Chayote, tomato, and carrot are vegetable commodities that are easily found in Indonesia. The way to increase the economic value of chayote, tomatoes, and carrots is to diversify products, one of which is processed cocktail products. Cocktails candied products are package in cups, jars, or cans with add of syrup as a filling medium or solution. In general, cocktails did make from fruits, so that to process cocktails from vegetables, proper formulations and methods are needed to be well received by consumers. This research will study the exact formulation in the manufacture of products cocktail vegetable filler that cocktail of vegetables acceptable to consumers based on quality organoleptic and chemical quality (pH and total dissolved solids). The raw materials used consist of chayote, tomatoes, carrots, sugar, water, and citric acid. The packaging material used is a glass jar. The data analysis technique in this study used the D-optimal Mixture Design method to get the most optimum formula. The results of one research on organoleptic quality in the form of hedonic tests on the color, aroma, texture, and taste of vegetable cocktails based on ANAVA Design Expert processing showed results that were not significantly different from the 16 recommended formulations. The results of the chemical quality research in the form of pH and TDS showed different results. Based on the organoleptic quality and chemical quality as a predictive model, the optimal formulation was obtained with a ratio of 62.511% water, 37.138% sugar, and 0.352% citric acid with a desirability value 0.823.

The main raw materials of rose milk beverage are Yunnan red roses and milk. By analyzing the proportions of rose juice to milk, sucrose, citric acid and sodium alginate, and by taking flavor, taste, color and tissue state as the evaluation parameters, we conducted single-factor experiments and orthogonal experiments, and identified the optimum formula of rose milk beverage: 8% rose juice, 6% milk, 10% sucrose, 0.1% citric acid, and 0.15% compound stabilizer (sodium carboxymethyl cellulose, sodium alginate in the proportion of 1:1). Unique flavor of rose milk beverage with rich nutrition can be prepared by using the optimum formula we obtained.

Terasi is a product of fermentation-based on rebon or fish with the addition of salt. Fermentation with salt led to an overhaul of proteins into amino acids eg glutamic acid as a producer of distinctive taste shrimp paste. Raw material, salt concentration and fermentation time is an important factor in the process of making paste. This study aimed to analyze the effect of different formulations of rebon (Acetes sp) and HTS generated against chemical quality paste. Raw materials used in this study is rebon (Acetes sp.) and fish HTS. Treatment used is the difference rebon formulation composition of fish and meat. Research methods using the experimental method with descriptive design field. Parameters tested include moisture content, ash content, fat content, protein, carbohydrates, pH, and glutamic acid. Based on the results obtained paste with the best formulation of the paste P1 treatment with a water content of 15.48%, 39.52% ash content, the fat content of 7.23%, 42.50% protein content, carbohydrate content of 4.73%, pH 5 , 67%, and 22.56% glutamic acid.

Ultraviolet (UV) radiation is the main cause of sunburn and skin cancer. The adverse effects of UV radiation are solved by sunscreen as protection for longer outdoors. In this study, optimization of glycolic acid and citric acid in sunscreen cream combination of titanium dioxide, avobenzone, and octyl methoxycinnamate were investigated using simplex lattice design method. The sunscreen cream evaluation includes physicochemical testing (organoleptic, homogeneity, emulsion type, spreadability, viscosity, and pH) and sunscreen effectiveness (SPF, % erythema transmission, and % pigmentation transmission). The value of physicochemical testing are 5,96 cm - 6,3 cm of  spreadability testing; 83,33 dPa.s – 108,33 dPa.s of viscosity testing; 4,06 – 4,67 of pH testing. The value of sunscreen effectiveness are 9,79 – 13,35 of SPF testing; 4,55x10-06 - 0,15x10-06% of % erythema transmission; 5,77 – 7,16 % of % pigmentation transmission. The optimum formula was obtained by combining glycolic acid 2% and citric acid 0% with a desirability value of 0,649.

