is still a very decisive economic force, because around 100 million Indonesians work in the agricultural sector. During this pandemic, support is needed for economic recovery, including how to maintain the availability of sufficient food for the community. Efforts to support food security, among others, by increasing the use of land that is more optimal, and also reducing the risk of crop failure, including the intercropping farming system. The objectives of this study were (1) to determine the production factors that influenced the intercropping of corn and peanuts, (2) to determine the production factors (land area, seeds, fertilizers, drugs and labor) which had the most dominant influence on the intercropping of corn and peanuts. In determining the research area, East Nusa Tenggara deliberately chose East Nusa Tenggara, because it has criteria in accordance with the research objectives, namely Patawang Village, Umalulu District, East Sumba Regency, East Nusa Tenggara, where the staple food of most of the population is maize, and the sampling is done census, where the population is small so that all populations are taken as samples, namely 15 samples. The data analysis uses cost analysis, revenue analysis and income or profit analysis, while to test the hypothesis using: (1) multiple regression analysis, (2) multiple correlation analysis, and (3) partial correlation analysis. From the results of the discussion, it can be concluded that together the production factors of land area, seeds, fertilizer, medicines and labor affect the intercropping of corn and peanuts, and fertilizer is the production factor that most influences it. Critical education has a very strategic role in supporting and accelerating the formation of a civilized democratic society. Its existence is able to change the world, create the culture, carve out the history, engineer the world to be more fair and humane, even to change concepts, ideas, systematics, and strength. Implementation of critical education is based on three dimensions: the pedagogic practical, normative, and cultural ideology dimensions. Critical education process is formulated as a process of cultural dimension. The main function and target of critical education is "self-awareness", or "critical awareness". The concoction of Indonesian nationalism as a reflection of critical education has been clearly being pioneered since revolution era by R.A. Kartini, Budi Utomo, and K. H. Dewantara in the form of the establishment of some schools and the freedom of indigenous children to get the education. More qualified human resources can be cultivated through a critical education.

Balinese has a stratified system called anggah-ungguhing basa Bali.  The existence of this system is distinguished it from Indonesian and / or the other regional languages in Indonesia. In addition, Balinese has two major dialects, namely the Bali Aga dialect and the Bali Dataran dialect. The Bali Aga dialect does not recognize the language level system, on the contrary, in the Bali Dataran dialect this system greatly influences the use of Balinese language itself. The difference in this system was also reflected in its morphological system, especially in forming the words with nasal prefix. It was interesting to be observed. In relation with that, this writing focused on the Balinese nasalization system. The purpose of this research was to find out the rules of Balinese nasalization. The data in this study were collected by using literature study and observation methods. Then, the data were analyzed using descriptive analysis methods. The theory used in investigating this problem was   morphology theory. After analyzing the data that had been collected, it was found that the nasal prefix {N-} in Balinese which was affixed to the original form or the basic form which was preceded by certain phonemes, that had already changed form. The form of this changing was called an allomorph. Thus the allomorphs found from the merging of the nasal prefixes were: n- {n-}, m- {m-}, ng- {ŋ-}., And ny- {ñ-}.