The raw materials used to manufacture thermal insulation in buildings consume a large amount of energy and are not generally biodegradable, which means it is necessary to increase the use of renewable, eco-friendly resources such as plant fibers in order to reduce the environmental problems this generates. The wood adhesives developed by the petrochemical industry offer excellent performance and are affordable. However, their use has an expiry date and in the future they will be rejected due to the environmental and health problems they can cause. The objective of this work was to develop a new eco-friendly biocomposite that could be used for thermal insulation in buildings. Boards were manufactured from giant reed particles with a particle size of 2 to 4 mm, using 5 and 10% by weight of citric acid as a natural binder. Experiments were then carried out to investigate the effect of board density on mechanical, physical, and thermal properties. A new type of composite was obtained with a thermal conductivity of 0.081–0.093 W/m K, which makes it suitable as an insulating material. The boards with a density of 850 kg/m3 had a modulus of rupture (MOR) of 12.5 N/mm2, a modulus of elasticity (MOE) of 2440 N/mm2, and an internal bonding strength (IB) of 0.61 N/mm2, and they could be used as insulation panels for divisions and enclosures in buildings.

The purpose of this research is to know the mechanical strength of gypsum board by utilizing waste sawn wood. Raw materials used consist of flour, gypsum,wood particles, boraks and kambang (Goniothalamus sp), wood tarap (Artocarpus elasticus REINW) and lua (Ficus glomerata ROXB). Wood particle 40 mesh and 60 mesh, concentrations boraks of 1 and 2 and the percentage particles of gypsum sawn timber is 300, 400 and 500%. The results showed that the average value Modulus of Rufture (MoR) in lua wood ranges from 12.55 – 14,47 kgcm2, wood kambang 25.10-31,11 kgcm2 and wood tarap 19.20- 24,18 kgcm2. As for Modulus of Elasticity (MoE) on the lua 1129,80- 2092,70 kgcm2, wood kambang 2512,37-3971,32 kgcm2 and tarap 2050,63-2691,09 kgcm2. Gypsum board are mechanical properties do not meet quality standards created SNI 03-6434-2000.Keywords: sawdust, lua, kambang, tarap, gypsum, mechanical

A large number of biologically active substances, organic acids, tannins, and pectin substances were detected during the study of fruits, leaves, and pulp of the fruits of mountain Ash. The content of these substances in leaves and pulp will significantly expand the arsenal of medicinal plant raw materials used. Given the wide distribution of mountain Ash in the territory of the Russian Federation, harvesting leaves from the same plants after harvesting the fruit and using pulp will make it possible to obtain new phytopreparations.

Abstract The inclusion of polysaccharide thickeners in the recipes of sweet dishes increases the functional reserves of the body, contributes to the preservation of health and the prevention of diseases. The purpose of the research is to study the sensory characteristics of polysaccharides of various nature when combined with food acids, to develop a recipe for a basic mixture of low-calorie meals for public catering. The authors analyzed citric, lactic and succinic acids in combinations with polysaccharides of various nature. Organoleptic tests were evaluated by a touch panel. The organization of the tasting analysis corresponded to GOST ISO 6658-2016; the consistency was determined according to GOST 31986-2012, GOST ISO 11036-2017, GOST ISO 8588-2011. The optimal organoleptic combinations of the presented food acids and complex additives of sweeteners (CDP) were identified, which included aspartame, sodium saccharinate, Sucralose, sweetness coefficient – 340: the mixture with citric acid had a long pleasant aftertaste without foreign tastes and the best taste characteristics. Using the “A-not A” method, we found that the sample with the addition of CDP is identical to the sucrose solution. In the second part of the study, polysaccharides were added to model samples of acids with complex sweeteners; the best sensory characteristics were obtained by model samples consisting of a mixture of low-esterified Apple pectin with lactic acid and KDP. The technology of obtaining a stable elastic jelly using low-esterified Apple pectin has been developed, since the complex mixture of sweeteners and food acids does not have a dehydrating effect. Developed a dry mix recipe that can serve as a basic development, low-calorie sweet products for catering and has a variance of use of lactic and succinic acids, depending on the flavor characteristics of the raw materials used and its corrective ability.

An alternative strategy to reduce the trade balance deficit simultaneously to increase the net foreign exchange is the import-substitution for raw materials used to produce an export goods. This paper proposes an import substitution study on footwear products that have a dependency on imported raw materials by 70 percent, with the largest composition being leather raw materials by 67 percent. This paper analyzes the relationship between subsidies on the leather industry to leather import-substitution, multiplier effect to footwear sector, and Indonesia trade balance. Author make use of simulation the on Input-Output 2010 table and Computable General Equilibrium (CGE) Model. The simulation shows 100 billion subsidies on the leather sector, lead for the substitution-import of leather by 7,94 million rupiah, increase the net export foreign exchange by 1.1 billion rupiah of the footwear sector, and for overall, increase Indonesia trade balance deficit by 68 billion rupiah. Keywords: Computable General Equilibrium, footwear, leather, net foreign exchange, subsidy.ABSTRAK: Salah satu terobosan untuk mengurangi defisit neraca perdagangan dan meningkatkan nilai neto devisa ekspor adalah dengan substitusi impor bahan baku yang digunakan untuk memproduksi barang ekspor. Paper ini mengusulkan kajian substitusi impor pada produk alas kaki yang mempunyai ketergantungan bahan baku impornya sebesar 70 persen, dengan komposisi terbesar adalah bahan baku kulit sebesar 67 persen. Tujuan penelitian ini adalah untuk mengetahui dampak stimulus subsidi pada industri kulit terhadap subtitusi impor kulit, dukungan multiplier sektor kulit terhadap sektor alas kaki, serta terhadap devisa ekspor Indonesia. Penelitian ini menggunakan simulasi model Computable General Equilibrium (CGE). Hasil simulasi menunjukkan stimulus subsidi sebesar 100 milyar rupiah pada sektor kulit memberikan substitusi bahan baku kulit sebesar 7,94 juta rupiah, menaikkan devisa ekspor sektor alas kaki sebesar 1.1 miliar rupiah, serta secara keseluruhan menambah defisit neraca berjalan Indonesia sebesar 68 miliar rupiah. Kata kunci: alas kaki, Computable General Equilibrium (CGE), devisa ekspor, kulit, subsidi.

Alga is a marine resource of potential to fisheries and marine sector. It has an important economic value to promote the economy in Indonesia. Nowdays, algae have been used as a relatively high value fisheries commodity since it has been used for food, industrial, pharmaceutical and cosmetic raw materials. This important potential needs to be supported with understanding of its biology and ecology, so that its utilization could increase the livelihood of the coastal villagers. This study was aimed at inventorying and identifying the members of genus Caulerpa found in North Minahasa Regency waters and studying some biological and ecological aspects of the algae in the area. Resuls showed that there were 7 species recorded, Caulerpa racemosa, C. racemosa var. macrophysa, C. sertularioides, C. taxifolia, C. serrulata,C. lentillifera and C. peltata. Ecologically, the environmental parameters, such as water temperature, salinity, pH, dissolved oxygen, turbidity, were in tolerable ranges for algal growth. Bottom substrate supported the growth of genus Caulerpa as well© Saat ini alga dijadikan sebagai komoditas hasil perikanan dengan nilai ekonomis yang relatif tinggi karena manfaatnya sebagai bahan makanan serta bahan baku industri, farmasi, dan kosmetik. Potensi yang cukup penting ini harus ditunjang dengan ilmu pengetahuan tentang biologi dan ekologi dari alga laut, sehingga pemanfaatannya dapat meningkatkan taraf hidup masyarakat pesisir. Penelitian tentang kajian bioekologi alga makro genus Caulerpa di perairan Minahasa Utara ini dilaksanakan dan diharapkan dapat memberikan informasi ilmiah tentang bioekologi alga makro genus Caulerpa, sehingga dapat dimanfaatkan untuk pengembangan pemanfaatan bagi kepentingan masyarakat pesisir khususnya dan industri alga makro umumnya. Penelitian ini bertujuan untuk menginventarisasi dan mengidentifikasi alga makro genus Caulerpa di perairan Kabupaten Minahasa Utara, dan mengkaji aspek bioekologinya. Hasil penelitian menunjukkan bahwa ditemukan 7 spesies, yaitu Caulerpa racemosa, C. racemosa var. macrophysa, C. sertularioides, C. taxifolia, C. serrulata, C. lentillifera dan C. peltata. Parameter lingkungan seperti suhu, salinitas, pH, oksigen terlarut, tingkat kecerahan air berada pada kisaran yang dapat ditolerir untuk pertumbuhan alga makro, sedangkan substrat juga mendukung pertumbuhan alga makro ini©
